My first time at Hanaizumi. And nigori sake! This season, there are a variety of nigori sake, which is very enjoyable. First, the top clear sake. It is moderately sour. After stirring it, it becomes more rounded. The texture is silky (is that the right word?). The glutinous rice is not perceived, though I like rice cakes. I like rice cakes, but I think it's dry. I want to eat Karami rice cake.

Hanaizumi Jungin Akkatsu Nigorizake 2023BY ✨✨✨✨ It was active, but since it had been absent for a while, it was easy to open the bottle. As usual, we will drink only the top clearings first. There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Back in the day, Niigata's Sanbai was an extremely hard-to-find brand. I often visited Niigata Takata on business and was often presented with it. At the time, I had no interest in sake at all and almost never went through with it. Now, in 2021, Koshino-Kanbai is easily available at Aeon. Mine-no-Hakubai is also often seen as Hishiko at local liquor stores. However, Yukinubai is not so easy to find in my hometown. So, I got it on a business trip to Joetsu. I paired it with a taste of spring, firefly squid and broccoli with olive oil. It has a moderate aroma of cemedine or banana. It is sweet. It harmonizes with the sweetness and bitterness of firefly squid and broccoli. Lastly, there is a final bitter taste that is refreshing and delicious in the mouth!
