First purchase of a collaboration sake between Abe and Tatsumi Seishukudo. The aroma is sweet. Wagashi-ish. Slightly gassy. Both sweetness and sourness are strong, but the sweetness comes out more. A little bit acidic. A bit of astringency from the sweet and acidity is added, and it finishes with a somewhat greeful feeling. It was a bit sweet and candy-like (too much for my vocabulary) right after opening, but the second day, the acidity started to come through, and it changed to be somewhat nice. But now it's empty...

UA version of Sakura, an ironclad brand with no hassles every year. Open the bottle with peace of mind. A sparkling nigori from an up-and-coming brewery in my hometown, Fukui. It looked like it was about to blow up, so I turned the screw with trepidation, but the bottle opened quickly. Oh, no. The aroma is of gentle rice. A very natural aroma. The gasiness is not a bit gassy, but it is strong. It also has a gentle sweetness and a crisp acidity. I wonder if this is what refinement is all about. It finishes gently and smoothly, while retaining a refreshing acidity. I have not had many Fukui sake because I have a strong image of classical sake, but Tsuneyama is modern and transcends the concept of dry sake. It is modern and goes beyond the concept of dry sake. I will continue to follow it!

The annual twilight orange. It is like a notice that summer has arrived. The aroma is mild. Slightly lactic and a bit citrusy. Slightly gassy. Crisp sweetness and a little strong acidity. Fukuda, which had been on my mind for a while, has been renewed and changed to Fukkai. This one! I thought, and purchased it with my intention. When I smelled the aroma from the mouth of the bottle, it was a capsule type aroma. I assumed it would be the usual apple/pineapple, but was surprised to find that it was not such a common aroma. Complex flavors spread out. A little gassy. Sweetness comes first. But there is no unpleasantness. When the temperature rises, acidity prevails. The acidity quickly disappears, but the mysterious flavor at the end is particularly impressive. It is neither bitter nor harsh, but bitter and spicy. This sake is new territory for me, and I'm glad I bought it on a whim. I'll be checking out more Fukkai in the future.

Maybe it's because I saw the new policy visit episode on the Sakelabo channel, but I just had to open my inventory.... The aroma is quite subdued, but with a hint of cedar. Lovely. The gasiness is also very strong. The sweetness is quite moderate. The acidity is still strong! This is it! Too much acidity can leave a bad taste at the end, but as expected from Shinsei, it is exquisitely sharp and finishes pleasantly. I finally opened a bottle of Yonotori that had been sitting in the back of the fridge. By the way, when I got Colors at a certain liquor store the other day, I was told not to post it on SNS. I was told not to post information about the store or anything like that on social media. The aroma is intense citrus and muscat aroma. As expected of a directly pumped wine, there was still a strong sense of gas, even though I bought it a year ago. The sweetness is strong, but the acidity is even stronger. If the acidity is strong, it can be served with rice. The acidity lasts until the end, with a lingering sweetness. I used to see Yonotori frequently at liquor stores when I was a Corona disaster, but I almost always passed it up, and I want to say "Baka Yaro" to myself back then! It's so delicious!

It's been a while since I've had a Sairai. I gave it to my colleague M-kun and he was quite pleased, so I bought one myself! As I thought, this brand has a great aroma. It smells like yogurt the moment you taste it. The gasiness is slight. It is sweet, but this is how this sake should be! The sweetness is combined with the aroma and acidity, making this a lactic acid type sake. The sweetness and acidity continues and finishes with a touch of alcohol. Sairai is delicious! It is rare to find such a lactic-acid type sake. If possible, I wish they would serve it with lower alcohol content.

Abe Pink raw. Not many places in Tokyo sell it, so I went to Ginza to buy it. The aroma is lactic acidic. I like it! The gasiness is strong. Gentle sweetness and a refreshing acidity that is not too strong. This sense of balance is exquisite. The acidity is short-lived and finishes with a pleasant umami bitterness. Many lactic-acidic sake tend to have a strong acidity, but this sake is very well balanced and very easy to drink. It ranks high on my list for this season!

Our hometown, Fukui's Tsuneyama. It is our first time to meet you. The aroma is a modest pineapple. A little gassy. Not much sweetness, but a crisp acidity. As rumored, it is sharp and dry, but the acidity is nice. After the acidity, the bitterness comes through with a sharp finish. It has a short aftertaste. I don't usually drink dry sake, so it was quite refreshing. It's delicious and easy to drink, so you'll be drinking it with gusto...

The last time we had the shockingly delicious Yoshida Kurau's Kijoshu series, this time it was orange. I wrote that it was slightly effervescent, but it was so good that it blew up like an idiot. I just barely managed to close the lid and escaped.... The aroma is melon, banana, and a refreshing citrus flavor. The gasiness is a bit gaseous. The sweetness is just right, so much so that one forgets it is a kijoshu. There is no nastiness. The acidity is also nice. The acidity is crisp and refreshing at the end. This is a new experience for me with this super light kijoshu. As with the last time, we hope it will become regular! Next time: pink!

The acidity is especially impressive. Lactic acidity. The acidity continues, and there is a bit of a bitter taste at the end, but it is not a bad end. I was really into Kouei Kiku when it first came out, but recently I've had an unstable impression of it, so I've been keeping my distance from it for a while. But this one is very tasty. I can't help but buy it when I see a new bottle of Sentori! But I wonder if there will be any more of last year's blue label nigori... The first sip of the bottle has a nice melon-like aroma that makes you groan. The aroma is so intense even though it is so cloudy, it is wonderful. The gasiness is also strong. The sweetness is moderate and the acidity is strong, a taste that is right on target for me. After the acidity, the nigori umami comes in thickly, and it is a happy finish. This is the best one I've had recently! This would be a good substitute for the blue label. But I wonder if they will ever come out with a blue one...

Last year, I consciously stayed away from the heatedly popular Shinshu Kamerei, but the last time I drank Hitogokochi, I enjoyed it so much that I decided to buy it when I saw it! I'm glad I did! The aroma is a bit milder than usual, but it has a fresh apple aroma. A little gassy. Gentle sweetness and very refreshing acidity. The acidity is followed by a slight bitterness. I've been trying not to be aware of it as much as possible because it's so popular that I have to sacrifice my work and private life to buy it, but it's still delicious, so I have to buy it....

We got it safely again this year. I wonder how many bottles I can drink this year. This year's wine is more gorgeous than usual, with a nice grape-like aroma. Slightly gassy on the first day. Sweetness and acidity are clear. The acidity is strong and nice as usual. After the acidity, there was a sharp taste of bitterness. Less bitterness than usual. We enjoyed it again this year. Last year, I drank the normal lot with my neighbors and they raved about it, so I'll definitely be getting some this year.
