This is a new sake from Hagino Shuzo, famous for its Haginotsuru brand name. I bought it because of its interesting label and because I was told by the owner of the store that it is a blend of sake made from each tank of brewed sake.
Unlike Haginotsuru, which is clear and refreshing, this sake has a dry taste with a little less sweetness and umami from the rice. The moderate acidity and bitterness give it a roughness that is typical of new sake, but in a good way.
