@Koriyama Iando After having a drink in Omiya, I got tired of going back to Tokyo, so I jumped on the 🚄 and went to Koriyama. I decided to have a quick bite in front of the station, but it was crowded everywhere, so I went to a new restaurant that I found. They have a good selection of local sake, and I chose "Yuri", which I had never had before, and it is from the same brewery as Aizu Nakasho! I heard that this sake is brewed by a mother and daughter who are both sake brewing technicians! It has a soft sweetness at first, but eventually it becomes slightly dry and pleasant to drink. It is very easy to drink, which is impressive and delicious.

Drinking continues at Don Chaya 🕺. We emptied the weird "Haneya", followed by another round 🍶. We chose our first brand that we could see in the cellar✨ First "Kame no Ou Junmai Ginjo Shiboritate" 🎉. Not much in the way of aroma, but a clean sweetness on the palate, with a pleasantly sharp and sweet [Kame-no-o] lingering finish! I found out later that they revived Kame-no-o and used this episode as a model for Natsuko's Sake, so in a sense, they are the pioneer of Kame-no-o 😁.

We ordered at Benkei no weibasho, an izakaya near Niigata Station. This restaurant is operated by a local conveyor-belt sushi chain, and we were informed that their seafood dishes are sure to be good, so we made a reservation and visited. I was curious about this sake at Ponshukan, where I had wandered around during lunch. Niigata is known for its dry sake, but this one is quite fruity. It is not too sweet, so it goes well with sashimi. I mean, too much throat groyne!

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

At home. The third Nara sake without permission - ‼️. Kita Sake Brewery is located in Gobo-cho, Kashihara City and was founded in 1718. My son used to play baseball and we used to go to Sato Yakuhin Stadium near here. This is the first time for us to visit there. The aroma is not so strong, but there is a slight sweetness and alcohol. When you put it in your mouth, you can taste the sweetness, sourness, dryness, and the gradual feeling of alcohol. Oh, is this the ultimate in dryness? For now, I will only taste it tonight and wait for tomorrow to see how it changes. There was almost no change in taste after the second day. It is dry, but it has a sweet taste and is not unacceptable.

Miyogiku is a sake brewery located near Kashihara Shrine. I bought a Junmai sake and this Honjozo sake. It has a very high density of flavor and richness even in hiya, and the acidity is enough to go well with the drinks! It is also very well balanced in terms of both comfort and drinkability! It is even better when heated! This is wonderful! I bought a small bottle the day before because I had to buy a lot of things at Ise Jingu Shrine, but I want to buy another 4 bottles! Before going to the Kashihara Shrine, we went around the tombs around the shrine, and especially the Unebiyama Northeast Mausoleum was amazing! It was scary! Special Junmai sake with 60% polished rice ratio I bought the jacket because of the impressive cartoonish, retro Showa-era "Oniotome" illustrations. The illustration was done by Minako Sonobe. It is made with "Homare-Fuji" sake rice developed in Shizuoka Prefecture. It has a calm aroma and an elegant, gentle taste with a well-balanced flavor, and it tastes great on the finish!

I bought my first bottle of Vice Shogun. The aroma is fresh and fruity. The mouthfeel is salty-sweet with a hint of sourness. The ginjo aroma becomes a pleasant aftertaste, and is finished off with a mild sourness and bitterness. I thought it was based on a light dry base, but I could feel Aizan's character, and it was very tasty. The fact that everyone who drank it gave it high marks probably indicates that they were paying attention to me. I also like the cost performance of Aizan's Junmai Daiginjo, which is under 2,000 yen!
