This is one that I have been interested in for a while. I was able to buy it this year. The aroma is subdued, yet sweet. In the mouth, a milky sweetness with a sense of grain comes first, followed by a gas-derived chouxiness, and then a finish that cuts through with a slight bitterness. The illustration on the label is also nice.

Following the Junmai sake, we welcomed Junmai Ginjo🍶.
It seems to be a direct pumping type as it is labeled "gas residual".
The rice used is 100% domestic rice.
Polishing ratio is 50% of Daiginjo-class rice.
Alcohol level is 15 degrees.
Specifications: Junmai Ginjyo freshly pressed raw sake
When the bottle is opened, the first aroma is of green apples. The nose has a fresh sweet fruity aroma like lychee and muscat, with soft lactic acidic nuances.
When poured into a sake cup, it is clear and has a very slight bluish color. Fine carbonation can be seen. It is a smooth sake with a moderate thickening, but it contains umami.
When you take a sip, the slightly sweet green apple, muscatel, and lychee-like fruitiness comes first, followed by a refreshing acidity that is light and juicy. A layer of rice-derived umami spreads out afterwards, which is not too heavy. The aftertaste has a slight sweetness from the rice, and the acidity tightens the taste, giving it a refreshing finish.
Since it was served at nearly room temperature, the umami of the rice can be felt even more, and the umami and sweetness spread out all at once, allowing the sake to be drunk in a relaxed manner.

The bottle has a perforated stopper due to secondary fermentation in the bottle, so be careful when opening the bottle: ⚠️
When the bottle is opened, the aroma is mainly fresh fruit aroma like muscat and pear, with a slight effervescence.
When poured into a sake cup, it is slightly cloudy with a slightly translucent color like white with light greenish tints, and a white cage can be seen. It is fine-grained in nature and has a thickening effect.
Upon taking a sip, a soft pear or muscat-like fruity sweetness spreads out, and a lactic acid sweetness can also be detected. After the sweetness, a fine and smooth rice flavor spreads gradually. At the same time, sourness and bitterness accentuate the taste.
The aftertaste is a beautifully sharp finish of sourness and bitterness, and the good balance of a thick yet light finish makes it easy to drink.
We enjoyed it again this year.

Time flies and I feel like it's been a long time 🤔Here's one I got on the night of the Dodgers WC win 🤗.
I was watching the game with my sister at my father's room in Ichikawa and we were all so happy when Roxas and Sumichan hit a HR⚾ and the last double play 🥳 My father, who is hard of hearing and usually difficult to talk to, shouted "Shut up ‼️" twice 😆.
Then we came back to Utsunomiya in the evening 🚙, bought some light snacks at Seven, and started the celebration!
But the main snacks of the day were YouTube videos of the game and player interviews 🎤 But Betts' house is awesome 😳.
We wanted something light 🤗 so we chose this Mimurosugi 🤗.
Coincidentally, this is the first bottle of Mimuro Sugi I've had since February this year, when I also had a bottle of Bodhi Hashi, Rohafu Oorigara-mi 😙.
