Shichiken is the only sake from Yamanashi Prefecture to win a gold medal at this year's National New Sake Competition. The rice used seems to be Yumesansui instead of the traditional Yamadanishiki. I remember that the Onakaya I drank a long time ago had a slightly thicker bottle with a cork stopper hardened with wax, which made it very difficult to open. The current Onakaya, however, is a slim bottle with a screw cap that makes it easy to open. After opening the bottle and pouring it into a glass, I found that it was a junmai daiginjo, so the aroma was subdued and elegant. The taste is clean and refreshing with a slight sweetness. It is mild and easy to drink, so you can drink it easily. It is a Junmai Daiginjo, not a Daiginjo, and the rice polishing ratio is 27%, and the evaluation at the New Sake Competition is based on the point reduction method. It may be good as a food sake to match with food, but personally, I prefer "Junmai Daiginjo, Kinu no Aji" which has a better cost performance. Still, the quality of Shichiken's sake has improved remarkably in recent years.

Tonight we started drinking red wine, but switched to sake (cold sake) halfway through because of the hot and humid weather and the fact that the snacks were not suitable. The other day, I happened to find and purchase this brand "Fukuju" at my favorite liquor store, and this is the first time I'm drinking it. It is a sake from Nada, which I usually don't drink for a long time. I had never heard of this brand before, but I bought it when I saw a pop-up saying "Sake served at the Nobel Prize dinner party" at the liquor store where I bought it. The alcohol content is 15%, and it has a very clean and elegant taste. Nada sake is not my personal favorite, but sometimes, Nada sake is good.

Today, we drank at home from noon. Recently, I drank "Kangiku" for the first time, which has a good reputation. It has a fresh, fruity, sweet aroma and taste that is typical of unfiltered, unpasteurized sake, but the alcohol content is 15%, so it is light and refreshing, like a juice. The Riedel glass makes the sake taste a little thin, so it is better to drink it with a small sake cup to feel the flavor of the sake.

Asamatake" is my personal favorite brand. The sake I have had in the past was still hard and unopened right after it was sealed, and its true flavor was revealed after 2 to 3 days had passed, but this sake was delicious right after it was sealed. The sweetness is felt at first, but the acidity follows later, making it a very crisp sake.

Tonight's sake is "Yamatohka," a sake I'm drinking for the first time. I had been curious about this brand, which is named after Yamaguchi Prefecture's haiku poet "Taneda Yamatoka," until the other day when I saw an ad in 47 Club that it is shipped with a different label (a label with a poem written by Yamatoka on that day) for 365 days, so I placed an order specifying the label for my birthday. I had actually intended to drink it on my birthday in November, but I couldn't wait and opened it tonight. I opened the bottle tonight and enjoyed it with a Hagiyaki sake cup I have at home. The taste is different from the popular sake of the day, but rather old-fashioned and nostalgic in a sense. It is a fire-aged sake with a rice polishing ratio of 40% and an alcohol content of 17%, so it has a refreshing taste, but with a firm sweetness and umami. The slight sweetness is right in the strike zone for me. The phrase "The sound of raindrops has grown old" is thought to have been composed by Yamatoka, who was listening to the sound of raindrops dripping from the eaves of the roof of an inn where he was on his way to beg for food, when the rain eventually slowed down and he superimposed his own aging on it (I have done some research, but the details are unknown). Rain is forecast for Yamanashi tomorrow. Tomorrow night, I would like to savor this sake while listening to the sound of raindrops and feeling my own aging.

The aroma is subdued. However, when you put it in your mouth, a fresh, gorgeous, fruity flavor like pineapple spreads quickly. I honestly did not think this brand was very good when I drank it before it became so popular and difficult to obtain. It is a sake like "Shinshu's Hana-Hanayo-Yukata," but I personally prefer it to Hana-Hanayo-Yukata.

Fruity aroma like pineapple as well as rice flour. In the mouth, fresh and refreshing sweetness and sourness are followed by bitterness. It is fresh and delicious! This is the recently trendy KeyKeg sake, called KEGDRAFT, which I guess is a sake version of keg beer. You can enjoy the taste of freshly squeezed sake. Yesterday, I took a day trip to the Saku region of Nagano Prefecture🚙. First, we went to Shikishimaya, a pie store near Komi Station, but their products were already sold out. However, I was given a piece of the millefeuille that was left as a sample and tried it, and it was superb! (Actually, I have a sweet tooth as well.) Next, we went to our original destination, Sakepo Seimizuya. I learned of the arrival of Shinshu Kamerei Junmai Ginjyo Hitogokochi in the mail magazine and rushed to secure a bottle. For lunch, we had the original "Sauce Katsu-don" at the nearby "Kikyouya". The sweet sauce matched the pork cutlet and rice and was very tasty. I could have gone home, but since I had time to kill, I decided to go a little farther to Sakepo Kiyomizu-ya in Saku-daira. We took the Chubu Cross-Island Highway from the Yachiho Kogen Interchange, which was surprisingly close. I was very satisfied because I was able to buy the Meikyojo-jimizu that I uploaded today.

In the past, I drank "Akanesasu" from the same brewery and thought it was delicious, but "Kame no Kai" was not well known and was a no-marker. Last fall, I was impressed when I drank Kame no Kai "hiyaoroshi" at a soba noodle restaurant in front of Matsumoto Station. Since then, it has become a brand that I personally pay attention to. The initial aroma is of elegant rice powder. In the mouth, it has a fruity sweetness like apples, followed by sharp acidity and mild bitterness typical of Miyamanishiki, with a nice sharpness. Immediately after sealing, it was fresh and gorgeous with a slight gassy feeling, but tonight, after two days, it has calmed down and the bitterness can be felt, making it easy to match with meals. As there have been many sweet sake recently, I measured the sugar content of this sake with a sugar meter (Brix meter) for reference, and it was 12 degrees. The sugar content seems to be on par with that of tangerines and watermelons.

I bought this bottle for home drinking because it was so good after drinking it at a local izakaya. The aroma is of refined rice flour, like koshinko or shiratama flour. When tasted, it has a rich sweetness and umami that spreads in the mouth and lasts for a long time. The acidity and bitterness are moderate, and it feels as if you are drinking apricot bean curd. Yesterday, I went to the nearest Shinshu Kamerei store from my house, Shuho Seisuiya (Koumi Honten) (Koumi-machi, Minamisaku-gun, Nagano Prefecture), and purchased the Shinshu Kamerei, Kame no Kai, and Asamatake that I was looking for. Since the amount of sake I can drink has been decreasing recently and my refrigerator is already full, I will refrain from purchasing sake for a while.

Tonight we opened "Momoten" aka "Tenbi". If I was not careful, as soon as I peeled off the cap seal, it popped off! The lid flew off. I wanted to taste the clear part of the top clear liquid, but I was too late to put the lid back on, and the rising bubbles rolled up the Ori on the bottom of the bottle, leaving me with no choice but to start from the bottom of the bottle. My first impression of the aroma was a peach juice nuance, like Fujiya's Nectar. In a Riedel glass, when swirled and allowed to come into contact with the air, the aroma of rice-scented topknots becomes predominant. The taste is sweet and gentle with a sourness like pineapple juice. My home prefecture of Yamanashi is the largest producer of 🍑 peaches in Japan. The other day, while admiring peach blossoms given to me at a local produce stand, I savored Momoten (peach heaven) and finished with peach juice made from 100% fruit juice. Tonight was a night full of peaches.

The cherry blossoms are in full bloom in the Kofu Basin, but the weather is not so nice today, so I decided not to go out and have lunchtime drinking at home for the first time in a while. I chose a local sake called "Shichiken. It is an orikarami version of the 300ml Harushibori-junmai we drank the other day. First, I drank the clear part of the supernatant. The attack is refreshing and delicious. Next, I turned the bottle upside down to awaken the oriki that had accumulated at the bottom and drank it. The sweetness increases and the flavor doubles. It has a sharpness that keeps you from getting tired of drinking it. Today's sake is good only after a short period of abstaining from drinking due to a noro-virus gastroenteritis! Today's sake was served in a (reverse) Fujiyama-shaped glass I bought at the local Yodobashi Camera. I also pulled out Nanaken's original ceramic sake cooler to keep the bottles chilled. By the way, the snack was also Nanaken's Junmai Sake Kasu. Today, my love for Yamanashi was overflowing. (Note: I am by no means a shipper of "Shichiken" (laugh).

It has been a long time since I have had a Tohoku Izumi. But this Junmai Daiginjo is new to me. It is fire-aged and does not have much individuality in taste, but it is a little dry, crisp, and stable, like a good old-fashioned sake. It is not boring to drink, so the cup goes down smoothly. Although the alcohol content is 16.2%, it feels like 15%, making it suitable for a mid-meal drink. Tonight's snack was homemade tuna cubes from a local fishmonger. It has a moderate flavor, not too sweet and not too spicy, and with a slice of ginger, it is delicious and has no fishy smell. Jay & Nobby's post the other day reminded me that I have a "Nosaku" sake cup myself (I only use it on special occasions like New Year's, so it's usually tucked away in the back). ), so I took it out tonight. Tin is a soft material, so I put too much pressure on it when I washed it, and it is a little deformed, but it is my own original, and that is probably what makes it tasteful.

This is the first brand I personally drink. I have high hopes for Tochigi Prefecture's sake, as they have such good local brews as "Houou Mita!" First, I drank it in my usual small glass. The attack was good, but the aftertaste was not so good. Then, I tried drinking it in a Riedel Daiginjo glass. The aroma opened up and the taste expanded. The color was clear crystal. The aroma was strong, with a hint of rice powder like koshinko. The taste is juicy and full-bodied with a firm sweetness. In terms of fruit, it is not melon or banana, but pineapple. It is still hard just after sealing, so I would like to enjoy the taste change again after tomorrow. By the way, tonight's snack is fried tofu topped with sakekasu and baked in the oven with soy sauce. I think it goes well with sake, so give it a try!

The label is a gorgeous cherry blossom-colored, spring-like label. This 300 ml small bottle is not a orikarami sake like the 720 ml "Harushibori Junmai". I am not a big fan of junmai sake, as many of them have a cloying or flat taste, but this junmai sake is delicious, with a refreshing rice flavor and fullness of flavor. I would like to try the orikarami nama-shu in a four-pack bottle.

Recently, drinking sake with sakekasu as a snack has become my boom. Tonight, I had some Junmai Daiginjo sake lees from Hakkaisan, so I paired it with the same Junmai Daiginjo sake. Until about 30 years ago, when "Jyushidai" first appeared on the market, there was a boom in the popularity of neat and dry local sake in Niigata, and Hakkaisan, along with "Echino Kanbai," "Jigarizuru," and "Yukinakabai," was a very difficult brand to obtain. Nowadays, Hachikaiyama can be purchased in supermarkets and has become a familiar sake, but when I tried it again, I found that it is still very easy to drink with a clean, dry taste.

Expensive Junmai Daiginjo in a wooden box. The alcohol level is 15 degrees C. The aroma is modest, but in the mouth, the flavor is robust. It has a subtle sweetness and spiciness typical of Hakurakusei and a sense of transparency. Since I first encountered Hakurakusei at an izakaya in Sendai, I personally drink Junmai-Ginjo class at home or at local izakayas as a brand that goes well with seafood (especially dried sea bream), but this expensive Junmai Daiginjo, which I drank for the first time, is in a way beautiful in another dimension. Therefore, tonight, I paired it with a refreshing bigeye tuna sashimi instead of dried sea bream.

It has a mellow flavor with a crisp, clean finish. The alcohol content is 16.5 degrees, but my tongue felt it to be around 15 degrees. It is best served with Japanese food as a mid-meal drink.
