#Funabori# A bit of a bad look 😅. Homemade sundubu jjigae with a side of homemade sundubu jjigae. We had this one. The sundubu jjigae was I kept the spiciness low so that my family could also enjoy it. I made the best use of the soup stock of shijimi clam. The sake does not have much rice flavor 🤔. Maybe because it is a ginjo sake. It is quite light.

This brewery was closed in April this year due to the effects of Corona and other factors. It is said that there is no reopening schedule, so it is practically closed. The official site has disappeared, and it looks like the company has been sold. It would be nice if the company that bought it would let it reopen... It's a rich, umami type that's different from the general image of Niigata's sake. It has a sweetness from the rice. As it has won a gold medal, I'm sure this sake would be delicious warmed. It also has a creamy sweetness.

Fateful encounter with a guess sake 😊. We had it at the place where we stayed during our training 🍶. The first day of opening the bottle. The appearance is beautiful with a warm, light cloudy appearance. The aroma is soft and fresh, with a hint of sweetness. It is accompanied by a gentle woodiness, an astringency like grape skins, and a fresh sweetness like freshly cut pears. The whey aroma creates softness. The rice aroma is soft, with a hint of white dumplings. The firm sweetness of the rice spreads with a soft acidity. There is no sense of overdoing it at all, and the juiciness is extremely modest. From there, the flow of umami, which gives a good sense of fullness, disappears with a light stimulation that passes through to the nose. The lingering aftertaste is a sense of looseness that lingers on the nose and a beautifully tightened astringent taste on the tongue. The third day after opening the bottle. The aroma has not changed much. On the palate, in addition to the sweetness with a clear rice flavor, there is a refreshing acidity that spreads quickly. The refreshing and stimulating flow from the back of the throat to the nose is pleasantly intoxicating, and the soft umami of the rice with fullness is also very pleasing. The finish is clean, with a moderate lingering aftertaste and a bitter astringency. Oh, it is delicious. ☺️ You can tell that the brewer put a lot of thought into this sake 🍶. Last year, I bought a LOW HIGH WHO from here because it was so good 😘. The aroma is mild, sweet and lactic acidic. The mouthfeel is mainly sweet and refreshing, the acidity and richness of Yamahai appear softly in the middle, and the finish and aftertaste are again very beautiful. It is the most recommended brand this year among the newcomers. It is even more refined than last year. Perfect for my chanteuse 🤗. I've been curious about Re:vive Kuga from Heiroku Brewery, but I've never had it before. I drank "layer" but this is my first time to try "Re:vive". I wanted to make sake, but I don't have a sake license, so I mixed germinated brown rice with sake and made it as a craft sake. (Brown rice is considered rice and is sake, germinated brown rice is craft sake, I didn't know that 🧐) Gentle sweetness, moderate acidity. Fresh and delicious 😋. Not schwashy, but fresh? Hakone Drink Comparison Set (2) On March 1, after a year-long event, I went on a trip to Hakone as a way of consolation! The local sake was served to compare with Japanese kaiseki. It was my first time to try Hakonezan! This is the spiciest sake in the group. It is a dry ginjo-shu as you might imagine, but it is moderately rich and very good as a mid-meal drink. Of course, it goes well with ingredients as they are, but it also goes well with dishes that have been added, such as those using dashi (Japanese soup stock)!
