Stopped by Ozawa Sake Brewery and went to a nearby store. I was attracted by the introduction of "sweet and fruity" and bought it. The drink was sweet and refreshing, and was very easy to drink because it did not leave a lingering aftertaste. The Yaezakura sake I had previously received from Izumikin Shuzo had a similar freshness. Yaezakura was impressive for its acidity and sharpness, while Soten was simply sweet and refreshing. Souten, on the other hand, was sweet and refreshing, and I felt it perfectly matched the image of a clear, flowing river.

I've had Kanazawa-ya from the same brewery at an outing, but this is my first time drinking it. I had never heard of rice called "Takaneminori" before. It has a fresh aroma with a hint of cemedine. The impression is that it fades out after a pause from the refreshing feeling, followed by a gutsy sweet flavor. It is a new sake, but it has a strong umami.

Although it's next door, I haven't had Osaka's sake yet. I was thinking of Akishika or Katanozakura for Osaka, but I found this one at AEON today while shopping. There is no outstanding sweetness or spiciness, but a well-balanced taste. It's a good sake for eating. When I paired it with yuba and fried eggplant with sesame oil, I felt like I could drink as much as I wanted 😋. Good sake in the neighborhood too👍.

This sake, in a plastic bottle with no label, is 10 years old. It is no longer sold, but it was my favorite sake. As expected, it has a lot of old sake flavor and is too strong on its own. When mixed with carbonated soda, it is like a lemon soda with honey added to the tannin, a world I have never tasted before. It is a gift from Niigata 🙏. Yukichubai is a classic light and dry wine. but this one seems to be a seasonal summer sake. It is a seasonal summer sake with a refreshing taste🎶. It is slightly sweet and has a nice sharpness! The alcohol content was high, so it was better to drink it on the rocks. It was better to drink it on the rocks👍

Back in the day, Niigata's Sanbai was an extremely hard-to-find brand. I often visited Niigata Takata on business and was often presented with it. At the time, I had no interest in sake at all and almost never went through with it. Now, in 2021, Koshino-Kanbai is easily available at Aeon. Mine-no-Hakubai is also often seen as Hishiko at local liquor stores. However, Yukinubai is not so easy to find in my hometown. So, I got it on a business trip to Joetsu. I paired it with a taste of spring, firefly squid and broccoli with olive oil. It has a moderate aroma of cemedine or banana. It is sweet. It harmonizes with the sweetness and bitterness of firefly squid and broccoli. Lastly, there is a final bitter taste that is refreshing and delicious in the mouth!
