The acidity stands out while drinking. There is a creamy acidity with a hint of ooziness, but the citric "sourness" is strong. It goes well with mozzarella and cream cheese.
The brewer says that it also goes well with pizza and pâté de campagne, so it may be better to make it stronger in flavor to make it compatible with this strong acidity.
