あちょおIt is a junmai daiginjo, but it is not sweet, and has a good balance of acidity, aroma, umami, and a sense of being left out. It is a gentle, curdless sake. ことりIt is soft and smooth on the palate.
It has a fresh aroma reminiscent of peaches and apples. You can enjoy the transition from a slight sweetness to a concentrated flavor of umami and acidity.

This was the only four-pack left at the Suminoe Sake Brewery. The shopkeeper told me that they had sold out of Aki-agari the day before. It was completely out of my budget, but I had to try. After two weeks in the fridge, I finally opened the bottle. The gentle but good aroma blossomed in my mouth. The balance of sweetness, umami, and refreshing acidity is exquisite.
