The aroma is piercingly gorgeous, with a so-called cemedine-like aroma and a peculiar odor derived from it? I have also felt a similar aroma in 寫楽. I have also felt a similar aroma to that of 寫aku. The taste has a slight bubbly sensation derived from nama and a refreshing sweetness. The bitterness and acidity are moderately suppressed for a nama-shu, but the robust roughness is very drinkable. However, the overall impression is of a rounded and gentle nama-shu. Since we are in Hiroshima, we served it with raw oysters today. Please try it.

I asked the waiter if he had any soft-water brewed sake and was introduced to this bottle. I wanted to study soft-water brewed sake because a friend of mine had joined a brewery that brews sake with the softest water in Japan. The aroma is fruity and sweet. The nose is fruity and sweet, with some lactic acidity. I was surprised at the lack of stickiness from the first sip to swallowing. The alcohol is also felt to a certain extent, which is typical of standard sake. The taste is "soft and fruity. The delicate balance between the softness of soft water and the fruity flavor is addictive. The ending is well-balanced with a hint of sourness and bitterness. I feel that I have found an exemplary answer to the question of modern sake made with soft water. What kind of snacks to pair with this sake? Fruity sake is difficult to pair with, but I think it would be a good match with fatty grilled fish such as Hokke. This is a bottle that showed me the possibilities of soft water. Finally, drinking this reminded me of Aizu Chusho. That soft and delicious sake is tentatively ranked as the most "surprising sake" I have had this year. I would like to try to find a sake that surpasses it. Please try it.

A lactic acidity that can be detected from the aroma. Creamy and refreshing aroma. The lactic acidity of fast brewing is clearly different from that of fast brewing. The sense of "sake yeast" can already be felt here. It is said that it is unfiltered sake. The strong sweetness felt from the introduction. It is like a baked apple or an apple boiled down with sugar. Finally, there is a strong acidity. The slight bubbling also gives it a sharp, even tingling sensation, and it is truly sharp. The taste is consistent, rough and powerful, partly due to the fact that it is unfiltered and raw. It is different from the recent gorgeous fruity wines, and has a presence that could be established as the next trend. It is a bottle with a strong assertiveness, with its gorgeousness well coated with mellowness. It does not give off a strong aroma or taste, but rather a "powerful" feeling. To be honest, as a sake-butler, I could finish this bottle by itself, but I think it goes well with strong flavors as an accompaniment, especially with fatty foods. I happen to have some khao mangai ingredients at home, so I would like to try it with pak choi and see how well it fares. We hope you enjoy it.

Toumi toumi -Arrival- Unfiltered, once-fired sake It has been a long time since the last Kangiku. The aroma is restrained for a Kangiku, but it is juicy and fruity. The taste is modern and well-balanced, with a strong sense of slight effervescence in the introduction, but the sweetness is restrained. There is some bitterness and a weaker acidity. The taste is calm and balanced with a low sweetness, but it also retains a slight fizziness that reminds one of a fresh fall sake. The label's hue is also probably intended for autumn harvest. I remember thinking, "Is this the same sake as 寫楽? I remember thinking, "This is 寫楽? It is interesting to see the contrasting tastes of two breweries that compete with sweet and fruity sake as an answer to autumn sake. The stance of Kangiku, which defines this as an autumn sake? I could catch a glimpse of Kangiku's stance in defining this as an autumn sake. If there are other brands of autumn sake, please forgive me for my lack of knowledge. It is thought that it goes well with meaty dishes that are not too rich as accompaniments. I would like to try it with yakitori sauce or salt tomorrow to see which goes better with it. Please try it.

There is a slight sourness to the sharpness, but it comes from the alcohol combined with bitterness. It seems to have the umami that sake drinkers love, but the "umami" I mentioned in my last post has been broken down and expressed as above. I have been drinking a lot of junodai recently, so it has been difficult to pair it with fatty foods, but I would like to try this kind of punchy sake with sautéed pork. The description reads, "A mellow honjozo with a refreshing taste and full of rice flavor. This is indeed a refreshing sake, as one would expect from Jyushidai. This is a dish that makes you feel like you've had a great time. When the temperature rises to a certain degree, it comes into its own. The umami and lingering bitterness are different. And the sense of alcohol is gone. I can't deny the possibility that my taste buds have become stupid due to drunkenness, but I can't help but enjoy this dish. I want to match it with yakitori with sauce. Please try it.

The aroma is not that noticeable. The aroma of rice, which is typical of junmai sake, is not that noticeable. When warmed by hand, it expands. The taste has a refreshing acidity and soft sweetness from the start. It goes down smoothly, but you can also taste the flavor, so you won't get tired of drinking it. This sake also has a strong sense of umami, but I realize that umami is a taste sensation that is perceived on a time axis, or rather, as a line. Therefore, I would like to be a little cautious about using the word "umami" too easily. My personal recent thought is that sweetness, sourness, and bitterness are sublimated as umami.

Although the sweetness is not as thick as one would expect from Dewa Sanzan, it has a soft, jelly-like texture and the acidity at the end is not overly fruity, and it comes together as a beautiful and comfortable sweetness. If one were to visualize the taste, it would be like water in a weightless state. It is too easy to describe it as simply sweet, though it is much more on the sweet side than the middle of sweet and dry. In general, there is no doubt that this sake has a high level of quality. What's that aroma, lactic creamy acidity, have you ever smelled it in a white wine? The taste is moderately acidic, moderately sharp. In a good sense, it does not have any flashy characteristics. Gorgeous fruity from the aroma. Clear and direct pineapple feel. Reminds me exactly of Cell 24 or F40G. The taste is not too sweet as the aroma suggests. Rather, it disappears quickly. When I drank it at a bar before, I felt the richness, but it was not that much because it was freshly opened. I guess it tastes like it has been fermented after opening the bottle, so I would like to let it sit for a few days. Recently, I have been into S&B's seasoning series, and I served it with jerk chicken. Please try it.

The aroma is marked by a lactic acidity and a gorgeous fruity quality. It is tempting to say, "This is it. The palate is juicy and pineapple-like, with a hint of citrus. The slight effervescence is not dull. The acidity gives it a strong sharpness. ?" Is that why? The orange-colored Omachi Aizan fusion has a longer aftertaste and is not as sharp. Is it because of the season? However, the modern sweet and sour fruity tastes are in vogue, so there is a tendency for similar tastes to emerge, but the MACHO series consistently has a strong umami flavor as an added value, which makes it unforgettable. We thought that pineapple would be a good accompaniment for such a juicy dish, so we served it with sweet-and-sour pork. We hope you enjoy it.

I'm glad that it can be swept away like this. To be honest, the aroma and flavor are so intense that it gives me a headache when I drink it. The alcohol content is 19%, which is quite robust. It tastes like a combination of Kikusui Funaguchi can and Kameizumi cel-24. It is probably not something you would drink on your first sip. It might be interesting as an accent if you add it when you are drunk to some extent. It has the potential to be competitive in garlic stir-fries and grilled dishes. It can also be used with fatty foods. It makes you want to have something to go with it. Please try it.

The aroma is milky and 寫lax. Milky acidity with a lactic feel and matte fruity. Taste is honestly flabby and mature. It has a thick softness. This is a counter sake that betrays the unconscious definition of this sweetness for this aroma. Although not my personal favorite, it is an interesting bottle as a solution. As it approaches room temperature, the flavor becomes more fruity. However, it is a strange sensation to enjoy the fruity taste at near room temperature. Also, as it approaches room temperature, the sense of maturity is intensified. At the risk of being critical, I could not figure out which demographic they were trying to reach.

I raised the light intensity of the photo too much. The aroma is the same as usual, a little fruity. You can also feel a beautiful alcohol taste. The taste is one word: "delicious. Despite its richness and fruity taste, the high alcohol content of 19 degrees Celsius is not felt that much. It is a very good example of the technical skill to maintain this level of richness while still being able to express a fruity taste. This is exactly what I want when I want a sweet, dark sake. The usual dullness of Funaguchi cans that you can see when you drink it? Or rather, the feeling of being told, "You can do it if you put your mind to it. I can do it! I often buy canned Funaguchi because I sometimes want the rich sweetness of the regular canned Funaguchi, but I honestly can't go back to the regular canned Funaguchi if I'm served this. According to the manager of the liquor store (Hasegawa-ya in Niigata) where I bought it, they can't buy it anymore. I know it will cost a lot of money to make this the standard, but I really hope they do it. I believe that Kikusui Brewery has the capital and technical capabilities to develop the modern sake often sold in Japan, but they must have grander ambitions, such as overseas expansion through an American corporation or a fermentation theme park. I often see Kikusui's higher-priced sake, but let's drink it. This is probably the first time I have written this long, but I guess that is how much I personally liked and was surprised by the sake.
