The aroma is mellow and mature.
The taste has a calm and refreshing acidity and umami (a little sweetness), and the bitterness tightens it up at the end.
As a side note, when I tried this saké, I found that it tends to taste sweeter when drunk sitting down, and spicier when drunk standing up.
I had wondered about this when I bought the same sake and drank it at home (sitting down) and found that it tasted so different that I could not believe it was the same sake.
The other day, the Ig nobel prize also said that if you stimulate the tableware with electricity, you can easily perceive the salty taste.
It may be related to the fact that standing rather than sitting increases the heart rate and the sympathetic nervous system is more dominant than the parasympathetic nervous system.
