I've been making my way to restaurants with good service lately. Today they served me a fresh aged sake. Today is February 6. This is my first Kinkame. My first impression was that it was very good! Next, it has a strong umakuchi taste. The acidity at the end is good, just like Yamadataro. It is like a light kijoshu, and it is delicious. Shiga is nice.

Purchased with Tenryo sake cup at Okuhiroya in Kayashima. They stocked it because it was well received at a Saga sake tasting event held for sake retailers. Probably not normally available in the Kansai region. The rice is made from Hokkaido's Kitashizuku. I know Nabeshima also uses Kitashizuku. Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake.
