I'm not privy to the specs, but I hear it's less than 30 per cent polished 🤩. But it's good and cosy 👍I heard they don't use much sake rice though. It's usually sweet, tasty, bitter and well-balanced 😋. Yamagata sake is as high as ever👍

Are you a member of the Shuunin? Shu-in opening! The aroma is clean 🍎. Personally, I don't feel much sweetness, but a nice clean acidity and a bitter taste at the end 😋. It is said to be very polished, but the specs are not disclosed in case you are interested! 1500 yen is cheap for a pure large class👍.

I found out that it was Mr. Rika, the toji (master brewer), who was standing in the store at that time😅. I tasted the following Iwami Ginzan Special Junmai Hiyoshi Oroshi Rika Junmai Ginjo Kaihatanryu Ichitunya TANE Nama-zake Yukika Sparkling None of them left much of an impression on me, but I thought the Yukika was as tasty as ever. It was sweet and strong, like a strong calpis soda. I would like to try it again because Sugidama-san in Kyoto sells Iwami Ginzan.

It's like a sweet and sour apple with a refined taste of koji. For a sake of this time of year, there are no unusual spikes in the flavor. This doburoku is made to order. I pre-ordered it at the end of August through a guide from my favorite liquor store, and it has arrived. It's my first doburoku! The sweet and sour Awaraku in the photo expresses it all. It tastes like sweet sake with the texture of petite rice and the sizzling cider-like carbonation you feel when you crush it, making it a refreshing, mouth-watering drink. It's adjusted to 5% alc:5% and goes down swiftly. It's no longer a dessert!

I was completely captivated by the 126. This time it is in a large size of 1440ml. It is also nice that it comes in a PET bottle with no decoration at all. The bottle was opened while feeling the healthy yeast. Yes, it's really good! It is a super thick, bumpy type of wine. I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!

I drank it at a tasting and bought it because it tasted better than the sake labeled by Machida Sake Brewery. It is high quality for about 1,500 yen. It seems they use a sake rice called Maikaze, but they don't know if they will be able to produce it next year. I hope they will sell it again next year...
