When the bottle is opened, it has a fresh, tangy, lactic acidic aroma and acidity, and the freshness of the tailings changes the flavors of the aroma, koji and yeast like an aurora borealis. On the second day, it becomes much calmer and easier to drink, and I personally prefer it this way. Soutenden is served with beef tongue. The well-cooled dry sake with a pleasant sourness spreading through it was so good that I had finished about half of the sake before the pickles arrived. The beef tongue was served with grated radish and miso, but I think miso goes better with this sake. Thank you very much for the meal.
