This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

At home. The second item of the sake tasting party. Wakayama Rashomon. I had the impression that it was a famous sake with a harsh name and a long history, so I thought it would have a strong alcoholic taste, but no matter what, it's very easy to drink. It doesn't have a gorgeous aroma like Raifuku, but you can feel the sweetness of the rice strongly in your mouth, and it has a clear and light taste, so you can go as much as you want.

Purchased at the Shinsaibashi Takashimaya Department Store on the recommendation of a store clerk. Rice used is unknown. The richness of the original sake can be felt. It does not have much of a nama-zake character, and is clear and clean through the throat, making it a sake that you will never get tired of drinking. Because of its name, I had always assumed it was a sake from Kyoto. I️ was surprised to learn that it was the first Japanese sake to win the Monde Selection gold medal, and that Wakayama is proud of this world-class sake. My sincere apologies 🙏.

The aroma is gorgeous, sweet and bitter. It is my favorite type of sake, but the sweetness becomes more pronounced at room temperature. It's not a sticky sweetness, but it's easier to drink when it's chilled! It's good to drink it after a meal👌.

It's good balance ɵ with a big bowl of Chinese stir-fry with green pepper as usual. I enjoy it with my usual large bowl of green pepper soup.

Brewed by Yamazaki Limited Partnership in Nishio, Aichi Yamazaki Kozo Yume-Ginko DREAM Junmai Daiginjo Genshu I love it so much 😆 I got to know it through "Oku". Yamazaki Gosei. This time it's Yamazaki Kozo's Yumeginko DREAM! This is a Junmai Daiginjo Harazake. It's a very good sake 🍶, same trend as "Oku". It's a very good sake 😆. It also has a slight gassy feeling. I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.
