Purchased at Nakazawa Sake Shop in Takasaki City. The aroma has a mature flavor and a subtle fruity feeling. When poured into a glass, it is softly thickened. The taste has acidity and slight bitterness, which is the strength of the sake's traditional sake making process. The texture is smooth on the tongue, and the acidity is sharp at the end. It has a sense of maturity, so it is best to drink it at room temperature. You will be able to taste the fuller umami if you drink it at room temperature. The specifications say that it is made from 80% polished Senbon-Nishiki rice, which is surprising. It is amazing that they have been able to suppress the miscellaneous flavors so well. It is like Toyo Bijin or Jyushiyo or something like that. It has a good balance of sweetness and fruityness. I think there is also a sharpness, probably due to the 16% alcohol content. It also has a slight gaseous taste and is light on the tongue, making it easy to drink. I ate Chinese food first, so my sense of taste is a little dull, but this sweet and fruity wine goes well with it. Please try it.

However, it also has a strong bitter taste, as if it were a raw sake, so it is not too tiring to drink. It also has an alcoholic taste and is very drinkable. It is not a MACHO, but more like a medium-height with a firm trunk. It has a strong power contrary to its appearance. It is interesting that a locally distributed sake can be so fruity. The aroma itself is a bit reserved, but the fruity flavor becomes stronger when the temperature is raised a bit. The taste is "a trinity of fruity, refreshing, and creamy. The nigori type has a strong impression of sweetness, but there is also an assertion of acidity that is not unpleasant, creating a refreshing taste. The slight bitterness in the aftertaste is likely to play a good role during the meal. Abe Pink is said to be particularly fruity and sweet in the Abe series, so we bought it to know the maximum value. To be honest, my nose was so clogged up today that I couldn't recognize the aroma, but it healed a bit and I went again. It is crazy fruity. You feel it all at once by drinking it while eating. The aroma is gorgeously fruity. Slightly lactic acidic aroma. The taste is "sweet and full in the middle, with a strong acidity. Similar to the Yuki no Mori. The acidity is also assertive to some extent. Is Hachitan-Nishiki being produced in Niigata? There are many sake breweries in Niigata that are making such sweet and full sake, but I have found another one. I am also interested in "knot" which was introduced in this year's dancyu. Please try it. My personal opinion. I feel that Niigata sake breweries are burdened with the stereotype of "light and dry. In that sense, I think that answers like Koshiji-no-Kenbai are possible, but I also feel that they are trying to create sake that is a good compromise between dry and sweet, such as Garakudai, Abe, and Kafusatsu-shu. They are trying to sublimate light dryness. I think there is a trial-and-error process unique to Niigata to subtract the full sweetness and bring it to a good sake, and in this sense, I would like to continue to closely follow Niigata sake in the future.

It can't be helped since this is the season, but I have the impression that drinking only nama sake narrows my vision. I would like to enjoy it while mixing in a moderate amount of fire-aged sake as well.

When you want to drink it in a big gulp, it is Machida Shuzo Ihyakumangoku. This phrase has been created in my mind. The fact that it is 16 degrees Celsius is also a surprise.
