I opened a bottle of sake recommended by the owner of a familiar restaurant. The sake had a fruity aroma and the richness of Watanobune was strongly expressed, but it was not heavy, and it was refreshing with a tangy spiciness.
A sake trip to Ibaraki, where many of the brands I have recently enjoyed drinking at izakaya (Japanese style pubs) are delicious. The first sake was a familiar one, Takeyuki. It has a yogurt-like aroma, a full-bodied but not too sweet taste, and a slight spiciness in the aftertaste that leaves you feeling refreshed.
I have seen many colorful labels recently and came across Nabeshima with a simple label. I found it to be a delicious sake to drink and savor on its own, with a more restrained aroma, a stronger umami and sweetness from the rice, and a mellow, tangy spiciness than anything I have had in the past!
Earlier this year, Fujioka Toji's sake was recommended and purchased at this store.

We went to a sake brewery near Utsunomiya station (which was closed and we were guided to) and visited a special distributor, Yoshikawa Sake Shop. I was surprised to see such a wide selection of products and the owner explained to me in detail about the differences between each product. I found a place in Tokyo where I can drink several of my favorite sake products, so I will try them all 😉.
1) Yamadanishiki: High aroma, elegant sweetness, enveloping sharpness
2) Hidahomare: Moderate sweetness, strong pungency
(3) Yumachi: Aroma of Yumachi rice with a touch of sweetness, sweetness cut by spiciness
Personally, I thought (1) was especially delicious!
On my way home, I came across a Takeyuki tasting and sales event at a liquor store. There was a toji there who talked to us about various things and recommended this product, which he said was limited and rare, so we bought it.
(Actually, I was going to buy the sake that won the sake competition gold medal...)
(The aroma was melon-like (as one would expect from Ibaraki), and the palate had a light sweetness and umami flavor, which was quickly broken by the spiciness, but the lingering sweetness remained and spread, which I found to be a very unusual taste. It was delicious and went well with the meat dishes at the department store (discount) 😌.
