Immediately after opening the bottle: fresh, juicy. Dark flavor like sakekasu (sake lees). It is exhaleable with a bitter taste. 1 day after opening: More ginjo aroma than immediately after opening. Pear. The twang is gone and it has become mellower. The bitterness has become easier to recognize, and the bitter taste is more pronounced.

Lactic acid, ginjo macca, fruity, thin cemedine 😂, light bitterness from alcohol I bought Kido's spring sake before, but I opened it today, thinking that Kido is sweet, but I had avoided it. It's easy to drink, not too sweet and tart with a hint of acidity👍. PS: It's still sweet when the temperature goes up, so I think I prefer it neat.

Warmed sake. Acid reminiscent of lemon🍋. The most sour ever. Later I found out that this was caused by an outbreak of alcohol-resistant lactic acid bacteria. Acidity 8.0!

I was able to compare the H27BY and H29BY by heating them up. Nigori sake matured. Mamy color. Great twisted feeling. Gentle rice potage soup with mirin. Umami flavor. The older the age, the more miso feeling comes out. First time feeling.

Heated. Cute label. Sense of maturity. It has a mirin-like, rice bran-like aroma and rice flavor. I was told that it has a nuance of blue cheese, and when I tasted it, I found it to be bluish, creamy, umami, and tangy, which I think is true. Fun 🙂.
