There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. This was my first Koganezawa, a gift from someone. It is a Junmai Daiginjo made from Gohyakumangoku, so I had an image that it was quite refreshing, but it tasted just as it should. This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

(- 迭- )🍶🍶🍶🍶 Today I got a sake called Chushingura that I got as a gift 😀 It says it's first shibori-nama-shu but it was aged at room temperature for more than 6 months 🤣Strong style 🔥💪🏾 but I chilled it before drinking 👀. The aroma is mild🤔. When you put it in your mouth, the rich flavor of rice 🌾 spreads in your mouth 😊👍and it has a nice sharpness so it's a very drinkable sake 😚👌. I don't know about the original raw, but this is a delicious sake 🥳.
