To compete with them with seafood, We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki. We consulted with them in advance and asked them to secure it for us at the market. We had them as sashimi. It was like a smaller horseshoe crab. They were very pleased 😁. Now for the 🍶... Next was the Ryusen Yaezakura Junmai Sake Takumi no Omachi. Compared to the Yamada-Nishiki we drank earlier, the taste is a little more robust. The aroma is almost imperceptible, but the sweetness and umami of the flavor is stronger than that of Yamadanishiki. I was full of anticipation, wondering what this sake, which won first place in the Governor's Award, would taste like! I went to the brewery and asked them about it, and they told me that they will start selling it next week. I am looking forward to it! It was delicious! (^o^) P.S. This is the sixth brewery in the Saku Sake Brewery series. Located in a historic town along the old Nakasendo road, this is a place I would like to visit again. The taste is very strong as it is called "mellow" sake. It is 18% alcohol by volume. It has a bitter taste on the tip of the tongue, followed by a sweet sake-like flavor. I heard that there is a way to enjoy it by aging it after buying it. Next time I'll let it mature a bit and try it with mizutaki in winter 😋.

National Sake Fair 2025 part74 Nagano (1) I lost everyone when I came back from the restroom, so I acted alone until the end. From here on, I'm going to drink only the brands I'm interested in with pinpoint accuracy. Takeju Honke Sake Brewery in Saku City I've been curious about this sake brewery for a while. They also produce a sake called "doburoku" which is written as "126" and I've never seen it before💦. I've seen Gyoenchiku at Yodobashi before, but it was an expensive one. Polishing ratio 70%, Miyamanishiki 18%, Sake degree -9, Acidity 2.0 1,700 yen (price at the venue) Aged at room temperature for more than half a year. It is matured, but it is delicious with a strong umami flavor. The label says it will be better if it is left at room temperature for a few more months, but I think this is about right for me. It seems to have won a gold medal at the Wineglass Delicious Sake Awards 2022!

The rice used is Hakutsuru Nishiki produced in Hyogo Prefecture. This sake is gorgeous and very elegant. The balance between sweetness and fresh citrus bitterness is just right. I bought it because it was in Hankyu. I've had a sake called "Kaga no Tsuki no Niji" before, but I wonder if the contents are the same. It is thin and cloudy. It has a gorgeous ginjo aroma and a light pineapple flavor. The second half is quite pungent. There is something gentle in the mouthfeel that is unique to saké squeezed in a bag, isn't there?

Spring Tokaido Sake Brewery Tour (2) Dragon Boat Festival🎏 is Kabuto-chan. The second bottle is Suzukabuto. It is junmai ginjo new sake. It is safe to say that this one went out with a real mission. The rice is Ginbuki, a sake rice from Shiga Prefecture, just like the first bottle, Hatsuzakura. It is served cold. It has a slight yellow hue. The top aroma is very mild. It has a juicy aroma reminiscent of fresh bamboo grass, young dried grapes, and oranges. The mouthfeel is round. From the bluish alcoholiness, the juicy orange aroma and acidity are gently developed with a smooth and robust rice feel. The taste is sharp with a tangy, bitter and pungent flavor. The refreshing acidity typical of junmai ginjo-style sake, the familiar rice flavor, and the sharpness of the aftertaste are all nicely integrated.
