Junmai Ginjyo Namaisouzou "Kame no Ou" from Kusumi Shuzo. Production date: 2025/03 Date of release: 2025/06 I bought this sake because I wanted to drink a sake made from Kame-no-o. Like the Natsuko Monogatari Shiboritate that I drank the other day from the same brewery, this sake had a consistent taste that lasted from the beginning to the end of drinking, with a great sense of clarity. I was shocked by this. Is this transparency a characteristic of Kusumi Shuzo's sake? Or does careful craftsmanship result in this kind of flavor? I would like to try "Kame no O" from this brewery someday.

Kangiku Meizo's Occasional Series "Hashu Honor 50 - Horizon-", vintage 2025. Rice: 20% Yamadanishiki from Hyogo Prefecture, 80% Hashu Honor from Yamagata Prefecture Polishing ratio: 50%. The first time I drank a Kangiku Meikozo sake and fell in love with it was when I drank the 2023 Hanezu Honor 50. It had a fruity aroma, a sweet taste, and a refreshing aftertaste due to the slight carbonation. It was as delicious as ever. It seems that this sake is usually released in late December, so I would like to buy it again at the end of this year.

Seisen Natsuko Monogatari Junmai Ginjo Shiboritate by Kusumi Shuzo, the model for Saeki Shuzo in the manga "Natsuko's Sake. Sake rice: Gohyakumangoku Rice polishing ratio: 55 Alcohol content: 15%. Sake Degree: +3 Acidity: 1.7 Some sake with the same rice polishing ratio can have a strong, bland taste. However, this is a very clear sake that can be drunk as easily as water when drunk normally. The ginjo aroma is also a bit subdued. As the temperature rises from cold to hot, the sweetness and umami become more pronounced. I drank two gou in no time. I am glad I bought it.

Rice polishing ratio: 55% for koji rice, 60% for kake rice The first sip after opening the bottle reveals a fruity aroma and sweetness like green apples. As the sipping progresses, the fruitiness disappears and the umami and richness of the flavor increases. It is good as a food sake. Among the sushi items we had together, there were sea urchin and salmon roe. It did not go well with toro or shrimps.
