I had already had Rikyubai, but this was my first time to try Katano Hakkei.
I had the impression that Daimon Shuzo's sake was a classic type, but overall, it had less of a sake feel and more of a umami flavor, and was not too dry. I felt it was more like a mellow umami-guchi.
In particular, the "Katano Hakkei Hi-iru Junmai Ginjo" had a gentle sweetness and calm umami that spread gradually, and I preferred it to the raw sake 😋.
Let's check it out again at the brewery festival 😁.
