I returned home for the holidays to participate in cleaning out the oversized trash at my parents' house. After sweating a bit, I found Izumikawa in the fridge and immediately opened a bottle of this unexpected trophy 🎉. It has a slightly soft sweetness, a gradual flavor, and a bitterness that comes in the latter half of the bottle. It is smooth and easy to drink! It is the big brother of Tobiroki, and I enjoyed Izumikawa for the first time in a long time 😘.

Izumikawa's Funakuchi. It is a slightly orizumi (orizumi is a slightly cloudy, raw sake), so the first thing to drink is the top clear liquid. The aroma is still young and melon-like, with a soft sweetness and a tangy, spicy bitterness. The balance of sweetness, spiciness, and bitterness gradually improves. When mixed with ori, it becomes slightly cloudy. The spiciness subsides and the sweetness increases, creating a mellow mouthfeel that keeps you coming back for more. It is a very fresh and delicious sake that can only be drunk at this time of the year.

Izumikawa Jungin Nanaguchi Hon Nama Nama ✨✨✨✨ Izumikawa is a sake that is distributed within the prefecture by the famous sake brewery HIROKI, but this Jungin Funakuchi Honnen is exceptionally popular and our expectations are skyrocketing. ⤴️ The bottle was opened very quietly, with a little lees at the bottom of the bottle. The aroma is similar to that of Tobiroki, but it is not flashy, with fresh melon and pear fruits. Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

Next is Tamahagane. What a cool name! I'm attracted to names like that. Kamitachika has a robust sake feel. The mouthfeel It has a dense sweetness and umami, and a slow-moving sensation. The aftertaste is a bit of alcohol, and despite the heaviness of the initial attack, it finishes with a nice acidity and bitterness. I am not so good at Honjozo, but this was delicious! Thank you!

Get it at "Marugoto Kochi" in Ginza, Tokyo❗️. I had never heard of this brand before, but it was delicious ❣️. The rice used was something from Kochi Prefecture. It has a fresh citrusy taste like a fresh sake, with a rich mouthfeel, but it goes down smoothly. The aftertaste is clean and crisp. If I had to say something, I would say that I would like a little more sweetness, but it is just right for light drinking.

Second day of Kochi Night. The cab driver told me that Hirome is good, but for bonito, I should go to Matsuri Jaya. He advised me to go to Matsuri Jaya for bonito, as it has a good selection of alcohol. So we went to Matsuri Jaya. At first, we started out with regular sake, just like a normal drinking party in Kochi. The staff at the restaurant recommended various temperatures for drinking. The first sake is Fujimusume, which I have never tried before. Slightly spicy and umami-guchi (flavorful), it was a perfect match for the thickly sliced salt cod roe. The special sake cup is also cute! But from here, I sank into the swamp of Kochi sake.
