It's Ibaraki, the name is austere, and you'd expect it to be austere and dry anyway, but it's surprisingly fruity and umami. It is a good choice because of its unexpectedness!

I was attracted to Watanobune and ordered it at an izakaya (Japanese bar). It was a good taste of rice and spiciness, Personally, as someone who loves and expects Watanobune, I felt that it would have been better if there was one more flavor at the end.

@ Tachi no Miya This bottle was recommended to me. It is easy to drink without any peculiarities and has a sweetness that is not clingy. I thought it was a well-balanced sake and well made. The cover is also nice!

Summery sake. A fluffy mouthfeel followed by a sharp dryness. It has a slight flavor of Yamada-Nishiki. I like the taste.

When poured, it is quite yellowish and not daiginjo-ish. The aroma is sweet, but when you actually drink it, it is not a Junmai Daiginjo, but rather has a heaviness like Junmai or Yamahai. It is a bit strong on its own, but when I paired it with a hot pot filled with ginger, the balance was just right and it was delicious.

It is a robust dry sake with a strong acidity, not a gorgeous taste like Daiginjo or Omachi. It is difficult to drink by itself, but it was good when paired with a grated radish hot pot. Sake

I got my long-awaited allowance. I went straight to Ohbuchi Sake Shop 💨. The last time I went to buy sake I was determined to buy the sake 🍶 next time. President Ohbuchi told me it's a very healthy sake. Be careful when you open it: ❗️ Also, the stopper is made of resin, so it's weak. When you put it in the fridge, wrap a towel around it and secure it with a rubber band. Please wrap a towel around the stopper and secure it with a rubber band when you put it in the fridge......is this for real❓ Well then... 🤩‼️ it's so good 😋! I love the super fizzy ‼️ with just the right amount of sweetness! The gentle shwash... It made my mouth feel good! It made my mouth feel good☺️ This may be the best sake of the year 🍶. When I looked at the bottle, the cork was rising fast: ☝️ 😱Seriously, boss~‼️ I wrapped a towel around it tightly and put it in the fridge with a rubber band. The aroma is light, but the taste is mild with hints of rice and grain. It has a smooth texture, but the acidity and umami are strong, balanced by a moderate sweetness. The spread of the acidity from the mid-palate is also intoxicating, and the intoxication subsides relatively quickly and calmly. The lingering taste, including bitterness, is well-balanced and finishes well. It seems to go well with slightly strong flavors. Personally, I would like to match it with simmered dishes or grilled fish, but it seems to be relatively versatile. It is delicious!

Sake from Aizu since it was a business trip to Aizu. I knew to start with the unfiltered raw sake. It has a fresh mouthfeel. A little later, the tangy stimulation and rich aroma spread, but it is somehow light. It is the type of sake that makes you drunk before you know it.

The 10th Osaka Jizake Tenma Daijukai 2024⑩ Choryu's booth. I didn't notice it at all at the venue, but come to think of it, Choryu is in Nara, right? bouken's post solved that 💡. Choryu Omachi Junmai Ginjo Unfiltered Unrefined Nama Sake I'm drinking more Yumachi to clarify if bouken-san is an omatist or not 😁. I think it had the most omachi-like image in my opinion, a solid omachi feeling with lots of umami. I was reminiscing about our previous off-line meeting at an izakaya owned by Choryu, where we had gone for the after-party.

Tenma Taishukai 2024 ⑩ Choryu Sake Brewery, a sake brewery in Nara but also has a brewery in Yao and is a member of the Osaka Sake Brewers Association. As I had the impression in the past, it is a relatively modern type of sake with a strong sweetness and flavor. I like it even after drinking it again. I remember that when I drank it at home, the taste changed a lot after the bottle was opened. Many of the sake I enjoyed at this event were made with omachi.
