This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

Usuberini-san for the previous year, which was ordered by mail order after other stores started carrying 06BY. Although the aroma has some sake-like characteristics, it has a mellow mouthfeel, acidity, fruity, slightly sweet and umami, and a deep flavor that is a whole lot. It has a very strong throat feeling. The taste may be different when it is freshly made. I would like to visit Kimura Sake Brewery in Higashinari-ku someday. I missed out on buying it at the Niigata Sake-no-jin OSAKA, and there are not many mail-order stores that carry it, so I ordered it because the one I had registered as my favorite was running low.

I ordered some alcohol to thank friends and acquaintances, but bought some for myself to dilute the shipping costs. First up was a Junmai sake from Koshiji-no-Kenbai. The label made it look really delicious. The day I opened the bottle, it was slightly fizzy and aromatic with a very fine taste. Like a sweet champagne. On the second day, it calmed down and tasted a bit better than the sake I usually drink. I enjoyed it at a level that was a little tastier than the sake I usually drink. (richer than the usual sake grade).

I bought it at Aeon while I went to see a movie today. It's the first time for me to drink it. This is 900ml, isn't it? I thought the shape of the bottle was different. The taste is quite strong, but the aftertaste is refreshing. I think it's a delicious sake ☺️. It's good even if it's heated up☺️.

I have a new impression of Ehime sake 😁. I had never had much Ehime sake before, but I had an image of it being somewhat mellow and dry. This sake is completely different, it is light and slightly acidic, and together with the bitterness in the aftertaste, it is somehow like grapefruit 😊. It also has a bit of a fizzy feel and is very easy to drink as there is no unpleasant spiciness that lingers in the throat 😋. If it were a little more sour, I think I would find it too sour for me, but this level of sourness is just right 😄. I'm only one bottle away from the nationwide domination of the four-gouple bottles or more limited edition. The last one is in Osaka, when can I achieve it? 😅

I asked if there was anything cold? I asked and a rare sake was served 😳. This Kikutaka is no longer available 😊. Thankfully we had it 😃. It has a rich flavor as if it is unfiltered Yamahai, and the acidity is quite strong and peculiar 😊. I think it is a good choice for those who drink it 😊.

The second drink at Marukoma was my first "Koshu". It is light and crisp with a pleasant lingering aftertaste. The second sake was "Koshu", which is also from Niigata but has a different flavor from the "Hokusetsu" that we drank for the first sake 🎵.

This Sake is light and not too sweet. There are herbal flavor notes like licorice and mint. The finish is clean with a light mineral aftertaste. I am told this is a limited, seasonal Sake.

Smells like yogurt, and when the temperature rises, it smells like cotton candy. The rice-flavored liquid is slightly carbonated, and while you think it is light to drink, it changes and becomes heavy with rice flavor, astringency, a sourness and bitterness that comes in a rush, then changes to sweetness and a lactic acidity that is tingling and refreshing. The changes are interesting. When muddled, the rice flavor becomes stronger and a little bitter, and the umami that comes after is pleasant, with a slight sweetness and flavors of rice and koji that are both powerful and beautiful. It is delicious.

I wish I could be a part of this event! I had a small bottle of Yuho, which is made from the sake rice of Ishikawa Prefecture, Hyakumangoku no Shiro 😀 It is a delicious sake with a pure rice flavor.

The aroma is mild and not so much 🤔, probably due to the fact that the bottle was chilled to the perfect temperature before opening. It has a strong umami 👍and a fresh aroma that may be derived from the Yamahai method 😊It has a nice sharpness to it 😚. Summer sake🌻⛅️ is over and it's time for cold sake🍁🍄🌰 which is now in full flavor🥰I'm looking forward to the future sake🥳.

@Osawa of Sake Rice used is unknown Not fruity at all. It is not light and dry, and has aged well. The taste is a mellow type with a strong umami. The aftertaste is surprisingly refreshing for a Daiginjo. It is what is called "the sake of sake.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

GW in Kanazawa! At the Kanazawa Sake Brewery in Kanazawa Station, we came across a dream machine that allowed us to sample sake for 100 or 300 yen (P.S.) Naturally, we took the challenge. The description said it was dry, but I prefer raw sake, so I chose this one. I tasted it thinking it might be a fruity type, but it was a clear dry sake that would go well with sashimi and other dishes. I appreciate free tastings, but I feel somewhat guilty about it, so this kind of reasonably priced tasting is very helpful and encourages me to try different kinds. I tasted three other types of sake here, and all of them seemed dry to me. I have an image that Ishikawa's sake is basically dry.
