Clean and fresh. It has a restrained sweetness, with a white wine-like astringency and a slight acidity. There is a slight sweetness in the aftertaste. It is not without a sense of alcohol, but the impression is of a light drinkable sake. What intrigued me most was the use of olive-derived yeast. As expected, I didn't have an image of olives! LOL!
