profile iconOn this day, September 14, 🐯 had a thing for the first time in 18 years, so I opened a slightly better one. Purchased at the Hankyu Sake Brewer's Festival. It was the first brewery in Japan to produce a draft sake. The first brewery to produce sparkling sake in Japan. The originator of hiyaoroshi. The oldest existing brewery. I was a little nervous at the tasting because of all the great things about this brewery. The overall price was high, so I hesitated between a sparkling wine and Yamamotozakura. It made a good impression on me at the tasting. It has a complex aroma of lychee, nuts, and lemon. There are still many other aromas and it's really complex. Fruity, clean and refreshing. The aftertaste is quite dry. The alcohol is also strong. The nuttiness lingers in the aftertaste for a long time. It is a one-of-a-kind sake that I can't think of any other sake that tastes like it. It tastes better after 4-5 days than freshly opened. The aroma is also becoming more apple-like. It also has a chocolate-like nuance. Well, my vocabulary can't accurately describe the taste of this sake 💦.

profile iconThis sake is made by the same company as Jikin, Kiyamasa Shuzo. It is a little less aromatic and umami than Jikin and more of a food sake, but it is very tasty! I spent a happy time with this rare sake. ☺️

profile iconWe will be drinking Takasago by Kiyamasa Shuzo, a well-known brewer of Jikin! On the first day of opening the bottle, there is almost no standing aroma, and the sourness and slight bitterness typical of the Nama-moto style of sake brewing are present, followed by a fusion with the concentrated umami. As the temperature rises, sweetness is added to the acidity, making it even more delicious. The last taste is tangy, spicy and bitter, which is quite to my liking 😋. On the second day, the acidity settles down and the sweetness opens up to become even more delicious! It is a very rare and beautiful sake, so I will enjoy it slowly 😊.

Nakagusuku Honke Sake Brewing Company is a small, family-run brewery located deep in a mountain village on the border with Kochi Prefecture, producing less than 200 koku of sake. No wonder you don't see them in the Kansai region. Jogawago Daiginjo Shizukushuzake Sotsukku Ichi It is spicy from the start, but clean and refreshing. Elegant sweetness and spiciness. I was surprised that it came in a small light green bottle for the sake on display. I had to try this rare brand of high quality sake!

It is said to be very polished, but the specs are not disclosed in case you are interested! 1500 yen is cheap for a pure large class👍.

I think the sweetness and deliciousness of the raw version is much more intense 😋 The bitterness and sharpness are similar to Kudokidoujie. It's also good with meat 😋 or on its own of course! I don't see any specs on the label, but it's supposed to be in the 20-percent milled range. Great cospa: ‼️
