To be honest, it's hard to verbalize. There is no doubt that the level is high. There is also a moderate creaminess that does not mask the beautiful sweetness. I don't want to talk too much about the sake rice, but I also sense the "balance of sweetness and umami" that is typical of Omachi. It has an impact due to the sugary sweetness, but it also has a beautiful kick to it, which I like. Please try it.

The nose is fruity with a trace of alcohol. The taste is "fruity with a good nose and lingering bitterness. It has a thick texture with a good balance of umami and finishes with bitterness. Although it may not be what one expects from a nama sake, it seems to have a large width, so if it were to expand a little more, it would have a taste that I personally prefer, combined with the texture on the tongue. I will give it some time before drinking. Please try it. On a side note I feel that I have been drinking only unfiltered nama sake lately. It can't be helped since this is the season, but I have the impression that drinking only nama sake narrows my vision. I would like to enjoy it while mixing in a moderate amount of fire-aged sake as well.

The aroma is restrained and mildly capped. The taste is "fizzy and refreshingly sharp due to Ihyakumangoku. Personally, I like the fizzy feeling. It is a sensation that can be enjoyed in the throat like a beer. The flavor builds up like layers as you drink. However, the balance with the sharpness is the best. When you want to drink it in a big gulp, it is Machida Shuzo Ihyakumangoku. This phrase has been created in my mind. The fact that it is 16 degrees Celsius is also a surprise. I like this sake brewery, including the brand name and design. I would like to explore more in the future. Please try it.

There is no clear sharpness, but the sweetness is clean and sugary, so there is not too much residual sweetness. However, it is very sweet and fruity, no wonder it became popular as "Ozeyuki" many years ago. Recently, there are many sakes that mix gasiness with sake to make it less tart, but this one makes you feel it directly. There is a slight hardness to it, and I would prefer it if it were a little more relaxed. Please try it.

The aroma is slightly seme? It is gorgeous, but the aroma itself is subdued. I tasted it again after noticing that there was some ceca in the bottle. The aroma is even stronger. The taste is "refreshing with a punchy flavor. I would definitely like to try this in a fire-roasted condition. I have never had a modern Sentori before, but I feel it is the antithesis of the sweet fruity trend, including the re-branding. I am interested in the fact that the sweetness is kept under control and the alcohol content is kept as low as 13 degrees Celsius. The assertion of sourness and bitterness derived from the raw sake is well balanced and leads to a lingering aftertaste. The lingering bitterness is sure to move your appetite. I think it goes well with simple fish sashimi. A little fatty. Please try it.

I often drink Shiboritate during this time of the year, and it is usually a raw sake with an alcohol content of 17 degrees or higher, which gives it a strong, robust flavor. However, it is delicious with just the right amount of lightness in the middle due to just the right amount of slight bubbles. While it has a good sharpness, it has the potential not to tire one's palate. It also has a crispness due to the acidity, not just the alcohol, while still having a strong umami flavor, making it easy to keep drinking. To be honest, this is the best Niigata Shiboritate of the season. Serve with teriyaki chicken thigh and sashimi. Try it!

I've had this many times, so I'm reviewing the second day of opening the bottle. The aroma is muted while the acidity is soft and creamy. The taste is slightly effervescent, fruity, and sweet. The sweetness and fruity are natural, but there is no raw bitterness, and it is easy to drink. The sharpness is also pleasant. The lingering aftertaste is just right, and it leaves you wanting more. However, it still has the potential to be enjoyed on its own. To be honest, it is not elegant, but I think you will be able to taste its umami a little more after a few more days. The aroma is faintly fruity, with a soft lactic acidic creaminess at the back. The taste is smooth and mildly drinkable, almost like crystal clear water. There is also a slight bubbly sensation on the tip of the tongue. It is similar to Kamizen Nyosui, in a good way, with its characteristics erased. It tastes as if it has been de-poisoned, when the sweet and sour fruity flavor of the trend is considered poison. To say that it has no core would be a negative expression, but you can drink it smoothly because you cannot feel a clear flavor that stands out on your tongue. I have a feeling that the flavor will change again after tomorrow, as I also feel a little firmness. This is a 14.5% sake, and you can almost feel no alcohol. You can feel the alcohol in the hints. Tenryohai has set a goal of creating a new Niigata Tanrei. If it is so beautifully finished, it may seem that there is no clue, but the flavor is a step forward in the current trend. The accompanying dishes need to be more subtle. It would go well with dashi-based Japanese appetizers. Please try it.

I asked the waiter if he had any soft-water brewed sake and was introduced to this bottle. I wanted to study soft-water brewed sake because a friend of mine had joined a brewery that brews sake with the softest water in Japan. The aroma is fruity and sweet. The nose is fruity and sweet, with some lactic acidity. I was surprised at the lack of stickiness from the first sip to swallowing. The alcohol is also felt to a certain extent, which is typical of standard sake. The taste is "soft and fruity. The delicate balance between the softness of soft water and the fruity flavor is addictive. The ending is well-balanced with a hint of sourness and bitterness. I feel that I have found an exemplary answer to the question of modern sake made with soft water. What kind of snacks to pair with this sake? Fruity sake is difficult to pair with, but I think it would be a good match with fatty grilled fish such as Hokke. This is a bottle that showed me the possibilities of soft water. Finally, drinking this reminded me of Aizu Chusho. That soft and delicious sake is tentatively ranked as the most "surprising sake" I have had this year. I would like to try to find a sake that surpasses it. Please try it.
