Mansaku flowers are not available in my neighborhood. I found it and bought it when I went on an expedition to drink sake, and kept it refrigerated for a long time. This time, I opened the bottle to drink it with autumn taste rice (rice cooked with mushrooms + salmon roe). It has an aroma and taste that is not overpowering, but not too assertive, even with the strong flavors and tastes of autumn. It is the type that can be drunk like water. It was delicious on its own, but I think it is a sake that makes you want to eat food rather than sashimi or other single dishes. This time, it was so delicious that I ended up drinking more than usual. Be careful not to drink too much!

It is an active nigori sake, super shwashy. Looks like calpis soda. The sweetness is not quite juice, but it is sweet and mild. Rocks with ice!

I had heard it was an adult lemon squash, and after drinking it, I agreed that it was indeed! Clear, strong acidity, carbonation, and a hint of sweetness. It was refreshing without ice and perfect for a summer evening.

I found a fresh sake from macho that I had enjoyed last year and bought it. It is a low-polishing, low-milled sake, but it has none of the gusto that other low-milled sake tends to have, and is very easy to drink and delicious. It can be drunk on its own, but it also has a strong sake flavor, so it is good to have a tsumami with it, so you don't have to choose when to drink it.

When I was on an expedition to Doi Shoten in Asahikawa, Hokkaido, the brewer happened to be there and allowed me to taste it. I was told that it was specially made for today's sale, so I had no choice but to buy it. I was very thankful for the good encounter. With its low alcohol content and sizzling carbonation, it was slightly sweet, like drinking apple squash or cider. It's more like fruit juice than sake.

I got a bottle of sake from the Kobayashi Shuzo brewery in Hokkaido, which is sold exclusively at their brewery. I love the Hokuto Zuisho brand of sake produced by this brewery, so it was no surprise that a 35% polished junmai daiginjo from the same brewery would be as delicious as it promised to be. In fact, it has a taste typical of Hokkaido sake, with a hint of sweetness and a clear mouthfeel with no acidity. There are so few modern sakes that it is hard to talk about them, but I think Hokkaido sake is the best sake to drink with food.

I had bought too much summer sake and my fridge was flat, but I had to drink this one, so I bought it (laughs). I got a bottle of one-year-old Tetorigawa that had been sitting in the fridge at my parents' house. Maybe because it had been stored in the fridge, the taste has not deteriorated, and if anything, it has become mellower and more rounded. Is that because it is a summer sake? It was very drinkable on the rocks, but it also had a good flavor, so it was good with snacks. Why is such a good sake left unused for a year?

I finally bought some earlier this year, but this time I kept it in the fridge and didn't drink it (lol). I tried it with a full bottle and was surprised at how sweet and fruity it was. It was surprisingly sweet and fruity, and with the bubbles, it was as if I was drinking sparkling wine or champagne. It is sweet, yet refreshing and easy to drink. It is the type of wine that should be drunk and savored as is, rather than paired with sashimi or other dishes. And as the name suggests, they are particular not only about the taste, but also about the production. Hats off to them.

I received this as a gift from my cousin who went to visit the brewery. It is a one-cup type Niidashi zenshu. The local sea urchin fishing ban had just been lifted, and I had bought the first one, so I had it with that one as a snack. The slightly sweet and slightly sour taste makes it easy to drink. It is easy to drink.
