Nagano sake is delicious 🍶, and my favorite Shinshu Kamerei and Hitogokochi are my favorites. .... Fruity aroma, sweetness of rice, good bitterness in the aftertaste, and a nice sharpness! Nothing to say about it, roast pork and local edamame (edamame is in season) to go with it. .... Next time, I'd like to pair it with Shinshu soba noodles...

I love ❤️ Shinshu Kamerei, which was sleeping in the fridge! The mouthfeel is sweet! However, the aftertaste is exquisitely bitter and sharp! This is it! Immediately after opening the bottle, it was dry and dry, perhaps due to the 17% alcohol content. Then, after leaving it in the refrigerator for about 5 days due to a business trip, the taste changed drastically! There is almost no aroma, but it has turned into a crisp, sweet and delicious sake. I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!

Tonight, we have a little quirky one for you 💁. Mitsurensei 15th Anniversary Special Sake 5 Years Aged Shiga Watabune Rokugou ✨ H29BY=2017BY and from 2022.7 when shipped, it's aged 5 years, but it's now aged 6 years with +1 year in our house😅. I'll try it as an after-dinner drink after dinner 🍶. It's colorless and clear when you pour it into the cup. The aroma is completely old and matured, with hints of dried grapes, brandy, chocolate, and cacao...it's just mellow. The taste is also bitter with bitter chocolate sweetness, followed by alcohol 😋. Six years of aging is no joke 😎.

I will drop a second one this evening. This is the second of the three stars limited edition extravaganza✨ This time it's the Arcburg strain, reprint yellow yeast. The aroma is not flashy at all, it's a traditional sake with a graininess and beaniness, but the taste is a complete turnaround, with bitterness and sourness from biting the peel of citrus fruits, and it's quite dry with the alcohol running down the nose, perfect for a mealtime sake 😋. The dryness of the reissued yellow malted rice is not a date: ‼️

Tonight, I'm going to open this bottle for the first time in a long time & the long layover series. Kenshin Special Honjozo 2021BY I'm going to have a glass of this sake, which has been in hibernation for more than 2 years, with a plum crystal I bought in the neighborhood as a side dish. The taste is dry and crisp when cold, but as it gets closer to room temperature, the sweetness and umami of the rice is concentrated in the attack, and it changes to a deliciously dry taste. It gently wraps the sourness of the ume crystal and washes it away, and it goes surprisingly well with it, making it a good drink. ☺️

Continued from yesterday. The second bottle is a sake called Kenshin from Niigata. This bottle was given to me by a friend of my son. The timing was not good, so I was finally able to open it. I took a sip, thinking it would be a little yellowish and dry. I took a sip. Surprisingly, it had a mild barrel sake flavor. Ikebukuro with friends on Wednesday. It was not an all-you-can-drink party. Sake was my friend's choice as we sunk into the sake swamp. It was my first Hakuba Nishiki. Nice choice. It tasted like it would be ranked high in the Nigorin picks. It was fresh, fruity, sweet and refreshing. The upper half of the label is European and the lower half is Japanese, which gives it a Showa-era feel.

Rice used is Oarai-grown Chiyonishiki It is more rough than fresh. However, it is not rough at all. It has a refreshing taste, and the umami of the rice spreads slowly. The name "Tomikyushin" was derived from "Tomizo" of Tomizo I, "Hisa" of Wakuri, the mother of Shigenao IV, and most importantly, "Kokoro" or "heart". It has a gorgeous heady aroma as soon as it is opened, cemedine aroma from the glass, and a full-bodied, umami sweetness. The aftertaste is a bit hard, with a hint of sakekasu (sake lees). Legs are few and weak, but long. It is a sake that makes you drink.

It was bottled on the morning of 2/3 and opened on the evening of 2/4 🌇😚It's probably a Risshun morning pressing, but the label is different from everyone else's 🤔.
