2025 New Year Suwa Gokura Tour (3) Honkin Junmai Daiginjo Miyamanishiki I have had it. Characterized by its soft flowery aroma and moist sweetness. Junmai Daiginjo Miyamanishiki No. 7 Yeast The character is very different from the above, with sweet and sour, umami, and bitterness. The gentle aroma of the aftertaste is also strong in this one. Toshi's test of skill Yamahai Junmai Ginjo-Ginjo-Nama-Shu I have had it before, and it is very delicious with an easy-to-drink acidity and complex rice flavor. Active nigori The sweetness is moderate, and the mouthfeel is clean and acidic at first, followed by a gorgeous aroma and a creamy, full flavor. The fizzy sensation is very refreshing!

Purchased at Aizawa Sake Shop, Matsumoto Second bottle purchased at Matsumoto Odekake Ina no Senjo, a brand I was curious about. Nigori (nigori) sake characterized by the lively white rabbit! The aroma is quite fruity! When you put it in your mouth, it has a strong flavor with sweetness and bitterness! It has a silky taste that only nigori sake can have, and in my opinion, it goes well with cheese.

Purchased at Matsumoto Nakajima Sake Shop Recovering from a cold, I went out to Matsumoto. I went to Matsumoto to see the magnificent Matsumoto Castle and bought some sake. The first bottle was a new sake from my favorite sake brewer, Masamune ✨️ It has the coolness of new sake and the tingling sensation that comes when you put it on your tongue. The sweet and sour apple-like taste is very refreshing! The soft sweetness of glutinous rice with a beautiful aftertaste that is not too sticky and sticky, and a great drinking experience!

I was laid up with a cold during the year-end and New Year's holidays, but I managed to get back to the point where sake tastes good... Here's to wishing you a happy new year! Purchased at Takagiya Sake Shop in Kotohira on 12/27 I had it with my family as an accompaniment to motsu nabe (hot pot) 🍲. The light, watery taste of the rice spreading slowly on the palate was very tasty! It has a strong flavor, but also has acidity and a sharpness that makes it a great sake to drink during dinner. The sweet fat from the motsu nabe (hot pot of pork and vegetables) was a perfect match for the sake. ✨️ I prefer it warmed up as it has more sweetness.

Seishun 18 Ticket Travel Day 3, Shinano-Kisofukushima Due to a sudden downpour this summer, we were able to visit Nakanori, but not here...finally we were able to come ✨. We tasted 3 out of the 6 types! Shiboritate Junmai Ginjyo Nama Genjyo] Second from the left. Fresh and clean on the palate. The sweet and sour taste makes it easy to drink. The aftertaste is rich and lingers well! Junmai-shu 50% Koji] Second from the right As the introduction says, it is indeed a white wine! I thought it would be sweet, but it was a dry sake. The aftertaste has the umami and bitterness of rice, and this is where I knew it was sake. I felt it was a Japanese sake. Special Junmai Nagano R Yeast Brewing] far right The aroma and taste are indeed sweet and sour with a hint of apple. But surprisingly, it is not too sweet and easy to drink. The mouthfeel is thick and mild. The bottom two sakes are made from Shiga Prefecture's Ginbukietsu sake rice, and they have a bitter rice flavor that lingers in the aftertaste. On the third day, we took a slow train to Kagawa, Wakayama, and Nagano, which was quite exhausting 💦. The snowstorm started, and I was disheartened... I'll go home and take care of myself.

The waitress said the sake was strong and good this year! It has the coolness of new sake, but perhaps because it was soaked in alcohol, it seemed to be more beautiful and calm than vibrant. The aroma is quite gorgeous. The taste is rich and sweet, with a nice bitterness. The end is tangy and has a nice sharpness to it! The aroma of rice flavor through the nose was also good. ✨️

Seishun 18 Ticket Trip Day 1, Sanuki (1) Visiting Kompira-san and tour of udon noodles We tasted three kinds of sake at Kinryo's brewery on the approach to the temple! Purchased at Fukumori Sake Shop in Nara on 11/22 The first Nagasaki sake is Iki Yokoyama! Fresh muscat aroma! Very smooth and fine on the palate and very pleasant to drink! Very tasty with a bouncy sweetness. ✨️ The first impression is easy to drink, but the second half is full-flavored, slightly bitter and spicy, and very satisfying 😆. Iki Island is one of the places I would like to visit someday as I love ancient Japanese history, and I would love to go there for this sake too ✨.

Moved from Rakuchu to Fushimi The purpose is to eat sakekasu ramen at Fushimizu Sake Brewery Alley and Kado-Sen. I almost always stop by when I visit Kyoto. Sakekasu and crispy chicken broth go really well together! As we were sipping, an announcement was made that limited-edition Kizakura sake was available, so we ordered some after our meal! It seems that the sake was served at the sake brewery open house that was cancelled due to bad weather, and was only available on this Saturday and Sunday! A sales person from Kizakura came and poured us some 😊. This was my first time drinking Junmai Daiginjo Shiboritate! The aroma was slightly peachy. It has a light, moist mouthfeel typical of Fushimi sake, while still having the petitiveness of new sake! Not too floral, but a deep sweetness that is very tasty. ✨️ It also has the robustness of the original sake, and after drinking it, I slowly got drunk and felt very satisfied!

Standing drinking at Asano Sake KYOTO (5) Sake for the coming year of the Snake The name "Mimuro Sake" is also associated with the fact that the god of the Ojinja Shrine, where the Mimuro Sake brewery is located, is a white snake 🐍. The aroma is lactic like cheese or yogurt, which is very enjoyable among the Bodaihashi sake I have had. It has a surprisingly light sweet and sour taste and is very tasty! Standing drinking at Asano Sake KYOTO (4) One of SENKYO's Zero style, which I was very interested in in my recent post! It has a nice fruity aroma that goes straight to the nose instead of straight to the palate! Sweet and sour and very tasty☺. While it is very easy to drink, it is a sign that I have come to understand Sentori that I did not feel that much of the sourness that is typical of Sentori. ......! I would love to try the others! It is said to be "Edo-style", but it is neither very dry nor sweet like mirin (sweet sake), but more like modern sake!

Standing drinking at Asano Sake KYOTO (3) Sentori is another brand I recently got into: ✨️ This time, we compared a classic and a modern version of Mukonin! The classic was ups and downs. I had the impression that Modern was always easy to drink. Both have a sourness characteristic of Sentori and you can tell they are Sentori with one sip! I prefer the Namahashiroshi, which has a wonderful taste with a delicate acidity from lactic acid bacteria and a delicious aftertaste.

It has a sweet and sour taste and is easy to drink and delicious. Akamon Nama Junmai Nakadori Unfiltered Unrefined Nama Sake The aroma has a strong sweetness from the malted rice. More powerful rice sweetness and satisfaction. Junmai Shiboritate Activated Nigori The bubbles are very strong and do not give the impression of being too sweet. The taste is complex and the aftertaste is enjoyable. Overall, I found this sake to be sweet and robust! I have not been to Sado yet, but now I have a reason to visit someday ✨. To Kyoto for the last foliage sightseeing trip of the year! We went to Manjuin and Shisen-do on the northeast side of the city, which we had never been to before! There was the beauty of the autumn leaves when they were falling!
