I have always been curious about this sake. First, let's take a sip. Smells more like candy than fruit. Banana cake, lychee, yogurt, freshly baked pound cake, very ripe peaches. No sign of activity. Concentrated! Concentrated syrup. Tart on the tongue with a good sweetness, ripe fruit like pears, green apples, and some alcohol as when the fruit is quite ripe. Finishes with bitterness, acidity and sweetness and has a long finish. Good and amazing. Power. It's drinkable with a splash. Shake a few times to mix and drink. Rice, milky smell. The rice flavor, sweetness, and sourness of the rice spread out in a flash, and the doburoku, or doburoku, has a fruitiness that surrounds the main rice flavor, and the bitterness comes in and gives it a nice sharpness. The rice is almost completely melted, so it is smooth and refreshing. Delicious! A few days later, after shaking and mixing, it did not separate even after a few hours. The alcohol feeling gradually faded away, and when I drank it, I could feel the strong rice flavor spreading out, sweet and mellow, like a dessert. A delicious drink.

There are several alcoholic beverages that have been neglected for almost a year since I bought them, and this is one of them. Let's open the bottle to see what it tastes like! It's so easy to drink! Doburoku is generally considered to be a rather difficult liquor to drink because of its strong acidity and various other strong habits. But what is this doburoku! It's not so sweet or sour, just enough to give a gentle taste of the ingredients, and it's easy to drink! For those who like that habit, it may be quite insufficient. However, I like it this much better now. Other doburoku seems to take a little more getting used to. The rice mash is not that strong and has a mouthfeel similar to muddy sake. If I am wrong, it may even be easier to drink than the more habitual muddy sake... lol. Combined with the PET bottle container, it felt like Koiwai apple juice. Are my nose and tongue going crazy? I can feel the apple feeling somewhere. The packaging is probably a parody of the classic movie Leon. I found a funny one on Twitter, so I'll post it here.

I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

I had decided on Mariko's Sake for my first visit to Saitama. The Sato Sake Brewery is run by Mariko Sato, the toji of the brewery. There is almost no alcohol taste, and the spiciness comes later with more umami. It is sweet and umami, but the spiciness lingers a little.

Sake from my hometown in Saitama (Sai-no-kuni yori katari shiranai reishu) has become a major sake...sweet aroma, gorgeous and fruity...sweet on the palate! Rolling on the tongue, you can feel the umami of rice......and the aftertaste is smooth and clean. This will be very popular! I enjoyed it with chicken sashimi and roasted beef tongue 😊.

This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. I bought this alcohol as a tie-in to the No.6 x type direct pass 🍶. It wasn't exactly the sake I wanted, so the bar was low, but I was surprised when I tried it: ‼️ It is one of the best tasting sakes I have ever had👍. Fruity aroma typical of daiginjo 🍌. It has a good umami taste, a nice acidity, and no bitterness 😀. I'm glad I found a good sake that I like (^...^)

OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

I thought it was Hibari, but it was Yukijaku. My first sake from Ehime. It's a delicious sake with a fluffy sweetness that spreads to the mouth, and no harshness. I think it's a good sake that will become a rare and delicious sake once its name becomes known. Sake from a sake brewery in the northern part of the prefecture, located in the famous production area of Hachitan-Nishiki, Hiroshima's representative sake rice. The brewery has been working on it since the rice was first produced. The name of the sake is "Miwa Sakura" instead of "Miwa Zakura," which I had been misreading for a long time. It is said to be dry, but the quality of the sake is relatively soft. It has a nice sharp aftertaste and is easy to drink. It is quite my favorite 😋. Today is Munemasa from the Munemasa Sake Brewery. The same as the last Kameizumi cel24, the sake degree is -15. It's also not too sweet and refreshing to drink, it's a sweet and delicious Saga sake😊.
