There is a creamy acidity with a hint of ooziness, but the citric "sourness" is strong. It goes well with mozzarella and cream cheese. The brewer says that it also goes well with pizza and pâté de campagne, so it may be better to make it stronger in flavor to make it compatible with this strong acidity. Please try it.

Commonly known as Abe Pink. The nose is creamy and beautifully acidic, the aroma itself is a bit subdued. The aroma itself is a bit reserved, but the fruity flavor becomes stronger when the temperature is raised a bit. The taste is "a trinity of fruity, refreshing, and creamy. The nigori type has a strong impression of sweetness, but there is also an assertion of acidity that is not unpleasant, creating a refreshing taste. The slight bitterness in the aftertaste is likely to play a good role during the meal. Abe Pink is said to be particularly fruity and sweet in the Abe series, so we bought it to know the maximum value. To be honest, my nose was so clogged up today that I couldn't recognize the aroma, but it healed a bit and I went again. It is crazy fruity. You feel it all at once by drinking it while eating. And the creaminess of the aftertaste. I don't know if I've mentioned this before, but it's similar to a packing slip. High level sake. Please try it.

The aroma is gorgeously fruity. Slightly lactic acidic aroma. The taste is "sweet and full in the middle, with a strong acidity. Similar to the Yuki no Mori. The acidity is also assertive to some extent. Is Hachitan-Nishiki being produced in Niigata? There are many sake breweries in Niigata that are making such sweet and full sake, but I have found another one. I am also interested in "knot" which was introduced in this year's dancyu. Please try it. My personal opinion. I feel that Niigata sake breweries are burdened with the stereotype of "light and dry. In that sense, I think that answers like Koshiji-no-Kenbai are possible, but I also feel that they are trying to create sake that is a good compromise between dry and sweet, such as Garakudai, Abe, and Kafusatsu-shu. They are trying to sublimate light dryness. I think there is a trial-and-error process unique to Niigata to subtract the full sweetness and bring it to a good sake, and in this sense, I would like to continue to closely follow Niigata sake in the future.

Although it may not be what one expects from a nama sake, it seems to have a large width, so if it were to expand a little more, it would have a taste that I personally prefer, combined with the texture on the tongue. I will give it some time before drinking. Please try it. On a side note I feel that I have been drinking only unfiltered nama sake lately. It can't be helped since this is the season, but I have the impression that drinking only nama sake narrows my vision. I would like to enjoy it while mixing in a moderate amount of fire-aged sake as well.

The aroma is restrained and mildly capped. The taste is "fizzy and refreshingly sharp due to Ihyakumangoku. Personally, I like the fizzy feeling. It is a sensation that can be enjoyed in the throat like a beer. The flavor builds up like layers as you drink. However, the balance with the sharpness is the best. When you want to drink it in a big gulp, it is Machida Shuzo Ihyakumangoku. This phrase has been created in my mind. The fact that it is 16 degrees Celsius is also a surprise. I like this sake brewery, including the brand name and design. I would like to explore more in the future. Please try it.

There is no clear sharpness, but the sweetness is clean and sugary, so there is not too much residual sweetness. However, it is very sweet and fruity, no wonder it became popular as "Ozeyuki" many years ago. Recently, there are many sakes that mix gasiness with sake to make it less tart, but this one makes you feel it directly. The aroma is slightly seme? It is gorgeous, but the aroma itself is subdued. I tasted it again after noticing that there was some ceca in the bottle. The aroma is even stronger. The taste is "refreshing with a punchy flavor. I would definitely like to try this in a fire-roasted condition. I have never had a modern Sentori before, but I feel it is the antithesis of the sweet fruity trend, including the re-branding. I am interested in the fact that the sweetness is kept under control and the alcohol content is kept as low as 13 degrees Celsius. The assertion of sourness and bitterness derived from the raw sake is well balanced and leads to a lingering aftertaste. The lingering bitterness is sure to move your appetite. I think it goes well with simple fish sashimi. A little fatty. Please try it.

I often drink Shiboritate during this time of the year, and it is usually a raw sake with an alcohol content of 17 degrees or higher, which gives it a strong, robust flavor. However, it is delicious with just the right amount of lightness in the middle due to just the right amount of slight bubbles. While it has a good sharpness, it has the potential not to tire one's palate. It also has a crispness due to the acidity, not just the alcohol, while still having a strong umami flavor, making it easy to keep drinking.
