I'm opening another bottle today😍. My first Miyazaki sake. Everyone says Miyazaki is hard to get, so I popped in 🤣 I ordered it with Jidori Koko 👍. It's a bit sweet, but not too sweet. It has a modern umami taste, similar to a brand I've had before like Tsushima-ya 😋 It's quite refreshing and the sharpness disappears quickly 😋 It seems to be the only brewery in Miyazaki that specializes in sake 😋 It's delicious - thanks for making sake 😂.

Scoring: ☆☆☆☆ Miyazaki's only sake brewery specializing in sake, Chitoku Shuzo. It has a mild aroma with a good sweetness 😄. Refreshing drink with little lingering aftertaste. 😋 A lightly flavored umami type, or perhaps an 🏠. Not much umami or bitterness lingering on the tongue. Easy to drink but needs one more punch😅. It has an old fashioned taste but with a modern drinking style😋. Quite a tasty sake😋. Tonight I'm having seafood nabe with oysters, cod and scallops 🎵👍

One of the sake I wanted to try because of the stylish label❗️ A hint of pear? White peach? It smells like pear or white peach 😅 Elegant sweetness and almost no sourness ❗️ No bitterness or habits, and the aftertaste seems to disappear easily 😄. Overall, it's a gentle sake that goes well with meals. It's a delicious sake that can be drunk easily on its own 👍 Even sake beginners can enjoy it 😄.

Newly registered brand. Since the sake brewer could not be registered, the new brand is "Aizu Otokoyama" from Otokoyama Shuzo Brewery in Aizu Misato Town, Fukushima Prefecture. Its new brand name is "Wa". It has a mild aroma. It has a melon aroma and a hint of sweetness like caramel. The sweetness that is not too strong is impressive. There is some acidity. The aftertaste is strong alcohol. A strong bitterness also lingers. I have a feeling that it will be excellent with Japanese food.

I was curious about this sake because Mr. Manachie was drinking it. Purchased at an antenna store in Fukushima Prefecture. I really wanted the same specs, but they only had this one and an expensive one, so I had no choice but to choose this one. The brewery has reopened after 20 years. It has a mild and gentle honey-like sweetness. The aftertaste is refreshing. I would prefer a little more sweetness, but it seems to go well with a meal.

The aroma is mild and pear ✨😊😊The mouthfeel is light with a beautiful sweetness and umami 😚It also has a nice acidity and sharpness 😘It is sweet and umami but has a clean aftertaste 🥰This is a delicious sake😍This is a perfect strike👍👍👍 It's a sweet and tasty sake that is dangerous to drink ✨🥳🥳.

[Fukui Spring New Sake Festival (9) The event was coming to an end with a series of sake from Ishikawa. We decided to try something a little different and had a drink here 🍶. Hayaseura Special Junmai Sake "Umi-no-Otoko This is an old sake that has been stored in the brewery for 3 years and was served warmed 😁. The aroma of rice flavor, the gentle texture on the tongue, the impact of the flavor at the back of the throat, the warm aftertaste of heated sake, and the bitter taste at the back of the throat at the end........ It is a "man of the sea" respecting fishermen who work at sea, and I feel that it is strongly made to go well with local fatty seafood and salty preserved food 😋. The entrée sold out unexpectedly quickly, so I emptied it before I could check its true value💦.

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

I returned home for the holidays to participate in cleaning out the oversized trash at my parents' house. After sweating a bit, I found Izumikawa in the fridge and immediately opened a bottle of this unexpected trophy 🎉. It has a slightly soft sweetness, a gradual flavor, and a bitterness that comes in the latter half of the bottle. It is smooth and easy to drink! It is the big brother of Tobiroki, and I enjoyed Izumikawa for the first time in a long time 😘.

Izumikawa's Funakuchi. It is a slightly orizumi (orizumi is a slightly cloudy, raw sake), so the first thing to drink is the top clear liquid. The aroma is still young and melon-like, with a soft sweetness and a tangy, spicy bitterness. The balance of sweetness, spiciness, and bitterness gradually improves. When mixed with ori, it becomes slightly cloudy. The spiciness subsides and the sweetness increases, creating a mellow mouthfeel that keeps you coming back for more. It is a very fresh and delicious sake that can only be drunk at this time of the year.

Izumikawa Jungin Nanaguchi Hon Nama Nama ✨✨✨✨ Izumikawa is a sake that is distributed within the prefecture by the famous sake brewery HIROKI, but this Jungin Funakuchi Honnen is exceptionally popular and our expectations are skyrocketing. ⤴️ The bottle was opened very quietly, with a little lees at the bottom of the bottle. The aroma is similar to that of Tobiroki, but it is not flashy, with fresh melon and pear fruits. The taste is a little viscous and smooth on the tongue, with moderate acidity and the sweetness of the rice spreading through a dry aftertaste. Last night was a get-together. We brought our own sake, assuming it wouldn't be too much since it was an all-you-can-drink course at an izakaya chain restaurant. (I got the restaurant's approval!) I bought my first bottle of Vice Shogun. The aroma is fresh and fruity. The mouthfeel is salty-sweet with a hint of sourness. The ginjo aroma becomes a pleasant aftertaste, and is finished off with a mild sourness and bitterness. I thought it was based on a light dry base, but I could feel Aizan's character, and it was very tasty. The fact that everyone who drank it gave it high marks probably indicates that they were paying attention to me. I also like the cost performance of Aizan's Junmai Daiginjo, which is under 2,000 yen! Thank you very much for your hospitality!

At home. The first Ehime. Ishizuchi is the number one sake in Ehime. The aroma is a little fruity in the sake, and the mouthfeel is smooth and light. You can also feel the sweetness and flavor of the rice. It has the same impression as when I drank it before. The aroma of sweet and sour rice......just like the package of the "Purgatory" color, it has a strong presence. The aftertaste is crisp and clean. It's more of a food wine than a drink...I'm enjoying it with Christmas hors d'oeuvres...thanks Purgatory!

Names of places I will never forget in my life. To name a few, the name of one of them.
