Tomiikiku's local sake ministry️ popular at Haneya. This sake is available in supermarkets😊. The traditional method of production is the same as that of Haneya. Different tastes with different vectors 😋. This sake is characterized by sweetness and umami, not dryness. The common feature is a powdery taste like Kamishinko. It's not always available and not always cheap. I've been through it all along😅lol

At home. Hatsutanaka Rokuugo. A famous sake, but I didn't know much about it... Yamada-Nishiki, it's a tanaka in the middle of a rice field. I knew it for the first time. The aroma is fruity (Muscat type?). Good balance of sweetness, umami, acidity, and bitterness. It is a quintessential gem, suitable to be enjoyed in a relaxed and leisurely manner.

Junmai-shu, 65% polished rice, brewed by Mr. Tanaka in a sake brewery located in the rice paddies. Tanaka Rokuugo. I knew it was delicious from everyone's postings on Sake no Wa 😊. I thought it would be more of a gusto, but it was a delicious sake with a gentle rice flavor and a light texture♪ Kyushu has an image of shochu, but I was surprised at the high level of sake as well, including Tanaka Rokuugo, Koei Kiku, and Sundo 😆. I'm looking forward to trying some of the other sake I have in stock 😁.

This is another Michinoku favorite, Fukushi Shiboritate nama-shu, new rice, new sake. It has a fruity aroma with a hint of fruitiness. It has a bit of sweetness, but the bitterness finishes it off, making it a delicious sake that you will never get tired of drinking.

Purchased at Hasegawa Sake Shop online. The 500ml bottle of this sake costs about the same as a 1.5 liter bottle, but that's why it's so tasty! I always drink it with a sense of anticipation. Alcohol content 17%. Rice polishing ratio 40%. The first saké has a firm, slightly dry taste. The balance is very good. It is not at all fruity like apples, grapes, pineapple, etc., which are common. It is not gorgeous, but as a food sake, it is a sake that goes well with food and makes you say "delicious". One more sip. As you take another sip and another sip, before you know it, it's gone. We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. At first I drank it at room temperature, and from the second glass I drank it on the rocks, and I could feel the gentle sweetness of the sake. The taste reminded me of Tengu Mai's Yamahai brewing. I'd like to try it warmed.

The location changed and we went to Hyogo Sake EXPO 2022, a local sake event in Hyogo, at Kobe Hankyu. I tasted a regular product, a draft version. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.

The only place I can think of that uses Nojoho is Okutanba. The overall impression is gentle and the taste comes slowly. It looks like wood, grass, or herb. It also has a classy atmosphere. The sake here is not my favorite, but when I find it, I buy it for some reason.

It is 5 years old, but it tastes so beautiful that I felt it was boring for the price. I don't know how I would feel if I drank it now. I would like to drink it again at Gin Kura. (^O^)

Kubota Kenshin Junmai Daiginjo 2021BY✨ I'm opening a bottle to feel a traditional sake for the first time in a while: ☺️ The rice used is 100% Takananishiki, and the polishing ratio is higher than that of Manju, which is a high-end line. The aroma is of the light, dry Niigata sake of yesteryear, but with a hint of matured sweet grain 😊The taste is a perfect complement to Japanese food as a mid-meal sake, with a sharp aftertaste, but with a soft, full-bodied rice sweetness that is delicious in its own right 🤤.

When I drank it, I found it to be a strong style of traditional sake 😚 with a good balance of flavor, sweetness, and bitterness, and it was thick 🥰It was like an all-purpose sake 🤤.

Tasted and purchased this one as well. Sweet and tasty without feeling high alcohol content. And a trace of nuttiness. I can't drink a lot of it since it's 20 degrees, but I've never tasted a regular sake with such a good taste 💦. A little like Morinori's Kamisen Unfiltered Nama Sake. This brewery has been making only Kaisen and Kamisen for many years and has been slow to release Junmai.
