Spring limited edition sake. The acidity and sweetness are well balanced. It is delicious like sweet and sour strawberries. It is light at first, but has a good impact of rice flavor. It is the type of sake to be drunk in small sips. I think it can be paired with anything.
I think you can enjoy it only with sake.
Overall rating - A
Close to an S as far as I'm concerned, but I don't think I'll buy it again and again...
I think it could be a little more personal and sharp in some way.

KALDI's product for Cat's Day
The kitten cups are stylish and the glasses are cute.
The aroma is light, but it has a hint of rice.
The aroma is a little more refreshing than floral. There is little lingering aroma after putting it in the mouth, and the feeling of it disappearing quickly is like cherry blossoms falling....
Once on the tongue, the sweetness is felt and the umami comes and finally the sourness disappears.
It is overwhelmingly easy to drink and delicious.
I want to try sake! Highly recommended for those who can't handle strong tasting sake.
It is light, but you can enjoy the sake and it goes down your throat nicely.
General Comment ~ S~.
This is by far the most versatile sake. Good to have on hand in case of emergencies.
Side note
KALDI sells this sake every year, but the bottle changes every year.
Cat lovers, how about getting a bottle too?

Alcoholic strength: 13-14 degrees Polishing ratio: not disclosed?
price : 300ml, about 400yen
Pairing : Salad of pea and egg with yuzu pepper
The aroma is not particularly strong, but has a light and refreshing scent.
The taste is sweet and refreshing, with a short aftertaste, very fresh and delicious.
It doesn't interfere with the food, but has a good flavor...
Personal Evaluation A
I thought it could be an "S", but the alcohol taste was surprisingly apparent. It's definitely tasty and not a disappointment, but if you have a chance to drink it, do it. I think everyone will appreciate it to some extent, but I don't think it's one of the best for everyone.... But if this is an option, drinking it is really possible.
Daiginjo Hitoyomi
Sake Brewer : Meijo Shuzo Co.
Alc. : 15-16 degrees Polishing ratio : 50
Pairing : Yunbai Meat (strong Hakkaku)
Price: 720ml, approx. 2000 yen
The aroma is a little light...?
It is dry and cuts into you quickly at first.
After that, the umami comes out slowly, and bitterness is felt at the end.
I think it goes well with cool spices (octagonal, five-spice powder, etc.).
I think they go well together.
Chinese food has a great taste, but I don't think it goes well with food where you can savor the ingredients.
By itself, it leaves a long, lingering, bitter taste in the mouth.
Personal Evaluation B
It has a long aftertaste and a strong alcohol taste, so I don't think it's an everyday wine, but it's a good summer freshly grated wine, so it's not a bad choice.
Sake Brewer : Meijo Shuzo Place of Origin : Toyofuji-cho, Himeji City, Hyogo Prefecture
Content : 300ml Price : about 450 yen
Rice polishing ratio: 73% Alcohol percentage: 13
Pairing : Stir-fried komatsuna and thick fried tofu with aged soybean paste (hot and thick)
The aroma is crisp but gorgeous.
It has a slightly long bitter taste that is heavy at first and lingers on the palate.
It is a small sip, but if you drink it heavily, it is bitter and you may not like it...
As soon as it hits your tongue, you feel a little bit of sweetness and a thin lingering bitterness...
If you like sake that is crisp and has a short aftertaste...
You may not like it...
If you want to match it with food, I feel that you have to fight it with tempura and other dishes with strong flavors such as salt or boiled vegetables...
If the food is light in flavor...
I think this sake might make it hard to taste the food...
Personally, I feel it's like shochu (it's a freshly stored sake)...
On the other hand, people who enjoy the richness of sweetpotato shochu might enjoy it...
Personally, I prefer a refreshing type...

The aroma is fresh and has a nose like that of a soft drink.
The taste is sharp and full-bodied.
The aftertaste is quite lingering, so it may be a bit too much for some people...
However, it goes well with strong flavored food (boiled vegetables, etc.).
It is also good with salty food...
With light foods such as sashimi...
It may be difficult to distinguish the delicate taste...
Personal Evaluation B
Delicious, but the food is the problem...
Wagyu beef steak with a good marbling and oiliness, with salt or wasabi, it might be quite enjoyable with each other...
