Kagatsuru" at "Kanazawa Jishuzo", a corner sake brewery in Kanazawa Station! Photo #1 on the left I could tell by the difference in taste that it was dry. I got the impression that it had a strong bitter taste.

Purchased at a supermarket near the station. It was served chilled. It is a relatively strong and full-bodied type of sake. But it is a good sake that does not interfere with meals. My wife and father-in-law said they liked the taste. I will keep it in mind.

Shizuoka Business Trip #15 Today I had my first taste of rainbow at Nagashima, which was recommended by ellie and @Mizuhashi 😀! I drank it thinking it was definitely a rich one, and it definitely was 😋 😋 It's a little sweet with lots of flavor, but also has a nice sharpness 👍🌟It's good at room temperature, but I thought it would definitely be good heated up too 🥳I'm going to heat it up tomorrow 🤔.

The second restaurant is Sushi Nakamura. This sake was wholesaled by my childhood friend Fujikouji Sake Shop. Unlike the standard Tenkohi, this sake is too refreshing 🤔. This Usagetsukimine seems to be only for Izakaya (Japanese style pubs) and not for retail stores. The standard Tenkohi is more like a thicker, mellow and fruity sake, but this sake is the opposite. The accompaniment is seared cod roe.

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

It's my first time to drink Hakuin Masamune. It's a sake I've never had the chance to drink before. I've been drinking a lot of sweet and sour sake lately, so I thought I'd try some dry sake. Danrei Dry. It has a moderate aroma and is dry enough to drink with a meal.

Rice used is something from Kyushu It was sent together with eel as a hometown tax return gift from Isahaya City❗️. It is a clear and dry sake with good sharpness ‼️. The sweetness is just a hint and goes well with eel. I was curious about the sake brewery that has the same name as Okinawa "Reimei", but I see they are related. It is interesting to see how many things are connected in this industry.

I got this on a trip to Nagasaki last year. I will have it while thinking back to the delicious Turkish rice and Sara Udon noodles 🤤. When you open the bottle and pour it, the aroma is sweet and fluffy, like pudding or custard. The aroma is gentle and soothing. The mouthfeel is smooth and silky, but as the aroma suggests, it has a pudding-like flavor and a moist sweetness that fills the mouth 🍮. On the other hand, it also has a slightly tangy and pungent acidity that gives it a lightness, so it has a good balance of depth of flavor and a sharpness that goes down your throat👍. In the latter half of the bottle, the astringent taste also comes out, so the flavor can be felt as caramelized. There are also the standard "Yokoyama Goju" and "Rokujyosu", and I remember that I had a lot of trouble finding a variety at the Nagasaki airport. I also drank Nagasaki sake several times, and it seems to me that the level of sake is as high as that of shochu 😌.

Get it at "Marugoto Kochi" in Ginza, Tokyo❗️. I had never heard of this brand before, but it was delicious ❣️. The rice used was something from Kochi Prefecture. It has a fresh citrusy taste like a fresh sake, with a rich mouthfeel, but it goes down smoothly. The aftertaste is clean and crisp. If I had to say something, I would say that I would like a little more sweetness, but it is just right for light drinking.

Second day of Kochi Night. The cab driver told me that Hirome is good, but for bonito, I should go to Matsuri Jaya. He advised me to go to Matsuri Jaya for bonito, as it has a good selection of alcohol. So we went to Matsuri Jaya. At first, we started out with regular sake, just like a normal drinking party in Kochi. The staff at the restaurant recommended various temperatures for drinking. The first sake is Fujimusume, which I have never tried before. Slightly spicy and umami-guchi (flavorful), it was a perfect match for the thickly sliced salt cod roe. The special sake cup is also cute! But from here, I sank into the swamp of Kochi sake.

At home. The first Ehime. Ishizuchi is the number one sake in Ehime. The aroma is a little fruity in the sake, and the mouthfeel is smooth and light. You can also feel the sweetness and flavor of the rice. These are just a few of the sakes that I've had in the last few days, sakes that I would never have encountered otherwise, but that I was able to find by filling in the map of Japan with this sakenowa. None of them are the same, and I feel that they have a profound taste. Once again, I'm reminded of how amazing sake is.

It has the same impression as when I drank it before. The aroma of sweet and sour rice......just like the package of the "Purgatory" color, it has a strong presence. The aftertaste is crisp and clean. It's more of a food wine than a drink...I'm enjoying it with Christmas hors d'oeuvres...thanks Purgatory!

Purchased with Tenryo sake cup at Okuhiroya in Kayashima. They stocked it because it was well received at a Saga sake tasting event held for sake retailers. Probably not normally available in the Kansai region. The rice is made from Hokkaido's Kitashizuku. I know Nabeshima also uses Kitashizuku. It has a beautiful sake quality for the rice polishing ratio. There is a slight sweetness, but it is also slightly thin and heavy. It also has a nutty taste. It tastes like nothing else.
