At Takashimaya Sake Festival Pork Flatbread as a snack♪ The aroma is tinged with sourness, almost like Shaoxing sake, and the taste is also very sour. Purchased at Takashimaya's Sake Festival The tasting is too much fun as it is in 10% increments from 100% polished rice percentage! This time it was Blue 90 Aroma is sour like Shaoxing sake The color is light amber. The mouthfeel is smoother than expected, with a refreshing sourness spreading first. After that, there is a graininess and sweetness. The graininess that passes through the nose gives a sense of calmness. The acidity is caused by the koji used for shochu (rice malt), white koji I think. Thanks to this, it is refreshing and crisp. ✨️ The most impressive thing was the 100% polished rice ratio! Brown rice! It left a very strong graininess after drinking!

I went to the Sake Festival at Takashimaya! There was a doburoku from Kido that I was curious about, so I got it! Beef dote-ni as a snack First Doburoku in my life! Ichino Nigoromi The simplest taste is dry yogurt! You can really feel the rumbling rice. Ni-no-nagomi It is made from white malted rice and has a strong sour taste. It tastes more like yogurt. The aftertaste is good due to the refreshing sourness. The aroma is strong! I don't like it.

Purchased at the brewer's store on 8/16 during a tour of Suwa breweries. The three kinds of sake we drank at the store were raw sake, but the one we bought this time was fire-brewed sake. The bottle was opened with a loud pop! The sweet aroma of koji (malted rice) wafts through the air! Alcoholic and fruity aroma! It is true that it has a more subdued and calm feeling than the raw sake, but it still has a gassy, clear, and bubbly mouthfeel. ✨️ The sweetness is well pronounced and lingers on the palate for quite a long time. The taste and aroma are typical of Yamada-Nishiki, and it is a very satisfying sake!

8/16 Purchased at a sake store in Okaya City after visiting breweries in Suwa One of the two breweries in Okaya City. Next time I want to try the other one, Takaten. Soft and pleasant on the palate. It is dry but easy to drink with a full-bodied rice flavor. The gorgeous aroma on the nose is also good. ✨️ It is more acidic and tastes better as a food sake!

8/19 on the way back to Osaka, stopped by Nagahama for sightseeing Purchased at Kanenaka Sake Shop. The store was well-stocked with Shichibonryari and Matsunotsu no Tsukasa, but this time I bought the former. The aroma is refreshing with a hint of sourness. The freshly opened bottle is very tasty, with a sourness that is felt on the tongue, and a delicious rice flavor that spreads through the nose! It has a very pleasant sharpness that can be enjoyed over and over again. ✨️ It is good as a stand-alone sake or as an in-between-dinner drink!

I bought this wine after liking it in a drinking contest at a previous visit to Nakazen Sake Brewery. For a family dinner Sake rice is Yamae Nishiki. The aroma is cool and refreshing, with a hint of green apple. The sake is easy to drink with a slightly thickened, yet refreshing taste, with a hint of sourness and sweetness. The second half has bitterness and a yogurt-like richness that makes you want to keep drinking it. Alcoholic feeling that comes after it goes down your throat I thought it would be too much after drinking Beau Michel, which is a low-alcohol beer, but it was perfectly fine! Therefore, do not drink too much 🚫.

Family Sightseeing in Ueda Not going into the hot springs, but towards Bessho Onsen Purchased at Sakaeya. We will have a dinner at night. The bottle was opened without difficulty, with a slight effervescence! The aroma was very much like sake, with a hint of alcohol. But when I drank it, it was completely different. I was surprised that this was made from rice. On the other hand, it also has a delicious flavor and I strongly feel that it is indeed a sake made from rice. Low alcohol content and easy to drink This is the kind of sake I want people who don't like sake to try ✨.

Yokobue, I liked it so much when I tasted it on the brewery tour that I bought it for home. It was a perfect accompaniment to a family barbecue party. I was told to be careful not to blow out the bottle, but it opened without making any noise... maybe because it was shaken too much when I brought it home? Slightly gassy. The aroma is like sweet yogurt, and you would expect it to be sweet, but it's dry! It has a refreshing summery sensation and went well with grilled meat. I also enjoyed the gurgling of the oli, which I couldn't taste in the tasting. I loved this sake so much that I think my visit to the brewery was worth it just to encounter this sake.

At Momose Sake Shop, Okaya City The clerk recommended this sake, and I was curious to buy it. I bought it because I was curious about it and recommended it to me. Miyamanishiki, a medium-bodied sake. A flowery aroma can be felt softly. Slightly gassy and soft on the palate, with a full rice sweetness spreading through the mouth. It is easy to drink with a smooth taste. The acidity at the end gives a calm impression and makes you want to drink it again and again. It blends well with the fat from grilled meat.

Purchased at Mikotsuru Sake Brewery There was a fireworks display 🎇 in the neighboring city of Okaya on the same day, so I went to see it with a cup of sake in my hand! It is a very easy-drinking Junmai sake! It has a light, watery mouthfeel. Somewhat fruity. The sweetness of the rice and the dryness of the sake are very pleasant to the palate. Fireworks from the lake are an indescribable sight. The weather today was neither too nice nor too bad, so we were able to watch them comfortably ✨.

After the tour of the five Suwa warehouses, we went to Shimosuwa. We paid a visit to Suwa Daimyojin to express our gratitude for their kindness to us, and then went to Mikotsuru, where we had our first drink. Then, we went to Mikotsuru, where we drank for the first time. We had three different kinds of sake to compare! All of them are junmai ginjo, unfiltered raw sake, and we enjoy the differences in the rice used to make the sake. In order of drinking Suwa Miyamanishiki It has a sweetness on the palate that gradually settles down. Enjoy the lingering aftertaste after swallowing. ○Yama Ke Nishiki More floral than Miyama, with a cheese-like flavor. The mouthfeel is fruity with a tangy, fruity flavor. It has a sweetness that fills the mouth. ○Yamada Nishiki The aroma is the most subdued, but the taste is strong. It has both the sweet and sour taste of Yamanishiki and the calm aftertaste of Miyamanishiki, giving it a good balance.

Last stop on the tour of five breweries in Kamisuwa (5) Masumi You can drink 4 out of 5 kinds (one is plum wine) 1) Junmai Daiginjo Yamahana The aroma is full and gorgeous. From the aroma, I imagined the taste would be soft and fluffy, but it was sweet and sour, and I could gradually feel the sweetness of the rice, which was calmer than I expected. It gives you a very calm feeling. Junmai Ginjo Jet-Black KURO This sake is characterized by its acidity and dryness. The aroma also gives off a clear sourness. But the aftertaste is mellow and harmonious. This is delicious! I would like to drink it chilled as a food sake. Junmai Ginjo Shirasuna SHIRO A low-alcohol sake. Full and fruity aroma. It has a light, sweet and sour taste. It is gorgeous, but at the same time it is easy to relax while drinking. 4) Junmai barrel sake It is said to take one week to develop its aroma. It has a sour taste with a strong barrel aroma. The medicinal, hot spring-like aroma is not harsh, but rather easy to drink and calming.

Kami-suwa Gokura Tour (4) Yokobue You can drink 5 out of 6 kinds (including 1 liqueur) 1) Junmai Ginjyo Nama Shu Natsuhonokou This is a summer sake. It has a strong sweet aroma of rice malt...but it is a dry sake. The bitterness and acidity in the aftertaste reinforce the dry impression. A refreshing sake suitable for summer. Junmai Ginjo Yokobue Yamae Nishiki Gorgeous sweet aroma of Yamae-Nishiki. It is quite mildly sweet. It has a graininess and a tangy taste. I would like to drink it at room temperature. Kodo (➂) Ginjo-shu It has a gorgeous aroma and a little bit of a soaked-alcoholic taste. It has no peculiarities and is easy to drink. It has a fruity flavor and a hot taste. 4) Junmai Ginjo Yokobue Shirakaba Nishiki It has a sweet aroma like clay and rice malt. It has a watery mouthfeel. The sweetness is moderate and the rice flavor lingers in the mouth for a long time. It is a perfect food sake. (5) Junmai Activated Nigori Sake The aroma is like yogurt. The creamy sweetness spreads while popping in the mouth. However, it is rather subdued and very easy to drink.

Kaminosuwa Gokura Meguri (Five breweries in Kaminosuwa) You can choose 4 out of 6 types. Junmai Ginjo Suwa (4th from left) Aroma of melon. It has a pleasant umami flavor, but the bitterness and acidity are also very assertive, giving a rather subdued impression. ○Junmai Yamae Nishiki (third from left) It has a fruity sweet and sour taste and is light on the palate. The acidity remains and is refreshing. It is good after a meal. Smooth Junmai (5th from left) We had this last year, and it left a deep impression, so we had it again this year. It has a sweet and sour apple-like taste and is refreshing! The low alcohol content makes it very easy to drink. Junmai Daiginjo Miyamanishiki (first from left) The introduction of this bottle said it had a "floral aroma," and I certainly agree. I imagined lavender 🪻. It was an elegant sake. It was an easy to drink sake with a sweet and sour, fruity taste and not too much of an aftertaste ✨.

Kamisuwa Gozakura Tour (2) Reijin I was drunk and accidentally erased the reports I had written down one by one on my phone 💧. You can choose 4 out of the 7 brands in the picture (A to F and one more Daiginjo), but this time I chose A to D. A. Junmai Ginjo Yamahai B. Junmai Ginjo Nama Sake C. Junmai sake D. Junmai daiginjo Overall, the sake was rich and had a strong grain-like aroma. In particular, A is a superb Yamahai with its unique complexity and dryness that brings it all together nicely! On the other hand, D Junmai Daiginjo has a quite gorgeous aroma, yet it is dry and light enough to be drunk again and again.

Visiting the Five Storehouses of Kami-suwa (1) Maihime Shinshu Maihime Ougen label Junmai Ginjo Summer Goldfish The aroma is of muscat, and the taste is moderate, with the umami coming later. The finish is crisp and accented with bitterness. (2) Suiro Junmai Ginjo Natural Smooth taste with a fruity sweet and sour flavor. However, it is not overly sweet, and the final taste is calm and lingering, with a good aroma and aftertaste. Shinshu Maihime Junmai Daiginjo Omachi Chikuhime It has the strongest aroma and fruity sweetness. The sweetness permeates the palate, spreading out just like the aroma. The umami of the rice lingers in the mouth for quite a long time. Shinshu Maaihime Junmai Daiginjyo Harasake Miyamanishiki Polishing 49 It has a firm acidity, which is followed by a full-bodied and mild taste. It is the heaviest due to the fact that it is a pure sake. (5) Suiro Junmai Daiginjyo Yamadanishiki Polishing 39, unfiltered, unadulterated, pure sake Compared to the other two, this one has a sourness that goes through the nose. Purchased sake at a sake brewery as an offering and for drinking at home during a family visit to the cemetery. Chilled Chinese noodles at a party There was also another junmai ginjo, unfiltered, raw sake, but we chose this one because we like the mellow, complex flavor of junmai sake. The mouthfeel has the freshness of a nama sake. As expected, the mild sweetness of the rice malt comes straight to the palate, while still having a fruity taste. It is quite strong because it is a pure sake! The alcohol taste and sweet aroma through the nose are also good! Fireworks display in Suwa on TV! Summer is almost over! We will have to deal with the lingering summer heat for a little longer💦.
