When poured, it is quite yellowish and not daiginjo-ish. The aroma is sweet, but when you actually drink it, it is not a Junmai Daiginjo, but rather has a heaviness like Junmai or Yamahai.

The spread of the acidity from the mid-palate is also intoxicating, and the intoxication subsides relatively quickly and calmly. Sake from Aizu since it was a business trip to Aizu. I knew to start with the unfiltered raw sake.

I think it had the most omachi-like image in my opinion, a solid omachi feeling with lots of umami.

Choryu Sake Brewery, a sake brewery in Nara but also has a brewery in Yao and is a member of the Osaka Sake Brewers Association.
As I had the impression in the past, it is a relatively modern type of sake with a strong sweetness and flavor. I like it even after drinking it again.
I remember that when I drank it at home, the taste changed a lot after the bottle was opened.
Many of the sake I enjoyed at this event were made with omachi.
