It doesn't say, but the product name is Kokoromi. 295 bottles of this sake are limited, and from the name, I wonder if it is a test brew type sake. The concept of the Kokoromi saké has been around since last year, and it is said to be "unpolished luxury. This year's theme is "Shitakoya. It is a low-polished, low-alcohol sake. It is a rather gorgeous sake with a gentle taste that is not typical of Shirataka. The rice is Yamada-Nishiki from a special A district, which is luxurious for only 1,300 yen. Shirataka, founded in 1862, is especially famous as the official sake of Ise Jingu Shrine. (of course, I had never heard of it before 😅), which is especially famous as a sacred sake for Ise Jingu Shrine. We were very satisfied with the all-you-can-eat crab, sushi, sashimi, etc. We were very satisfied. The place is Kobe Minato Onsen lotus. The aroma was not too strong, but soft and fruity with no bitterness.

There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. A slight bitterness seeps into the tongue and a tangy sourness on the tip of the tongue. The taste that spreads in multiple directions in the mouth is like a rocket firework. Junmai Ginjo Genshu with 55% polished rice. It is full of freshness because it is Arabashiri and of course the aroma is very strong. When you pour it into a glass, it has a light cloudiness characteristic of arabashiri, with fine bubbles - it has a gorgeous ginjo aroma, with notes of green apple, white peach and green melon. When you drink it, you can feel the fine bubbles through your throat and it is very fresh. It's delicious!

Bought directly from the Mukho Sake Brewery... Aroma: Slightly cemedine? As the label on the back says, it's a solid and heavy sake. It is like a local sake, and the bitterness in the aftertaste is a bit of a problem, but...it soaks into your guts...it goes well with strong flavored snacks...smoked hoya and stewed tuna...I enjoy it with a little bit of it....

We ordered at Benkei no weibasho, an izakaya near Niigata Station. This restaurant is operated by a local conveyor-belt sushi chain, and we were informed that their seafood dishes are sure to be good, so we made a reservation and visited. I was curious about this sake at Ponshukan, where I had wandered around during lunch. Niigata is known for its dry sake, but this one is quite fruity. It is not too sweet, so it goes well with sashimi. I mean, too much throat groyne!
