Somehow, I feel like my fridge is the most crowded from February to March every year, and yet the sake I want is released every weekend, and I can't stand the patience anymore! So I was in the mood for beer today, but we are having shabu-shabu for dinner, and Yoshidagurau is perfect! The aroma is slightly citrusy. Aroma is slightly citrusy, with a firm aroma of rice after a while. The gasiness is a bit gaseous. Sweetness and acidity are both refreshing. I expected the sourness to be followed by a twang, but it quickly turns into umami. The umami flavor continues in the latter half of the bottle. This is the best food sake. Although it has only just been opened, it is richer than the usual Yoshida Kurau, which is a new discovery for me. It's evolving so much. I will have to follow it in the future.

I'm feeling better and resuming normal drinking. Because the fridge is full... I buy Red Diamond every year. How about this year? The aroma is more pineapple than usual. Very floral and refreshing. The gasiness is so-so. The impression of the chrysanthemum is sweet, but the sourness is more impressive this time. So, I really like the taste. Especially, the timing of opening the mouth was the best of the season. The aftertaste is sweet and sour, with a strong fruity feeling, like a pineapple juice. Amazing. It's been a while since I've had such a fruity, delicious drink, and I'm so happy. It gets a little dry after a few days, so it's best to drink it as soon as possible.

先週末から持病の腸炎になってしまい、今週は絶食しての回復期間。重湯からお粥と続き、昨日から普通の食事が摂れるようになったので、お酒の試運転開始! 香りは、穏やかめだけど、柔らかなマスカット香。ガス感はしっかり。 初日はアルコール感のアタックが強かったけど、3日経つと柔らかくなって、キュートな甘味が前に出て、酸味は穏やかに変化。 酸味が薄く続いて、最後はほんの少しの苦味でフィニッシュ。 先日、とある酒屋さんでネクスト新政って言われてるんですよー、という会話を小耳に挟んだけど、ちゃんとオリジナリティあって、かつこのまとまりの良さ、いつか新政を超えるってことですね!

Yesterday, I was told at the hospital that I should cut back on alcohol because of various elevated values. Hmmm... I guess that's a pending issue for the future... Well, today we have Noto cheering sake, Yoshida Kurau's Kijoshu. The aroma is a very nice banana🍌. I haven't had such a nice aroma for a long time. There is a slight gaseousness, which is good. I have always been put off by the sweetness of kijoshu, but this sake is totally drinkable! Not too sweet, but sweet enough to pair with a meal. The acidity is also nice. The second half of the bottle retains a little bit of sweetness, but it is not clingy and finishes pleasantly. I tend to avoid kijo-zake, but this kind of kijo-zake is totally acceptable! I must open the bottle of Yonotori lying in the fridge soon...

It has been a long time since I have had Genshu Mai. It's been a long time since I got this very fantastic sake. It is a ginjo without junmai (pure rice), which I rarely buy. Moreover, it is a raw sake. I wonder what it tastes like. The aroma is quite mild. There is a faint capsule aroma. No gassiness. Very gentle sweetness. A shocking marriage with Kaga's specialty, kabura-zushi, which I happened to be eating. The second half is really beautiful, with no unpleasant alcohol taste and a smooth, gentle finish. This is the best food wine of the season. It made the meal very flavorful. I recommend the combination of kaburazushi and sake!

I found myself finishing a bottle. I want to remember what it was like! The aroma is of course pineapple, but thanks to the sparkling, it has a refreshing aroma. Of course it's fizzy, but it doesn't have that carbonated infusion feeling. The sweetness is predominant, but it's quite refreshing, and it was perfectly fine during the meal. It was perfect with today's hand-rolled sushi. I don't remember much about the second half of the bottle, but I'm sure I finished it off with a crisp finish! I had the impression that Cel-24 was a little too sweet, but this sparkling wine is very easy to drink!

I haven't recovered from a cold yet, but I accidentally opened it... A sparkling wine from Tedorigawa, the male of Hokuriku. The aroma is fresh banana. And it's a blue banana. The gasiness is of course strong. The sweetness is moderate and the acidity is a bit strong. Dry! After the acidity disappears, a gentle umami flavor lingers in the aftertaste. A pleasant finish. Both Tedorigawa and Yoshida Kurau are my favorite sake here. I can only drink good sake with low alcohol content...

Noto Earthquake Charity Sake One after another. As a Hokuriku person, I really can't let this earthquake be someone else's problem. Let's actively participate in charity activities. I drank Hope! once before, but it was not a good image because it was too thin or crisp, but this Hope! The aroma is the usual muscat with a bit of cemedine, which I like. No gassy feeling. The sweet and sour comes on, and then the acidity quickly gets stronger. The acidity quickly fades away, leaving a clean, crisp finish. A stable Sentori. No disappointment. The Hokuriku Shinkansen will soon open to Tsuruga! Please come to Hokuriku! (There are a lot of delicious sake!)

Due to the snowfall, I finished work early. Thanks to the snowfall, I can drink sake at leisure. I finally bought a bottle of Higashitsuru, which I had been curious about for a long time. It's low in alcohol and gentle, which is somewhat to my liking. The aroma is quite strong, with hints of peach, lactic acid, and a little bit of cemedine. The gassiness is weak. The sweetness is clean and the acidity is clear. There is a lactic acid nuance, which is nice. The acidity continues gently and finishes without bitterness. The first impression was favorable. It is a brand I would like to follow in the future.

Since grapes are the main ingredient, it's no longer something I should post here, but I thought I'd briefly introduce this interesting sake from a craft saké brewery. This is a strange grape wine that is a bit different from wine. It smells slightly like white wine. That's right. It is quite dry. But you don't feel much acidity, so it goes down quickly. The lingering sensation is tannin? I don't know much about wine (sweat), but it was delicious. My wife was also satisfied.

This year, Akabu's Snow is again excellent. The aroma is quite mild, but has a nice citrusy aroma. The gassiness is so-so. Gentle sweetness with a sharp acidity. My favorite type. The acidity continues to the end, and you finish enjoying the bliss. The sake I chose was a great choice. I think I can forget all about it!

Came down with a cold and stopped drinking for a few days. I still have a headache, but yeah, let's drink. I got a bottle of Cel-24 nigori (nigori is a type of sake made from a fermented rice wine) without incident this year. This sake has a strong image of being a rambunctious drinker, but it was safely opened in a few minutes. The aroma is, of course, pineapple🍍. It is already a winner of the Pineapple of the Year award. The gasiness is quite strong. It is sweet, sour, and completely pineapple soda. It's hard to drink this as a drink. It's like a juice, but it's very nice and pleasant to drink all the way through. There is no bitterness, and the aftertaste is beautiful. Well, this is delicious. I think this sake will expand the range of sake! I think it is a really great sake!

I drank up all of it before I knew it, this Daimine. I bought it at the end of the year. The aroma is a pineapple of the capsule type. Gorgeous. The gasiness was a little bit at first.... Sweetness is impressive. Not much acidity, so the sweetness is quite predominant, but strangely easy to drink. The sweetness is quickly quenched, and the bitterness is a bit strong at the end. It was so easy to drink that it went down quickly, even though it was expensive.... It is sweet, but it is perfectly OK even during a meal. I just don't think it's that cosy.

We opened a bottle of Shinshu Kamerei, which we have not had for a very long time. It has been about once a year.... As expected, it has a nice aroma. I imagined it to be apple-like, but it gives the impression of grapes. The gasiness is strong. The sweetness comes first, but it is not at all dry, not harsh, and beautiful. The acidity comes right after the sweetness, so maybe it's the perfect balance. The acidity continues and finishes pleasantly, without any unpleasant bitterness. Wow, it is superbly delicious. The reason I haven't had it for a while is not only because of its popularity, but also because I haven't had the guts to go out and buy it. I think I'm going to turn up the heat a bit again.

Purchased at the year-end point reduction festival. Actually, the brewer of Seito Sake Brewery is a former colleague of mine at work. Seito is doing a great job making such a wonderful sake. The aroma is extremely mild, with just a hint of floral notes after swallowing. There is no sense of gas. There is not much sweetness, but you can taste a crisp acidity. It is not a modern sake, nor is it a showy sake, but it is a very versatile food sake that goes well with meals. Our family's dinner today was curry.... I want to drink it with the best tempura and sushi. I wish I could drink it again!

Every year, when I see these cool jackets, I can't resist buying them. And it's delicious, too. I buy them even when the fridge is full. This year, the aroma is good. It smells like fresh apples. The jacket gives the impression of green apples. It also has a strong gasiness. After the aroma of rice, there is a crisp sweetness and a refreshing acidity. Perfect for drinking at lunchtime. In the latter half, umami and bitterness come in a strong way, but the end is strangely beautiful. This year's nigori sake season is in its final stages. Miyazumi nigori is my personal top choice.

It's been a while since I've been to Tsuchida. Lately, I feel my taste is getting closer to Tsuchida, and I am looking forward to it. The aroma is lactic acidic and a bit aged. No harshness at all. No gassy feeling. Sweetness is refreshing. The acidity is strong. The acidity is short-lived and finishes with umami. Tsuchida is delicious! I really need to buy more of it. I would be happy if they release another nigori, which was the best last year.

Another bottle was opened today. Kawanakajima, which I have not had for quite some time since the sake corner at Ikebukuro Seibu was renovated. I have been seeing it at Isego a lot lately, so I bought a bottle of my favorite Huarin. The gas pressure was so strong that I thought the name of this sake should be "Schwalin. It took 20 minutes to open the bottle.... Gentle and sweet rice aroma. This is it, this is it. The gentle sweetness precedes and is super pleasant. A refreshing acidity follows. The sweetness and acidity continue in a fluffy way, and then quickly disappear. I haven't had it in about two years, but I am happy to say that it is as good as ever. I would like to drink Genmai again, but I doubt I will be able to....

Opened a bottle of Xmas sake late in the season. The aroma is lactic acidic and choiseme type. The gasiness is quite weak this year. Both sweet and sour are strong, but the sourness is more impressive. It is very tight. The acidity is followed by umami at the end. The lingering aftertaste is full of acidity. Stable Akabu. The taste is as good as expected. If it had been more shwashy, it might have greatly exceeded my expectations. My expectations for Akabu are already inflated.
