Sake received at the Sake World Summit. This sake is brewed with Ginbukiyo sake produced in Shiga Prefecture. The acidity and umami of the sake are well intertwined with each other. It was a delicious sake. It is perfect as an in-between-dinner drink. My wine-loving friend who accompanied me also accepted the taste of this sake made from the sake's "nama-hashiroshi" (sake brewed from the same yeast as the original yeast).

Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️ It is indeed a sake from Shiga, a rice-producing region 😇

Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

Pitchy fresh. Light mouthfeel with a green apple-like flavor. The sweetness is moderate and a little bitter. Not too sweet and easy to drink. If I drink sake, I should also drink wine. Kenzo Estate's aska 2013 is over 30,000 yen. I only had one glass, the rest was sake 😅.

I bought it because it was in Hankyu. I've had a sake called "Kaga no Tsuki no Niji" before, but I wonder if the contents are the same. It is thin and cloudy. It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. Is it a multi-faceted, multi-personality sake?
