It has a mild umami taste, but it has a profound flavor.
There is nothing flamboyant about it, and I think it was made with the sole purpose of making a delicious sake.
It can be paired with any dish, but I like to pair it with gently seasoned obanzai.

It is made from 100% Kura-no-Hana rice, and is characterized by its low amino acidity, low protein content, and clean taste with no cloying flavors.
It has a light and mild taste with a subtle citrus aroma.
Soutenden is served with beef tongue. The well-cooled dry sake with a pleasant sourness spreading through it was so good that I had finished about half of the sake before the pickles arrived. The beef tongue was served with grated radish and miso, but I think miso goes better with this sake. Thank you very much for the meal.

It's refreshing with just the right amount of acidity. Light and easy to sip. Goes well with fish. My wife said that the taste of the sea urchin reverberates in the mouth 😆 We had the star sashimi of tuna ❤️ as a service. A rare delicacy 🎶 like a rare part of heart 🫀.

Thank you for your comment, Jay & Nobby😊When we went there in early June, the sea was muddy and we couldn't eat unotan, so we had to take our revenge 😅The fresh unotan was still excellent ✨I recommend unotan in Sanriku.
For me, it is a stable Soutenden. It is a little fuller and more gorgeous than the special junmai that I usually drink. It has a sharpness from the first taste. Delicious.

I was hesitant to buy a bottle of sake at a store in the station.
I was torn between the Urakasumi Zen and the 180ml Sotenden, which I bought at 7:30am.
The aroma was mild and the mouthfeel was very light, giving the impression of drinking water. I felt a slight heaviness (or potency?) afterwards. I felt a light doshiness (pottiness?) afterward.
Perhaps it was the refreshing color of the bottle, but after drinking it indoors in the middle of summer, it made me feel as if I wanted to bathe in the sun. The plateau mountain seen over the Shinkansen is beautiful. Where are the snacks?
