I was curious to purchase this because it uses natural brewer's yeast.
The upfront aroma is like yogurt with a hint of acidity.
The attack was what I imagined to be the complex and distinctive taste of a nascent yeast-based sake, but it was well-balanced and had a clean aftertaste, with a moderate yogurt acidity and a mellow taste, probably due to the heat treatment.
I felt that it was made to be a more drinkable sake than I had imagined.
At first I drank it chilled in the refrigerator, but as it got closer to room temperature, it became even more mellow and delicious.
