I took home a sake that I remembered as being delicious when I received it at the restaurant. The label is a very unusual one. I heard that a woman is the master brewer of this sake brewery.
It is a sake that goes well with meals! Is it umakuchi or umami? It is hard to describe, but the acidity at the end makes it refreshing.

Iwami Ginzan's modified Hachitanryu, a rare sake rice, is distributed in limited quantities. The fresh taste and refreshing acidity unique to freshly pressed sake are pleasant.

So, the person I met on this day was the toji, Mr. Rika.
He seems crisp and sharp.
Just listening to his voice, he sounds like Chinatsu Wakatsuki...

Comparing Jungin with different rice varieties
Both Sakonishiki and Nagare are sake rice from Shimane
Both are fruity and sweet with a nice sharpness
The Sakonishiki is sweeter and the Hachitanryu has a hint of acidity.
I would like to try the Rika series, but maybe another time!
