Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

Purchased at Yamane Sake Shop in Tanabe City, Wakayama Prefecture, during a trip to Wakayama Prefecture. I was attracted by the sake label (❗️) and bought it! Aroma of mineral and a hint of grape. When you put it in your mouth, there is a strong sourness and stimulation, followed slowly by a feeling of alcohol, and a little bitterness remains. The image was more like a heavy and drinkable sake, but it was like a dark, fruity, strong sake! I heard they use wild yeast collected from the soil of Kumano Kodo. I imagine it has an even more wild flavor! Even though it's dark, it's still relatively easy to drink, so I guess it's one of the more dangerous sake 😁.

Found it at a local store I sometimes go to 👀. I had no prior knowledge of the brand, but was attracted by the sexy label and the owner's comment that it was "sweet and delicious" 😁. It is indeed sweet. But not sticky, clean and elegant sweetness 😋. By the third day, the sweetness was reduced and the taste was balanced 😆 Uma~!
