The label does not say, but it seems to be a hiyaoroshi sake. The aroma has a slight sense of maturity and full-bodied rice. On the palate, one senses refreshing acidity and umami, and it finishes with a touch of bitterness. The snack is iburi gakko (pickled ginger) and chestnut okowa. The sense of maturity of hiyaoroshi goes well with the smokiness of the iburigakko. I also feel that chestnuts go well with the yellow label of this sake.

The aroma is mellow and mature. The taste has a calm and refreshing acidity and umami (a little sweetness), and the bitterness tightens it up at the end. As a side note, when I tried this saké, I found that it tends to taste sweeter when drunk sitting down, and spicier when drunk standing up. I had wondered about this when I bought the same sake and drank it at home (sitting down) and found that it tasted so different that I could not believe it was the same sake. The other day, the Ig nobel prize also said that if you stimulate the tableware with electricity, you can easily perceive the salty taste. It may be related to the fact that standing rather than sitting increases the heart rate and the sympathetic nervous system is more dominant than the parasympathetic nervous system.

I missed out on buying this sake last year and was able to obtain it for the first time this year. I had high expectations for this sake because it is one of my favorite brands. When I poured it into the glass, a moderate aroma of maturity rose to the surface. It has an elegant aroma of rice, like that of koshinko, and a strong smell of alcohol, even though it is a pure sake (17%). The taste is mildly sweet and spicy. When cold, it is refreshing and crisp, and you will never get tired of drinking it. As the temperature rises slightly, it becomes more mature and even more delicious. For snacks, we served it with stewed pork cubes. It matched the matured taste of autumn sake.

It was hot and lingering hot today, so we started with 🍺 beer. Tonight we chose Oregon IPA from Obina Brewing, a local American brewery in our hometown of Kofu. Refreshing, but with a rich hop flavor. It was a good bridge to this next sake. Now, without further preamble, this Kame no Kai has a subdued aroma, is refreshing for an autumn-aged sake, does not have much of an aged feel as an autumn sake, and has a dry and salty taste for a Kame no Kai. Personally, I prefer a more mellow, mature, sweet-tasting autumn sake, but this autumn sake may be good for those who like dry, crisp sake.

Today, I happened to find it at a local supermarket and immediately bought a 300 ml bottle. Pouring it into a sake cup, I could smell the aroma of aging, which is typical of hiyaoroshi sake. It is a junmai sake, so the aroma is subdued. The taste is mellow with a hint of sweetness and acidity, with a bitter aftertaste. Personally, I felt that this year's hiyaoroshi had a slightly stronger acidity. Personally, I felt that the acidity of this year's hiyaoroshi was a bit strong. The mild yet stimulating acidity keeps you from getting tired of drinking it, so you can easily drink it again and again. I paired it with grilled chicken with sauce (Negima skewers) as a snack, but since the sake has a beautiful acidity, I think it would also go well with grilled chicken with salt flavoring sprinkled with lemon juice. Although the lingering summer heat is still ☀️ severe, hiyaoroshi is a sake that reminds us of the arrival of 🍁autumn. Still, compared to the past, autumn sake such as hiyaoroshi and akiagari are being shipped earlier than in the past.

Sakunohana after a long time. Moreover, this is the first daiginjo I have ever had. It is fashionable that the label is not paper but cloth. The aroma is of rich rice. The taste is mildly sweet and umami, followed by mild acidity and bitterness. It is firm and full-bodied with a mild lingering aftertaste. It is a mellow and delicious sake.

It seems that this year's "hiyaoroshi" sake has already started to appear, so I opened this sake to put away the summer sake. Since it is sparkling, I drank it in a champagne glass where the bubbles are easy to see. The appearance is clear silver. The fine bubbles look like champagne. The aroma was subdued, but I could detect a yeasty aroma reminiscent of Champagne. The taste is refreshingly sweet, spicy, and refreshing. Although it seems low-alcohol, it is not low at 15 degrees, so be careful not to drink too much. Since it is a sparkling with a carbon dioxide gas injection system, the bubbles are more stimulating than those with secondary fermentation in the bottle (such as Nanaken Sparkling), but it may be just right for this hot season.

Tonight, I opened a bottle of Asamatake at home, which I could not drink after yesterday's Mt. The appearance is a shining crystal. The aroma is of refined rice flour. The taste is full and sweet, followed by spiciness and bitterness, with a nice sharpness. The reddish brown color of the label reminds me of the lava rock surface of the outer rim of Mt. Asama while drinking.

Today I left home early in the morning and climbed the outer rim of Mt. Asama, one of Japan's 100 most famous mountains, from Takamine Plateau on the border of Nagano and Gunma prefectures (Mt. Asama itself is off limits to visitors due to climbing regulations). After descending the mountain, we took a hot spring bath at Nunobiki Onsen in Komoro City while viewing Mt. Asama, and then checked into a hotel in Saku-daira. Well, as usual, the preamble is long, but for dinner in Sakuhira, we went to "Soba Dining Uenakaya" at the north exit of Sakuhira Station. The restaurant was quite crowded due to the Bon holidays. Despite my Type O temperament, which does not like to wait in line, I did my best to wait 20 minutes to enter the restaurant, since I had come so far and did not know when I would be able to come back next. First, I quenched my thirst with a draft beer, and then moved on to sake. I wanted to drink Asamatake in honor of the Mt. Asama trip, but they only had a bottle of No. 4, and it was too hard for me to drink alone. Speaking of Izutsunaga, I was personally impressed by this sake when I first drank it at a buckwheat noodle shop in the town in front of the temple when I visited Zenkoji Temple in Nagano. The appearance is slightly brownish. The aroma is subdued, but when you take a sip, the mildly sweet, spicy, and well-balanced mellow flavor spreads in your mouth and is pleasantly pleasant. It went well with duck nanban soba noodles and dashimaki tamago (rolled egg).

This is the first Nishinomon I have had in a long time. I bought and drank this brand of sake as a souvenir when I visited Zenkoji over 20 years ago, and I was not very flatteringly impressed with its taste. Recently, however, it has been getting good reviews and won a gold medal at this year's New Sake Competition, so I decided to buy a 300 ml bottle of this sake that I happened to find and try it. First of all, the aroma was subdued. However, when I took a sip, I was surprised by its full-bodied gorgeousness and dry taste with a slightly sweet but crisp aftertaste. Although the alcohol content is 16%, it has a nice sharpness, so you will never get tired of drinking it, and you will find yourself drinking more and more of it. Incidentally, I chose an inverted Fujiyama-shaped cup for today's sake, in keeping with the "Mountain Day" celebration. The bottom part of the cup is too narrow and unstable, so I used a plastic cup that I used at a drinking event in Kamisuwa in the past. For snacks, we chose kanpyo maki and tsukune skewers. The tsukune was sprinkled with shichimi (seven spice) from Hachimanya Iso Goro, one of the famous souvenirs from Zenkoji Temple. I had planned to drink less alcohol tonight, but it was so good that I couldn't resist.

I bought this sake at the Aeon Mall on my way back from a recent trip to Matsumoto. I drank it with a sake cup I bought when I went to visit a brewery a long time ago. The appearance was slightly brownish. The aroma is of fresh, rich rice aroma, typical of unfiltered, unpasteurized sake. The taste is fresh and mildly sweet. The aftertaste is clean and not boring, with a moderate acidity and bitterness. For snacks, we drank this sake in an eel rice bowl topped with boiled eel with a little sauce. I think this sake goes well with dishes with sweet sauce.

Matsumoto Expedition 5 (final part) After the corner bar at Standing 8 oz, we headed to "FURIN KAZAN" near Matsumoto Station. However, we could not get in because the restaurant was fully booked. Next, we went to its sister restaurant, Banzaiya, which was also temporarily closed, so we had to give up. In the end, we entered Banrai, a restaurant we had visited several times. The Shinshu Kamerei sake on the menu was out, so we ordered this sake (no picture of the bottle because the waitress seemed busy). For snacks, in addition to the appetizer (chicken and cucumber salad), we ordered grilled rockfish with salt and sanzokuyaki. Below are my impressions of this sake. The aroma is subdued. The taste is sweet for a Daisetsuken, but the acidity and bitterness tighten the aftertaste, and the flavor balance is very good. However, unlike the image of Yarigatake in the Northern Alps, it doesn't have the sharp acidity of the sharp spearhead ⛰️ (summit) that I had imagined.' Due to the lack of appetite caused by the recent heat wave and the sheer volume of the bandit-yaki, I finally finished it and gave up, unable to drink and eat any more 😵. Matsumoto Expedition 4 After a lunchtime corner bar at Ootsuki Sake Shop, we enjoyed tasting 8 kinds of wine at a seminar of the Sommelier Association (Round 2). After that, we took a rest at the hotel where we stayed, and in the evening, it was time for Round 3. We usually go to our favorite restaurant, "THE SAKE PUB," but unfortunately it was closed that day. We had no choice but to go to a restaurant we had been wondering about since we had not been able to go there before. We chose "Standing 8 oz. It is a kaku-uchi (standing bar) with a liquor store attached. There was a gold medal-winning sake from Daisetsuken that I wanted to try, so I ordered it without hesitation. For snacks, I ordered cold tofu and tomato omelette. I was surprised at how reasonably priced they were (the sake was almost at cost = retail price). My impressions of the sake are as follows. 'The aroma is rather plain and reserved rice flour type. However, the taste is very mild, full, sweet, and easy to drink without any corners. It also has the acidity and crispness typical of Taisetsukei." It was a fulfilling third round, but we were tired from drinking since noon and it was getting hard to drink standing up, so we decided to call it quits here and go to the next restaurant. Matsumoto Expedition 3) The third drink at Ootsuki Sake Shop is here. This is the last sake that we drank in the order of clear to cloudy. It looks like doburoku. But the aroma was not so strong for the color. The taste, contrary to expectations, is surprisingly dry and refreshing. Although it is a pure sake, the alcohol content is only 13%, so it may be easy to drink. After this, we finished off with a glass of Izutsu Wine (Shiojiri) Chardonnay and tomato pasta. Matsumoto Expedition 2 The second drink at Ootsuki Sake Shop is here. The aroma is of refined rice flour. The taste is sweet at first, but not harsh, with a hint of spiciness later on. Although it is nigori sake, it is slightly carbonated, making it refreshing and easy to drink. It is the perfect sake for summer. This sake was just recently arrived and was my favorite of the three. Matsumoto Expedition 1) The day before yesterday, I went to Matsumoto City, Nagano Prefecture, for the first time in a while to attend a seminar of the Japan Sommelier Association. Arriving before noon, I first went to "Ootsuki Sake Shop" near Fukashi Shrine. It was my first visit to the restaurant, as I was told that it is open for kaku-uchi (corner drinking) from noon. Even though it is called a kaku-uchi, you can sit down and have a drink here. To order, you look at the menu, make your selection, and then buy a ticket for your order from the ticket vending machine and hand it to the store staff. First, we ordered a set of three different types of sake to compare. You can choose from a whopping 16 different types of sake by the glass. The following is a list of the three types of sake we drank, in the order in which we drank them. First, here is the Daisetsuken. Below are my impressions of it, but my comments are short because I reproduced them from my brief notes. 'The aroma is moderate and refreshing. The taste is also refreshing and mildly sweet and spicy. It has a nice thirst-quenching taste and never gets old.' (continued)

Today, we took a one-day drive to Shizuoka to buy sake. First, I bought four bottles of sake from Kuboyama Sake Shop in Shimizu-ku, Shizuoka City. I also stopped by the nearby "Sanchoku Plaza Fureppi" and bought some fine rock oysters. It seems that rock oysters are in season in summer. Next, we went to the "riverside market" at Shimizu Port. We got caught in a traffic jam caused by lane restrictions due to the recent bridge girder fall accident on the Shizukushin Bypass, but managed to escape just before the market. After eating lunch and buying dried sea bream, we went to "Sakepo Yokozeki" in Fujinomiya and bought four bottles of No. 4 sake. Well, let me preface this by saying that tonight I chose Hidakami to go with the rock oysters from Ofunato, Iwate Prefecture, that I bought today. It is a fine oyster and should really be eaten raw, but I had a traumatic experience with food poisoning a long time ago, so I had no choice but to grill it. The aroma of this liquor was rather subdued for its high alcohol content, with a citrusy, lemon-like aroma. The taste has a subtle sweetness, refreshing acidity and bitterness, and is overall dry, so it cleanses the mouth cleanly. The rock oysters went better with this sake than with soy sauce, which was served with a slightly sweet ponzu sauce.

This is the first brand "Sanzen Sakura" that I have ever had. The brewery was moved from Gifu to Hokkaido due to the aging facilities and the difficulty of temperature control due to global warming. This sake seems to be a sake made with fully ripe banana yeast. The aroma is, as expected, a fruity upper aroma of 🍌 banana. In the mouth, after a slightly sweet mouthfeel with a hint of banana, sourness and a hint of bitterness finish the taste. As it is a junmai sake, it does not have the gorgeous fullness of a junmai ginjo, so it is easy to drink and can be easily paired with meals. It is best to drink it in a large glass, such as a Riedel daiginjo glass or a wine glass, to enjoy the banana aroma even more.

The label looks like wine. I was told that it goes well with oysters, so I went to the local supermarket to buy some fried oysters, but they were not available, so I was forced to buy smoked oysters from Seijo Ishii and paired them with this sake. The aroma is subdued, but the taste is robust. The acidity and bitterness are moderate, and the sweetness is strong and mellow. Unfortunately, smoked oysters, with their concentrated flavor, did not go well with this raw sake. Since it went relatively well with Sanbaizu raw mozuku, fresh, milky raw oysters seem to be the best match, even though it is out of season (there is a picture of raw oysters on the back label as well). ). This sake is said to be a sake that goes well with oysters, prepared with white wine yeast, and I imagined it to be a minerally, refreshing, dry sake like Chablis, a white wine from Burgundy, France, which is said to go well with oysters, but it is rather sweet, reminiscent of a noble rot wine from Sauternes, which is totally different It was. The alcohol content is 13 degrees (it has a firm body, so it may be an undiluted wine). It is perhaps because of its low alcohol content (13%) that it has a sense of residual sugar, as in wine. I personally think it could be fermented more and made slightly dry.

It has been a long time since I drank "Chochin" sake. I remember that it was my favorite brand from long ago. I remember that the sake with a sense of maturity, such as fire-aged special junmai, was a full-bodied sake with a somewhat habitual and powerful flavor that went well with Nagoya's local cuisine (especially dishes using red miso such as "miso katsu" (pork cutlet) and "miso nikomi udon" (noodles stewed in miso)). However, the light nigori sake I drank for the first time this time was surprisingly refreshing and easy to drink despite its 18% alcohol content. The freshness of the sake has been reduced after a year of aging, but the taste is more subdued and enjoyable.
