Sake from the breweries of Chojamori and Koshino-Kanchubai. I had been interested in this sake for a long time, but I bought it because it was on special price and there was a draft. According to the Internet, the rice is Koshitanrei. I've seen the hi-ire version but only at Ito-Yokado 🤔. I heard it was developed in collaboration with Takaoka National College of Technology, and the 888th sake out of 1200 test brews was so good that they decided to commercialize it. Sourness like wine. It has sweetness but it's not like sake. As the description says, I would like to match it with meat and cheese.

Not much aroma and a little hard. If I had to guess, I would say the muscat is powdered sugar. When you drink it, it has a strong acidity and the same or more umami, dashi-like taste. The aftertaste is clean and does not linger. My partner said it was like a thicker, more concentrated version of his favorite Senkou Ichiki. Fukushima Pref. Ten-ei Village, Iwase-gun. Suzunoi Sake Brewery. Jyuzuki Tokubetsu Tokubetsu Junmai Shu, Natural Style, Unfiltered Nama Shu. I had never seen a label like this before, and I didn't know what it meant, but I bought it right away. I bought it at the Osaka office of Fukushima Prefecture, which is difficult for businessmen to get to. I had it cold. The color was a pale greenish yellow. The nose has a mild, green apple-like aroma. The mouthfeel is juicy with a slight viscosity. Weak acidity is felt at first, and when it rolls off, there is a faint burnt scent. Next, a slightly soft sweetness stays flat and faintly in the mouth for a long time. After swallowing, one thinks, "Oh, please don't let the sweetness go away!" Then, at the end, a slight umami comes out, and the aftertaste is a faint, gentle pungency. It is a strange sensation like a lingering aftertaste that lingers for a long time. A sake brewery in Shiwa-machi, Shiwa-gun, Iwate Prefecture, the birthplace of the Nanbu Touji clan. The oldest sake brewery in Iwate, Azumamine Sake Brewery. Founded in 1684, which means... Edo period (@_@) I admire the continuous efforts and wisdom of the people who have kept this taste and this brewery alive since time immemorial. That is why we can enjoy this taste now.
