It has been a long time since I drank "Chochin" sake.
I remember that it was my favorite brand from long ago. I remember that the sake with a sense of maturity, such as fire-aged special junmai, was a full-bodied sake with a somewhat habitual and powerful flavor that went well with Nagoya's local cuisine (especially dishes using red miso such as "miso katsu" (pork cutlet) and "miso nikomi udon" (noodles stewed in miso)).
However, the light nigori sake I drank for the first time this time was surprisingly refreshing and easy to drink despite its 18% alcohol content.
The freshness of the sake has been reduced after a year of aging, but the taste is more subdued and enjoyable.
