Rice used is Dewanosato At first sip, I thought, "This is delicious! This is quite a talented brewer. The moment you take a sip, the banana-like sweetness spreads, with a good amount of bitterness in the aftertaste. It is not gorgeous, but the atmosphere is calm and serene from start to finish. It is a nice and classy sake and I liked it❣️.

Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.

The rice used is Asahi rice produced in Okayama Prefecture. This is a good food sake that can be drunk easily. It has just a hint of sweetness, with a crisp, bitter and spicy finish. There is nothing to hold you back, so you can't help but drink it. This is one of the several bottles I purchased from Doroki Sake Store, including the Koei Kiku, under the guidance of MAJ. OSAKA SAKE & FOOD EXPO 2024⑱. The last of the Yomiuri Shimbun booth is here. There are stores where you can buy Nihonshin, and I've had it, but I've never seen such an expensive sake... Yamada-Nishiki 40% polished rice More modern label than the Nihonshin I drank at home 😁. It's gorgeous, but I felt it's more sake-like... The label is also modern and written in English, so I wonder if it's for export?

This one, like the Ko-Imari, was purchased when I was with Yoohee-san. The rice is Matsuyama Mitsui. It has a melon-like taste and a strong bitter taste like bitter melon. I thought it would be a little sweeter, but it is quite spicy. It is more like melon or cemedine. It is not my favorite type of rice.

There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023. This is Asahi Kiku Arahashiri, a Fukuoka souvenir 🍶. It's in a nice looking bottle, but it seems that during the new sake season, Fukuoka's sake is often served in these stoppered bottles. I thought it was nice because it can be corked tightly so it is easy to reuse. The initial aroma is slightly sweet, like cooked rice. In the mouth, it has a mild sweet flavor with a slight astringency. It finishes with a slight bitterness. The astringency was a bit strong, but the sake was delicious with a calm and full flavor typical of Asahi Kiku ✨.

Hanpukai Sake The label says Kiku-zakari, the sakenowa says Tokikumori. I believe the label. Last year it had a classic impression, but this year it feels modern fruity. Maybe it was my physical condition, but it was different from my image. I enjoyed it very much. I drank it while playing mahjong and got very drunk. Double soup with pork and beef bones? Is it basically pork? It was thick and tasty. It went well with thin noodles.
