Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.

I've been curious about this for a while, but this is my first time in Beian Daikoku. The rice is Hitogokochi, though it is not written on the label. Juicy sweet flavor. It is juicy, sweet, and delicious. It is fruity but not too fruity. It is not flashy, but it has a gentle taste that you will not get tired of drinking. It is said to be -9 in Sake meter, but if that is the case, it must be spicy. I think it tastes sweeter and stronger after a few days.

"The new label on the hammer is also a good omen! May good things come to you!" I've been looking forward to the Hokuyasu Taikoku. It was my first time drinking this brand. The rice used is Hitogochi. The rice polishing rate is 59%. The number 9 at the end is a unique Nagano style! Not much aroma, but refreshing. A little effervescence. Found it at a local store I sometimes go to 👀. I had no prior knowledge of the brand, but was attracted by the sexy label and the owner's comment that it was "sweet and delicious" 😁. It is indeed sweet. But not sticky, clean and elegant sweetness 😋. By the third day, the sweetness was reduced and the taste was balanced 😆 Uma~! I guess the 6th place in the Saga ranking is not for nothing 😆😆. Thanks for the food 🙏🙏.

Tenma Taishukai 2024 ④ The day before, I tasted Sakakamatsu from this brewery at a liquor store in Ikuno Ward. He asked me if I was going to the Tenma Sake Festival. I've been to this brewery and bought sake before. I think it was a brewery in Osaka, but closer to Wakayama and near a fishing port. I drank Junmai Ginjo Natsusei Nemuchi-san confirmed with the brewery that it was the same Sakakamatsu Natsusei that I drank the day before. Hmmm? When I drank it the day before, I had the impression that it was a summer sake with good flavor and drinkability, but something is different... Is it the temperature range? The unique mellow aroma of rice? Aroma of mellow rice...Sweet and spicy with a strong sweetness. There is also a slight sourness? The bitterness in the aftertaste is not bothersome... It disappears quickly. Brewed with 50% Miyamanishiki and 50% Hitogochiki from Nagano Prefecture, it is truly a hybrid of the best of both worlds. Nemuchi said she didn't have a good image of Nishinomoto, but I pushed her 😁. Well, I don't usually drink Nishinomon myself 🙄🙄. It had the same label and yeast as the one I drank at home in the past, but it was upgraded from junmai ginjo to junmai daiginjo. Sweet and sour, juicy and delicious. Like Koshi, I don't like the aroma of sake made with malic acid-producing yeast, but I don't dislike the taste.

A rare sake sold only once a year. It's so precious that it's been hard to open. I finally opened it as a reward for myself. Slurp kaa - tongue tingling. Alcohol content 21 degrees! I bought it on the way home from overtime work. Kikusui Shuzo has been a customer of mine for the Kikusui Funaguchi Ichiban Shibori, which is available at convenience stores and supermarkets before I started using Sake No Wa. I remember that it was a pioneer of canned raw sake. Thanks to this technology, we now have more opportunities to offer unpasteurized sake to the world, and I think this is an immeasurable achievement in the sake world. I could go on and on, but according to the label, this sake is classified as a "liqueur". At any rate, I'll note in my memorandum that it was a sweet and dangerous drink.

Purchased at a local liquor store...Yamada Nishiki, ✖️ Gohyakumangoku = Koshitanrei, 100% sake rice from Niigata Prefecture. Sweet! It's more of a drink to enjoy on its own than a midday drink... it's a beginner's drink... women will love it... and since it's unfiltered, it's unfiltered, you can drink it on the rocks with ice... yup!

This is one of the bottles that was sold in a set with Tobiroki at Hasegawa sake shop, it was made in October 2020, so I guess they used Tobiroki to clear this stock 😅. I'm not a big fan of the Satsuma Masamune, but I'm not a big fan of the Tobiroki either. I was a bit worried because it's a raw stored sake, almost a year after production, but there were no quality issues 😄. Rather, I didn't feel the peculiarity that I felt when I drank Junmai Ginjo before, and it tastes better than that time 🌟. It has a slight sweetness, a strong alcohol feeling and a spiciness that comes down the throat, not very distinctive but enough for everyday drinking. Cold sake is the best 😚
