Sake made with long-grain purple rice.
This is a metamorphic sake 😆 (delight).
The first aroma is a strange aroma with a hint of acidity.
I don't know what this aroma is...I don't have the vocabulary to describe it😅.
When you put it in your mouth, there is a slightly peculiar soft astringent taste with a hint of sweetness.
I always felt a slight astringency, perhaps from the anthocyanin pigment in the rice 😌.

The sake level is -1, which is not a big deal, but I didn't feel the acidity as much as I thought I would 😅I was hoping for a weird sake, but to be honest, I was disappointed 😅. First up was the Yamahai Special Junmai Oceto🍶.
The top aroma is slightly fruity and sweet.
Smooth in the mouth.
Sake meter value is +19, but it has a slight sweetness and umami, not too perverse 🤔(dissatisfaction).
I guess the feeling is similar to Mimuro Sugi's dry dewy leaf style.

The aroma is fruity and sweet with a slight 🍍 flavor.
It has a mild sweetness on the palate, but like Aomori sake, it has a clean aftertaste.
It finishes with a slight spiciness.
There was a comment that it tastes better if you raise the temperature, so I heated it up with a lentil warmer and the spiciness disappeared and the slight citrus acidity stood out, making it quite delicious.
Aomori sage is meh 🍶😘. chikaMatsuchiyo-san drinks at home 🤣🍶🍶.

The color is clear.
Smell is thin and sweet.
The taste is slightly sweet. Exquisite sweetness reminiscent of blue citrus.
The ginjo aroma is a little, but not the mellow type.
Astringency in the aftertaste.
I found myself drinking more and more 😅.
They say you don't feel alcohol in a well balanced sake 🍶, I wonder if this kind of sake 🍶 is like that 😊. TonyI haven't encountered it in Tokyo for a long time. When I visited Utsunomiya last year, I bought the standard Omachi one, but today I tried Aizan.

We went to a sake brewery near Utsunomiya station (which was closed and we were guided to) and visited a special distributor, Yoshikawa Sake Shop. I was surprised to see such a wide selection of products and the owner explained to me in detail about the differences between each product. I found a place in Tokyo where I can drink several of my favorite sake products, so I will try them all 😉. Tony1) Yamadanishiki: High aroma, elegant sweetness, enveloping sharpness
2) Hidahomare: Moderate sweetness, strong pungency
(3) Yumachi: Aroma of Yumachi rice with a touch of sweetness, sweetness cut by spiciness
Personally, I thought (1) was especially delicious! Countryman810This is the Tosa Urara version of CEL-24, which we obtained when we visited the Kameizumi Fair at Asano Sake Shop. The taste changes quite a bit when the rice used is different. Compared to the normal CEL-24, this one has a more gorgeous aroma and a stronger umami flavor. There is a slight alcohol taste in the aftertaste, but it is not unpleasant, but rather accentuates its character.
It is also delicious! Countryman810This is a limited, light nigori version of Kameizumi CEL-24, which is well-known for its pineapple juice flavor. The sweet and delicious taste is preserved, but the fizz has been added to give it a fresher feel. This is delicious!
