Because there will be a sake bar! The selection of sake has increased dramatically since last year, so I'm looking forward to this year's event too! I met up with my wife and hit it! First of all, let's start from here! Shinsei Earth (Junmai, Namahashio) Aroma of mellow white grape! When you sip it, the acidity mixed with sweetness, which is typical of Shinmasa, spreads in a whirlwind and is irresistible. ❗️ It's a very pleasant sourness on a hot and humid day👍. It seems to be expected to relieve fatigue 😀. According to the "flavor of this lot" on the back label, which is always familiar, it has "maple syrup, shiso leaves, and melon aroma".... Not even a hint 🤣.

I stopped by on my way home from work for the first time in a while, tasted it, and bought it after being told it was not widely available in Fukuoka. It is easy to drink with an apple-like aroma and refreshing acidity. It is sweet, so it goes well with sweet dishes. We had it with sweet and spicy Nanban Katsu, Orange Chocolat dessert cheese, and Hakata Street Monkfish. ☺️ Rice used: Aomori Prefecture sake brewing rice, Hana-Sayaka, etc. Rice polishing ratio 65 Alcohol content 15 Sake degree -13.3 Acidity 3.3 720㎖ 1,342 yen (tax included)

On my way home from work... I was torn between the Junmai Ganki and this one, which has a lower alcohol content in the 14% range 😊. Beware of spewing! and bought it, and they also put a cooler in it. I went home, took a picture and put it in the fridge. It had a screw type lid, so I tried to open it carefully, but it spurted out with a pusher💦. Sweep the floor and desk... Delicious with a refreshing carbonation. The sake level is about -12, which means it is quite sweet, but it does not feel so sweet and refreshing. Good balance of sweetness and sourness. It is said that one can enjoy the marriage with fruits and desserts. We had it with sauteed chicken for dinner. Day 2 Since yesterday was the supernatant, today we shook the bottle slowly, mixed the clear supernatant with the cloudy mash part, and slowly opened the cork and poured it into a glass. White, creamy, with a strong rice flavor and sweetness, even more delicious. ☺️ Rice polishing ratio 60 Alcohol content 14deg. 300㎖ 825 yen (tax included)

Since it was Friday, I stopped by to buy something to take home and found that Hana-no-Rusu was having a sake tasting, a popular sake at the sake brewery opening 😊. Hana no Dew: Shiboritate Junmai Daiginjyo Nama Genjyu A blue bottle of freshly pressed Junmai Daiginjo-nama sake, which seems to sell out every year at the Jojima Sake Biraki. It has a gorgeous aroma, a delicious rice flavor, and a clean throat. Hana no Dew Junmai Ginjo Shiboritate Nama Sake Local Yamada-Nishiki produced in Jojima is polished to 55%, giving this sake an elegant aroma and an easy-to-drink taste. Hana-no-Dew Nama-no-Nama-Shu Freshly squeezed and easy to drink. The 15% alcohol content was too much for my tired body. This first tasting was an ume (plum) sake made with a junmai (pure rice) sake base and apple juice added. I could drink this one today. I don't know if I can put it here 💦 extra notes. Day 3: Even more drinkable and tasty with carbonated water 😊. Paired with mackerel mentaiko and freshly made mentaiko that I bought at a mentaiko factory event. Alcohol content: 8 or more but less than 9 degrees 720㎖ ¥1,540

Purchased at Hakata Hankyu. Having lived in Osaka and Fukuoka, I feel that Hankyu is the best department store for sake (I don't know about Tokyo, but...). I often stop by Isetan Kyoto and Takashimaya Osaka as they also have a very good selection. When I heard the name "Yamata-no-orochi", I imagined it to be very rich, but it has a refreshing, dry taste. It has a refreshing dry taste. However, the umami flavor remains, and the aftertaste and lingering aftertaste are long. It is different from other dry sake. I would definitely like to drink it in summer.

Purchased at Hankyu Hakata. Sweet aroma like banana. This may be the first sake with this kind of aroma. At room temperature. It has a very complex flavor among the Yamahai sake I have had so far. It is made with soft water and has a full-bodied flavor, mixed with acidity and umami. This may be due to the use of Kagawa rice called "Oceto". The aftertaste is short. When heated, the umami of the rice is brought out at once, and the aftertaste is slightly longer than at room temperature. It goes well with strong flavors.

While visiting Hakata Station, I bought a bottle of Amabuki, which I had never had before, at Hankyu Hakata. I bought a cup of sake of a drinkable size, and when I looked at the ingredients, I saw that it contained sugar. I started with a cold sake. It had a nice sharpness and a slightly sweet (?) aftertaste. I had never tasted such a sweet taste before, probably because of the added sugar. This sake is good with a variety of foods. Next, I tried it hot. Aroma of alcohol peculiar to sake. Miscellaneous taste? Odor? (in the good sense that only sake has), and the aftertaste is quite long. It also left a sticky(?) taste on my tongue for a long time. It was also sticky(?) on the tongue for a long time. I think there are different tastes for cold sake and hot sake, so if you are a sake beginner or want a crisp taste, you may want to drink it cold.

But it changes when you taste it Oh, this is persimmon❗️ I'm convinced But I couldn't detect any cereal or caramel nuances in the "flavor of the lot" as well 💦. Sorry for my stupid tongue 👅, sorry 🤣. I didn't detect any cloying taste despite the low white content. You are very skilled 👍 That's too clichéd. I should say it is the crystallization of the sake brewing skills that have been accumulated so far... The brewer recommends this sake to his fans to keep on chasing it 🤗. If you come across it, you should definitely try it 👍

Unfortunately, it was raining today, but there is so much to see in Dazaifu that I walked around quite a bit 🚶. Today I went from Kanzeonji Temple to Sakamoto Hachimangu Shrine, which is the origin of the Gen-go era 🤗. It's a great walking course in spring and fall, so if you're ever in Fukuoka, be sure to stop by 👍. And now back to the drinking comparison❗️. Here is the last one! Junmai-shu Misato Nishiki (center photo) The aroma is the most subdued because it is fire-aged⁉️. It doesn't matter ❓❓️ On the other hand, the taste is the driest and cleanest. This is the best match with Ate. It beautifully takes in the bitterness of dried squid entrails and washes it away 🤗. Akita beauty would be like an adult enka singer, Ayako Fuji 😁.

Dazaifu Tenmangu Shrine was in full bloom with beautiful flowers 🌸🤗. Iris were at their best in the pond and hydrangeas were floating everywhere in the water ❗️. I was not to be outdone by the young ladies who were snapping photos of the flowers 📷 I made love to her! And now, here's the next one! Junmai Ginjo Nama Shu Mirai (right) The aroma is white grape type. The bitterness is stronger than Omachi❗️. The bitterness integrated with sweetness and flavor is the difference from Omachi. The flavor has a clear and distinct outline 👍 Akita beauty is Nozomi Sasaki⁉️ with a deep chestnut color.

On the way home, I stopped by Dazaifu Tenmangu Shrine to make a wish to God 👏. After visiting Sakamoto Hachimangu Shrine, which is the origin of the Gen-go era, we headed to... Nourishment after all 😁. Tohoku product exhibition at a department store, which was held for the first time in a year and a half. The local sake bar, Touhoku, was attached to the exhibition. Compared to the last time, the sake lineup seems to have expanded considerably in addition to the Corona countermeasure! After waiting in line for about 10 minutes, we were seated at the counter. First of all, here is the first thing that caught my eye when I looked at the menu Along with a set of appetizers (dried squid, oysters and mackerel yukke) Hanamup 3 Sake Comparison 45ml / 1,201 yen 1) Junmai Ginjo Nama Omachi (photo left) Fruity, sweet and juicy ❗️. I am abstaining from alcohol to pray for success, but the alienation of not being able to post is even worse than not being able to drink... So, I was checking for any omissions... There it is ❗️ It was more than 5 years ago😅. Back then, there was a corner corner at the Hokkaido products exhibition at the nearest department store... But it was gone due to the Corona disaster, and this year the annual Tohoku product exhibition was also cancelled... Too painful 😹... I hope the department stores will be back to bustling with people soon 💦. And long before that, I was enjoying a 3-sake sake comparison at the corner of the Hokkaido product exhibition 😁. Hokkaido did a great job at the Olympics👍. First up was Otokoyama's special junmai "Kita no Inaho" (pictured left). A soft and smooth Junmai sake. This is the only one I kept in my notes😅. Not much ❗️

The next thing we ordered at Sake Bar Tohoku was the Miyagi Prefecture Drinking Comparison Set! This time, we had three brands brewed with great care by Sasaki Shuzo. The brewery was founded in 1871 in Natori City, where Sendai Airport is located. The brewery's head office and brewery were completely destroyed in the Great East Japan Earthquake, but with the unyielding spirit of Tohoku, they took on the challenge of brewing sake in a temporary brewery the following year, overcame many difficulties, and rebuilt the Yuriage area (where there is a very famous morning market😊) in October 2019.
