The next drink was a Tokujiro for Joyo's distributor? Tokujiro I drank Joyo several times, but this was my first time to drink Tokujiro. I happened to see on a restaurant instagram I follow that Tokujiro was originally a joint product between a Hirakata liquor store and the Joyo Brewery. It's unfiltered, once-bottled, and heated. It's fire-brewed, but it's still slightly effervescent and has a fresh, mellow rice flavor that's really tasty 😋. I'll buy Tokujiro next time I see it.

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. Last sake I bought last year as a Kumamoto souvenir. If I have a chance to visit Kumamoto again, I would like to visit Aso and Kikuchi area 😌. When opened and poured, it has a sweet aroma like sugar and sugarcane. The mouthfeel is crisp and immediately afterwards has the plumpness of rice plus the sweet and spicy taste of brewer's alcohol.
