A sake trip to Ibaraki, where many of the brands I have recently enjoyed drinking at izakaya (Japanese style pubs) are delicious. The first sake was a familiar one, Takeyuki. It has a yogurt-like aroma, a full-bodied but not too sweet taste, and a slight spiciness in the aftertaste that leaves you feeling refreshed.

The aroma was subtle, and in the mouth it had a moderate sweetness and a bitter taste at the end, followed by a refreshing finish.

I have seen many colorful labels recently and came across Nabeshima with a simple label. I found it to be a delicious sake to drink and savor on its own, with a more restrained aroma, a stronger umami and sweetness from the rice, and a mellow, tangy spiciness than anything I have had in the past!

Earlier this year, Fujioka Toji's sake was recommended and purchased at this store. This time, I tasted the sake of the new regime at the corner bar attached to the store. It was delicious, with a lychee aroma, sweetness and firm rice flavor, clean, and overall elegant and delicate!

I visited a long-established liquor store that I had been curious about, told the owner what I liked, and bought this sake among several recommendations. It was not fruity, but had a strong sweetness from the rice, and was dry, crisp, and refreshing!

I had been looking for this sake recently and finally purchased it from the warehouse at a liquor store I frequent that carries it. It was as delicious as expected, with an elegant, full-bodied sweetness and umami, and a natural, refreshing aftertaste. I brought it as a birthday present for the staff of a sake tavern, and it was very well received by the staff at the restaurant, who thought it was delicious!

This sake was recommended to us by the manager of our favorite restaurant, who also has experience working at a sake brewery. It has a simple aroma of melon or apple, with a rounded taste and sweetness, but with a clean aftertaste.

At a liquor store on the way home, I encountered this sake, which I had heard from a friend that it was delicious, and bought it. The aroma was like melon, and the sweetness spread on the palate, and it seemed to cut right through with a strong spiciness and bitterness!

I haven't encountered it in Tokyo for a long time. When I visited Utsunomiya last year, I bought the standard Omachi one, but today I tried Aizan. The aroma was similar to the Oumachi type, with a strong sweetness of rice, but the sharpness was very refreshing (unlike other brands that cut with spiciness). ☺️

Thank you for your comment, Jay & Nobby😊. We went to a sake brewery near Utsunomiya station (which was closed and we were guided to) and visited a special distributor, Yoshikawa Sake Shop. I was surprised to see such a wide selection of products and the owner explained to me in detail about the differences between each product. I found a place in Tokyo where I can drink several of my favorite sake products, so I will try them all 😉.

1) Yamadanishiki: High aroma, elegant sweetness, enveloping sharpness 2) Hidahomare: Moderate sweetness, strong pungency (3) Yumachi: Aroma of Yumachi rice with a touch of sweetness, sweetness cut by spiciness Personally, I thought (1) was especially delicious!

On my way home, I came across a Takeyuki tasting and sales event at a liquor store. There was a toji there who talked to us about various things and recommended this product, which he said was limited and rare, so we bought it. (Actually, I was going to buy the sake that won the sake competition gold medal...) (The aroma was melon-like (as one would expect from Ibaraki), and the palate had a light sweetness and umami flavor, which was quickly broken by the spiciness, but the lingering sweetness remained and spread, which I found to be a very unusual taste. It was delicious and went well with the meat dishes at the department store (discount) 😌.

The light sweet aroma, the sweetness that spreads as soon as it hits the palate, and the rounded aftertaste that doesn't just linger and doesn't feel spicy, made it a quintessential popular sake.
