I went to a health checkup today, and went to a nearby liquor store that sells good sake, and found this Arabashiri. I opened the bottle right away. All were delicious and it was hard to choose one over the other, but the Manazuru sake was my favorite! I wish I could have had more!

Whale wave is next. I thought it was your first time in Gifu Prefecture and you got one 😊. Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

This Sake is bright and slightly tart. There are flavors of apple and a hint of pear. A medium mouth feel with acidity to clean your pallet. Nicely refreshing.

Although the label is damaged, the Sake is a beautiful melon flavor with a hint of banana. There is also some acidity to give it some dryness at the finish. Good balance between sweet and dry with a medium mouth feel. Excellent!

I took the liberty of drinking this sake thinking it was pure rice. The first sip was a bit harsh, but the next sip was a thick and sweet saké. If you taste it well, it has a fresh feeling, which makes it an interesting sake. I think it was a good choice for the New Year, as it is more like amazake sake. Limited production local sake brewed with Teruhi rice harvested from reclaimed fallow rice fields damaged in the 2014 Hiroshima torrential rain disaster🍶. It is named after the Obayashi district where the rice fields are located, with the aim of "making the village prosperous for the next thousand years." Unfortunately, I saw a newspaper article the other day that the brewing of this season's sake was abandoned due to deer-eating damage this year. We are praying for an early revival. The first impression is a fresh aroma and fruity acidity, followed by umami in the back and a slightly spicy aftertaste, which is refreshing and white wine-like 😀. The low rice polishing (85%) and light mouthfeel made it easy to drink 😋.

Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

It is delicious. When I read Shinzo, it was Kagura. I bought it at Shimada Sake Shop because I thought the typeface of Shinzo was cool. As it says, "the corners are removed and the sake becomes rounded." It is delicious!

I was deleting photos and found an unposted one. I'll register this brand because I don't drink much. I was attracted to this sake because it is "limited to restaurants". The fact that it is not limited to Izakaya (Japanese-style pubs) is very Kyoto-like. I remember we were all oohing and aahing over the cool label when the bottle came out!
