Today's sake was Kinkan Kuromatsu from the hometown tax return gift from Iwakuni, which we received yesterday 😀 It is a junmai sake, so it didn't have much aroma, but the taste of the rice was very good. It is a junmai sake, which means that the aroma is not too strong and the taste of the rice can be felt well 😀. It was an easy sake to pair with a meal without feeling too much alcohol 😀. Tomorrow, Kaorin and I are going to a Yamaguchi sake event in Kitahama, Osaka 😇. There are many Yamaguchi sake that I like, so I'm looking forward to it 😇.

@Hangetsuan Rice used is something like Saito no Shizuku. It is an orthodox junmai sake, but it suited your meal. Now, talking about February, we were finally able to realize the Iwakuni expedition that was cancelled in 2020 due to the Corona disaster: ❗️ We had some time to spare, so we visited the sake brewery of Mr. Ganki. We got some treasures by looking for "Kinjaku". ‼️ Unfortunately, Kintai Bridge was under construction. It was a fulfilling trip in its own way.

A souvenir from a business trip to Niigata. My colleague introduced me to Miyakoya and I bought it. It was a very tasty sake with the beautiful lightness and umami of Niigata. The bonito was also very nice and fatty, so it made for a good dinner.

I was drinking it on 7/1. It is aromatic, fruity, sweet from the rice, and refreshingly delicious. Niigata is a great place after all! My daughter had it with her lunch of seared nodoguro (northern bluefin tuna) 😊My daughter had it with her lunch of hegisoba (buckwheat noodles) and tarekatsu (pork cutlet with sauce) and drank it with takachiyou. Yum! She mumbled like Mr. Purgatory and only gave me a small bite 🤣.

This is the first time I've bought bamboo island since the new system was put in place. According to the official website of the Japan Famous Sake Association, the rice is Nihonbare and Yamadanishiki. The lees are submerged and when mixed, it is slightly effervescent and petite. Slightly sweet and bitter. I wonder if it is better to drink it while it has gas? Once the gas is gone, the bitterness will make it hard to drink 🤔. I wonder if it would be sweeter to drink the alcohol by itself?

OSAKA-JO SAKE SQUARE 2023 It is a very crisp, dry, deep-flavored Ajiginjo. The aroma is subtle. The mellowness is more apparent in junmai sake. This is also a good sake. I drank 8 glasses this time and they were all good! There are so many good sake that I can't keep up with them all! It's a happy scream!

At home. This is the second one in the Hokkaido series. Kokushi Muso is a metaphor for being so good that no two people under the sun are alike. I was expecting it to have a strong alcoholic taste, but I was betrayed in a good way. It has a fruity aroma and a refreshing, clean taste that goes well with any meal. I think I'll end up drinking too much of it. But the words "Hokkaido Limited" are magic. I feel like I got a great deal just from this word.

Almost no gas Slightly alcoholic grape-like top note The aroma is like light grapes and peaches, the umami of rice and gentle sweetness spreads with soft acidity, and it finishes with a hint of bitterness and a little bit of alcohol spiciness. The aroma and sweetness are mild, and the umami of the rice can be felt well, giving it a mildly juicy impression. It goes well with meals and is of course delicious on its own. It went well with crispy grilled chicken (salted and teriyaki flavors), turnip and chicken in cream sauce.

The rice used is Gohyakumangoku and Nihonbare. If I had to describe it in one word, I would say it's "Omnivorous Japanese Sake Partridge". It has an old-fashioned flavor and an aged feeling like a hiyaoroshi. Spicy and sweet in equal measure, with a long finish. It's a sake that should be served warm. By the way, it's "Hiyaoroshi", but it's shipped all year round.

I learned of the existence of this sake through non non's post. It was a little difficult to go there because you can only buy it at the direct sales place which is open only on weekdays.... It was a nice homey sake brewery 😊. It was limited to 100 bottles and they were the last 3 bottles. It's shwashy, sweet and sour. It may be a daiginjo, but it doesn't taste like yamahai and is easy to drink.

[Fukui Spring New Sake Festival 10] I'm on my 10th cup of sake 😁. I was looking for my favorite "Hakugakusen" and found that it was only available on the first day of the event, so I went here instead 🍶. Unnoi Junmai Ginjo Nama Genjyo. Banana-like aroma, gentle sweetness on the palate, and a lingering mild umami aftertaste. I have a connection with "Kumonoi" since I brought it to the Kansai Sake-no-Iwa offline meeting I attended last summer, and it is still delicious when I drink it again.

This bottle was given to me as a birthday gift last year. I've been accumulating a stock of sake, so I decided to drink it slowly. It's a rare opportunity to see a bottle of sake in a tobin enclosure! It makes my heart dance ✨. When you open the bottle and pour it, you can smell a slight ginjo aroma. It is almost scentless. The mouthfeel is very clean, but the soft, milky sake quality and subtle sweetness of the rice gradually covers the tongue! The spiciness and the strength of 16% alcohol can be felt in the latter half of the bottle, but the overall flavor is moderate. I think I have not had such a clear sake since I drank the highest quality sake of "Akagisan" (12,000 yen for 720ml)! It is as pure as a gentle breeze. It quietly accompanies you from the beginning to the end. The taste is the very embodiment of "elegance. It is a good bottle to drink by itself or to enjoy as a food wine! Enjoy it carefully over the course of the day👍.

Good evening, it's Shamrock, a parallel world from Manazuru in our first series ☘️☘️☘️. Not a Yotsuba, but I'm opening this bottle to pray for Japan's 🇯🇵 soccer team to win tonight✨ It has a sweetness that is typical of rice, lactic yogurt and acidity, and is delicious 🐴🐴🐴🐴, but it has a high alcohol spiciness on the back end that makes it very drinkable. I had a puku puku brew the other day. I think it is similar to the junmai sake I drank the other day from Pukupuku Brewing (that one is Koshihikari) 🤗. I heated it up to lukewarm to try it out and it doubled in flavor 😋.

Purchased at the HYOGO SAKE EXPO. The aroma is of aged aroma like Shaoxing wine. The hint of gunpowder-like aroma. I think it is clean and easy to drink for an aged wine. I thought it would be good to drink with fruits and sweets. The acidity is a nice accent. Perhaps because it is a daiginjo, it feels fruity even though it is an aged sake.
