@Osawa of Sake Rice used is unknown Not fruity at all. It is not light and dry, and has aged well. The taste is a mellow type with a strong umami. The aftertaste is surprisingly refreshing for a Daiginjo. It is what is called "the sake of sake.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

Sakemonogatari in Kansai(*) It is a hiyaoroshi of honjozo with a slightly sweet taste and a sense of grain! It is well balanced, probably because it is a honjozo. I would definitely like to drink it with an appetizer! This year, we are only participating in outdoor events because we are still afraid of the new koro, but I think it is very nice to drink under the blue sky!

The aroma is gorgeous, sweet and bitter. It is my favorite type of sake, but the sweetness becomes more pronounced at room temperature. It's not a sticky sweetness, but it's easier to drink when it's chilled! It's good to drink it after a meal👌.

Purchased at the Inoue store as the summer clouds appeared. BBQ while watching the regional high school baseball tournament (my daughter's high school lost...) on my phone. served with seared fish. Easy to drink. A little piri. The evening breeze was pleasant, and it went down a kuikui.

Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

Sake brewed at Suehiro Shuzo's Kaei warehouse. When I hear the name "Genzai," I think of the daiginjo that was entered in the sake competition. I hesitate to buy it because it is a bit expensive, but this special junmai sake (nama-shu, hi-iru) is reasonably priced and easy to pick up. I am looking forward to the next year, when there will be more varieties of sake. As for the sake, the aroma is like apples. When I drank it, I smelled cemedine😅. The sake is fresh and has a tangy, gaseous taste. The sweetness is moderate and the acidity is strong. I thought maybe I don't like cemedine, but I drank more than half of it in no time and regretted it. It is easy to drink. The second day, the cemedine is also good. If this is the case, it's a special pure Cemedine.

The historical Kaei warehouse is located in the town of Aizuwakamatsu, and there is a doctoral brewery that started operation in the Heisei period about 10 km away. Genzai is a series of high-end sake produced in small quantities at the Kaei warehouse. But the brewery is making it at the Docter Kura, or something. I'm not sure. Does that mean only special junmai? We went to the Suehiro Shuzo Kaei warehouse. It is wonderful because it is a gold medal winner in the sake competition while functioning as a tourist attraction where tours of the brewery are given every hour.

Sake 🍶 that came with my accommodation plan on a recent business trip to Fukushima. It's been a while since I had a cup of sake 🍶. I chilled it and it tasted surprisingly sweet and delicious 😋There were some pickles included with the sake, but I forgot to eat them💦. This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.
