We purchased this sake because it is brewed by Chikara Urasato, the young 29-year-old 6th generation brewer and toji of Urasato Shuzo, who is obsessed with Ogawa yeast. This sake is brewed by a toji of the same name as Chikara Ogawa, who discovered Ogawa yeast, and is trying to make all Ibaraki sake.
It has a sweet aroma like lychee.
It has a soft mouthfeel with a moderate sweetness. As is typical of Ogawa yeast, the acidity is low. The lingering bitterness is rather strong and sharp. Overall, it has a light finish.
