I was curious why it says sweet on purpose😅. It's not like the popular fluffy fluty It's a solid sweet sake 👘. So, you know... It was great with light red bean paste sweets, cheese, teriyaki, etc 🎵. I bought this Akatombo at Kado-Yasan in October. I kept it in a safe place, but I opened a bottle today. It's really good! Brewery Limited ✨️ brought in by a regular customer GOTCHISO-SAMATSU I just had Yaezakura the other day, so it was easy to compare: ☺️ It's a bit peculiar after all! But I'm lucky🍀🍀 to be able to drink this rare limited edition sake.

Next was the Ryusen Yaezakura Junmai Sake Takumi no Omachi. Compared to the Yamada-Nishiki we drank earlier, the taste is a little more robust. The aroma is almost imperceptible, but the sweetness and umami of the flavor is stronger than that of Yamadanishiki. I was full of anticipation, wondering what this sake, which won first place in the Governor's Award, would taste like! Besides "𛀣久盛", "瀧澤" and "鼎" which I drank the other day are also brewed at this brewery. ✨️ ［Glass.] Aroma of mellow apples with honey, a refreshing sweetness on the back side of a thick umami flavor, and a mineral aftertaste that lingers on the palate. ［Mokkiri.] A fruity aroma with a strong umami, soft umami, and a lingering aftertaste that is fresh and slightly sweet from the sharpness of the acidity. I wanted to eat meat, so I had roast beef from the basement and the usual fish shop's horse mackerel. After the night shift, I continued to work almost 24 hours a day, and the next day I worked long hours from 6:30 a.m. to 9:00 p.m. Moreover, I sweated a lot from carrying in, preparing, and taking down, and my body was craving salt. Kikumori Shinshu Secret Sake Hanpukai 2025 Gold Course. From the July Shinshu Secret Sake Hanpukai comes Kikumori from Shinshu Meizo. Shinshu Meizou, which has a brewery in the Ueda area, exhibits a freshly stored sake that has been aged in a thermal tank for two years at ice temperature. It is a 100% Miyamanishiki Junmai Daiginjo, with a Sake degree of -2 degrees, an acidity of 1.6, and an alcohol content of 16 degrees, making it a dark, mellow, sweet sake. It has an aroma of muscat and apple on the nose and a mellow sweetness on the palate. This is the sixth brewery in the Saku Sake Brewery series. Located in a historic town along the old Nakasendo road, this is a place I would like to visit again. The taste is very strong as it is called "mellow" sake. It is 18% alcohol by volume. It has a bitter taste on the tip of the tongue, followed by a sweet sake-like flavor. I heard that there is a way to enjoy it by aging it after buying it. Next time I'll let it mature a bit and try it with mizutaki in winter 😋.

The one I bought at the Kisegawa venue of the Shiga brewery opening event. It has a strong alcohol taste with a lot of gusto. It has a strong sweetness and umami of rice. It is better at room temperature, but it is also good on the rocks or with soda. After a week, it still has a strong alcoholic taste, but I think the sweetness has increased.

There is no mention of it, but it is probably nama sake. It is not labeled as Nama-shu, but according to the information on the Internet, the label on the back of the bottle says it needs to be kept chilled, which means it is Nama-shu. Am I right? Spring Tokaido Sake Brewery Tour (2) Dragon Boat Festival🎏 is Kabuto-chan. The second bottle is Suzukabuto. It is junmai ginjo new sake. It is safe to say that this one went out with a real mission. The rice is Ginbuki, a sake rice from Shiga Prefecture, just like the first bottle, Hatsuzakura. It is served cold. It has a slight yellow hue. The top aroma is very mild. It has a juicy aroma reminiscent of fresh bamboo grass, young dried grapes, and oranges. The mouthfeel is round. From the bluish alcoholiness, the juicy orange aroma and acidity are gently developed with a smooth and robust rice feel. The taste is sharp with a tangy, bitter and pungent flavor. The refreshing acidity typical of junmai ginjo-style sake, the familiar rice flavor, and the sharpness of the aftertaste are all nicely integrated. It is a moderate, not too hard-core food sake, and the more you drink, the more you will want another glass. And if you heat it up The contrast between the plumpness of the freshly cooked rice and the tangy bitterness is again delicious. I would like to try it with mackerel sushi as an entrée.

It will be a gift🙏. This is a special junmai from Morinori brewed by Okada Honke in Kakogawa, Hyogo Prefecture. It was recommended to me by someone who knows a lot about Japanese sake. It is fresh and has a refreshing taste with a richness that is typical of Gohyakumangoku and can be enjoyed while savoring the sake. ☺️
