The overall aroma is subdued, with a lactic acidity and gentle ginjo aroma. The taste has a sharp and dry finish. There is a slight gasiness that can be felt on the tip of the tongue, and while bitterness dominates, there is also a gentle sweetness that leads to a sharpness. It also has an element of acidity, which can be felt more strongly when the temperature rises a little. What is a "fresh" finish? Freshness? Freshness? All of these are soft and fluffy, but we have to rely on our own subjective judgment. But does this dry, lingering sweetness felt in the back of the throat feel fresh? (similar to the way you feel the sweetness in the aftertaste when you eat a sea squirt) There are various theories about the roots of Watabune No. 2 (short stick ferry), but it is also fun to drink it while thinking about them. Shin Gin milled rice is also often heard of these days. I am aware that it is Satake's original form of polished rice, but I wonder if Shin Nakano is also doing some kind of original form of polished rice? Strong fruity from the aroma. Seme odor. The taste is sweet and fruity, reminding me of 寫楽 at one time. Suehiro Shuzo had a classic image, but this is a new answer. I feel the potential of Fukushima, which can produce such a great flavor even with local rice "Yume-no-Ka". To be honest, it is not something you can drink many glasses of. However, it certainly has a buzzing impact. It has been called the "second Tobiroki," but I personally don't think so. However, it seems to me that it is the Xth brewery. I don't know if there has been a new generational change within the brewery or a change in thinking, but I would be hard pressed to evaluate it as a new brand. Expectations for the future. The cage is left submerged and filled. The fizzy sensation when poured is irresistible. The aroma is fresh and fruity. There are pineapple, white grape, and kiwi sensations. The taste is fruity, with a hint of lactic acidity. Refreshing and pleasant. Another glass with a touch of corkage. The silkyness increases and it becomes easier to drink. I think it is probably gas-filled, but I wonder how it is. In general, the cuppa is very strong, but it is a dangerous bottle that keeps you drinking. The bottle is impressive, printed directly on the bottle, and I'd buy it just for the sake of it. Nigori-style is good with a slightly weaker gasiness like this. I have not had many nigori-style beers, but I think I will try to buy a bottle of Yukidaruma at this time. Please try it.

Long time no post. We've been drinking all our own booze. The aroma is ripe and sweet, like baked apples. The aroma is fruity, but more tangy than fresh. The taste is a rich sweetness unique to nama sake. It is accented with a mineral taste and a rough feeling on the tongue. It is also easily recognizable as a Hokuriku sake, perhaps a characteristic of the Gohyakumangoku variety! It is immediately recognizable as Hokuriku sake. Also, the acidity that I sensed as the temperature range increased. I realized the true nature of the sense of maturity I sensed in the aroma. Malic acid or citric acid type. It may be one of the ways to keep acidity in the raw draft. The richness of nama sake is also delicious, but I was expecting a more subtracted dry sake with a deeper flavor. The Tsuneyama I drank before was fire-aged, right? I have been secretly looking forward to this brewery for a long time because it has a thick flavor and is easy to drink as a dry sake. I would like to try the hi-ire version in another month or so. Please try it.

Liquor store near Senami Onsen, Murakami City, Niigata Prefecture. Stay at Oedo Onsen Monogatari. It is not hiyaoroshi or something like that, but is drunk by the locals in summer. The aroma is soft with a mature taste. It is typical of Niigata. There is also a slight fruity note. The taste is very smooth and refreshing. It is the first time for a sake to spread so ladylike when it is aged in its original state. In shape, it is a wide cone spreading in a circle. The good thing is that it tastes good even with regular sake and honjozo type (snow, moon, flowers). If this is the case, you should buy Jun as well. Serve with salmon soaked in sake. Please try it.

Purchased at Naritaya Sake Shop, Toyota City, Aichi Prefecture. The aroma is quite fruity for a sake bearing the name "summer. The taste is "slightly effervescent, easy to drink, and sharp with no lingering aftertaste. It has no hint of sweetness, but there are certainly traces of sweetness. It is a bottle that has both the two weapons of "fruity freshness of the aroma and the freshness unique to summer sake" without any of the post-aging dryness of sweet sake imagined from the aroma. As if the two have a master-disciple relationship, it has a sharpness reminiscent of Gagakuyo and a creamy fullness that can be felt as you drink it. The roots are the same, but I personally may prefer this one. It made me want to try a basic sake as well as a summer sake. With this sharpness, I would have it with salmon halami. Please try it.

The taste is "delicious, spicy and modern, perfect for a mid-meal drink. In terms of rice polishing ratio, it has the specifications to call itself a ginjo. The exquisite richness of the flavor is a punch, as I have only been drinking sake under 15 degrees recently. It is like a half of both Niigata's nama sake and fresh modern sake. Purchased at Arakawa Sake Shop, Okazaki, Aichi. The aroma is restrained but gorgeously fruity. The taste is sweet and full with an emphasis on sharpness. It may sound like a bad way to describe it, but it is the kind of sake that is often found in bars these days. The lingering aftertaste (alcohol taste) is a bit tedious. I still remember the shock of drinking this pink Kido (I think it was all Yamada) four or five years ago. The softness that can be felt from start to finish is definitely felt, and the drinkability plus the strength (density) of the flavor makes an impact. I can see why it was ranked in the top 5 at the Sendai Sake Summit, but I personally prefer a more subdued taste. Please try it.

Purchased at Arakawa Sake Shop, Okazaki, Aichi. The aroma is restrained, with a slight creaminess. Somehow, it has both sweetness and sharpness at the same time. It has a sense of being both sweet and sharp at the same time, like two hares. There is a slight gaseous sensation that is almost non-existent. (25.4 production). Is it made with soft water? It is easy to drink without any stickiness. To be honest, it has a strong sweetness, but there is almost no dullness, leading to a clear, transparent and crisp taste. I think this is the verbalization of the so-called "fluffy" feeling. There is a "spiciness" in the back of the tongue that one feels when eating too much sweet food, and is this connected to the sharpness? I am very happy to experience a new taste again. It is so soft that you forget you are drinking liquid every time you take a sip. With a low alcohol content of 13%, this is a devilish sake that will make you run out of a bottle before you know it. If Machida Shuzo Ihyakumangoku is like a beer that you can drink with gusto, this is truly "water. Why do we never get tired of drinking water? This sake embodies the answer to that question. It also has the potential to work well as a food sake. I have a very subjective feeling that if this sake can have the cloud-like softness of the Aizu Chusho, which was the most impressive last year for me personally, it will break through the sweet and full trend. Purchased at Sunmart (Nagaoka City). Aroma is gorgeous, capricious but moderate. The taste is "thick on the tongue with a strong sweet flavor. The taste is also strong, but it has a sharpness that does not give the impression of being too strong. I think the taste is very strong. It is like a subtraction of the dullness of the Morimasu we drank yesterday. If Morimasu is satisfying on its own, this one can be enjoyed while eating. The aroma component is suppressed and the alcohol content is a little strong, which is probably the reason for the sharpness of this beer. The sweetness is stronger than before, but this is due to the softness of the rice and the sweetness of Omachi. Please try it.

From the soft texture on the tongue, it has a robust umami with a wild omachi-like feel and a sharpness with a slight bitterness. It is a sign of confidence that it does not claim to be jungin due to the rice polishing ratio. The koji (malted rice) is also made from Akaban Omachi, which is a luxurious specification. At the SAKE COMPETITION 2025, Tenjo Mugen, which we drank yesterday, took second place. And this one took first place. Personally, I like the relatively dark flavor of Tenjomugen. However, in terms of refinement, I would say this one is better in the sense that it is brewed with soft water. It matches very well with fish. The taste is "both sweet and spicy. If it were said, it would be more on the sweet side. However, after the initial sweetness and umami, there is a lingering finish that is moist and sharp, making it a truly sublime "umakuchi". In terms of "umakuchi," this may be the best sake ever. It is a mellow, umami spiciness that is unique to Miyagi Prefecture, while at the same time keeping the trends in check. Naturally, it goes well with fish, but it also has a strong umami flavor that is not defeated by fatty dishes. Please try it.

The taste has acidity and slight bitterness, which is the strength of the sake's traditional sake making process. The texture is smooth on the tongue, and the acidity is sharp at the end. It has a sense of maturity, so it is best to drink it at room temperature. You will be able to taste the fuller umami if you drink it at room temperature. The specifications say that it is made from 80% polished Senbon-Nishiki rice, which is surprising. It is amazing that they have been able to suppress the miscellaneous flavors so well. However, it also has a strong bitter taste, as if it were a raw sake, so it is not too tiring to drink. It also has an alcoholic taste and is very drinkable. It is not a MACHO, but more like a medium-height with a firm trunk. It has a strong power contrary to its appearance. It is interesting that a locally distributed sake can be so fruity.
